I have dinner ressies, for 2 people @ 5:45 pm early October, what do you think my chances are of walking up with 3 of us (instead of 2) and getting a table?

When i tried to change the res, they offered me dinning for 1 at 5:40 then keep the 5:45 res for the other 2.

but then we are not eating together and I did not see the point. so right now I have a res for 2, but need an extra chair bassicaly what woudl you do?

I need to keep right round that time, due to another event we are doing that night

The problem is that you are going from a two seat table to a four seat table. If they have all the four seat tables booked for your time period, then they would have to put the third guest at another two seat table (hence the separate reservation). I would keep trying to get a reservation for 3, because there is so much going on in that restaurant, they may be unable to put an extra chair at a two seater (especially if it blocks the aisle).
