I went to a funeral last night; husband of a fellow teacher I work with. They were returning from a weekend at AC, driving on the turnpike (I-95), when he started to feel really sick. Traffic slowed, and all of a sudden, he had a massive heart attack, and HE WAS DRIVING!! They were in the center lane, and she tried to put her foot on the brake so as not to get in an accident, but the nasty other drivers all around her were honking and giving her the finger, and stuff!

Kim's 3-Cheese Chicken Wraps

boneless skinless chicken breasts, pounded to thin cutlets
1 8-oz can Philadelphia Chive & Onion cream cheese
1 8-oz pkg shredded mozzarella cheese
1-2oz grated parmesan cheese
1 lb bacon

Preheat oven to 350. Place one chicken breast on a plate or cutting board. Sprinkle both sides LIGHTLY with garlic salt. Place a heaping tsp. cream cheese incenter of breast. Place 2 tsp. mozzarella cheese on top of cream cheese. Sprinkle on 1 tsp parm. cheese on chicken. Wrap and secure with one slice of uncooked bacon. Continue with all pieces of chicken. Place rolls in Pyrex lasagna dish. Add 2 oz warm water and several pats of butter. Bake in oven for about 50 minutes, until brown and bubbly. Serve with yellow rice.
