I have been inspired by Nancy...and now I am pooped!!!!! I really have no idea why I started to bake cookies!!! But lo and behold, the baking marathon has begun! So far I have made snow balls, nut cups, potato chip cookies and dough for my sugar cookies! Today I am going to make toffee, double chocolate chip and kolachkies. I think that should do it for the cookie menu. The double chocolate will be made with a Main Street Bakery recipe. I will let you know how they turn out. So far, so good! Now all I need is a good frosting recipe for those sugar cookies......can anybody help me with that?
Welcome home, Elaine, Karen, Dave and RoseMary! Sounds like lots of fun was had by all and bali was not needed! Of course there still are a few YaYa's out on the loose! Maybe I better wait till it is all done and over before I speak.
Nancy, so glad you enjoyed the Lion King! Wasn't it fabulous? I is coming back to CHicago again, and I am going to try ot talk Greg into seeing it again. It was not one of his favorites......go figure!! But I loved it!!

Speaking of hiding......where is Pam at these days!! All teh YaYa's head home and magically, Pam disappears but yet again!! Now I know it is busy roadkill season and all....but isn't that Alan's job to collect and process it all? Or is she busy making gookies?
Boo, hiya!! I have a very easy and yummy recipe for you!!! My snowball cookies could not be easier.......and are always very well received........
1/2 c. confectioners sugar
1/4 t. salt
1 c. butter (softend to room temperature)
1 t. vanilla
2 1/4 c. flour
1/2 c. chopped pecans
Cream butter and sugar together. Add vanilla, salt and pecans. Slowly add flour. Mix well. SHape dough into little balls, about the size of an acorn and place on cookie sheet. You can put these close together as they hold their shape and really don't spread. Bake in a 400 oven for 10-12 minutes. When they start to turn slightly brown, they are done. While warm, place cookies in confactioners sugar until coated. Place on wire racks to cool.
How easy is that? Oh, and some people call these MexicanWedding Cookies too!! I usually have to make a few batches. Of cours eif it were Nancy's recipe, there wold be a bottle of vodka somewhere in there.....so I think vodka optional......Bailey's even better yet!!!!
Well, I am sure I have not caught upwith evrybody, but if I don't get my butt in gear, there are not going ot be any cookies made. Have to tun out and get some more stuff......can't imagine why I ran out of butter, sugar and flour here.....so off to get some more ingreadiants, cookie trays and whatever else catches my eye!!
Oh, one last thing...talked to Bethie!! She is ready to come home!! She is a pooped puppy!! But sounds like she has had a wonderful time!!! I think she is headed to go eat one last piece of chocolate cake, and head for home....Mears will be getting her shortly after noon!!
