Wanna help me figure out which park on which day?

We have an upcoming trip to WDW the first week of January. This time around we will only be doing 3 park days.

The 3 parks we're planning to do are MK, AK, and HS.
The days we plan to reserve are Sunday, January 3, Tuesday, January 5, and Thursday, January 7.

In the past, we've been EMH people and park hoppers but obviously none of that will be in play. So I'm a little lost on what factors or patterns could play in on deciding which park on which day.

If you were us, which park would you schedule on which day and why? Or does it really not matter these days? Sunday is the day I'm wondering about in particular.

I would do AK on Sunday and save MK and HS for the weekdays. Most AP will do Epcot, MK, or HS on a weekend, so you should have lower crowds at AK on Sunday. As AP's that are two hours away when we go for a weekend we usually do Epcot on Friday and then a combination of MK and HS on Saturday and Sunday.

Agree with @fordpony92 animal kingdom is the least busy of all the parks on weekends. While a lot may change between now and January, all else being equal and hypothetically speaking if there aren’t any changes, I’d do the same and I’d do DHS on Tuesday and MK on Thursday.
 

Or you could go either way and hypothesize that Tuesday would be a busier day than Thursday since families would be on extending a New Year break so maybe Tuesday will be busier. But if we’re looking at the AP crowds, I’d suspect Thursday for a long weekend could be busier than the Tuesday. It’s really anyone’s guess.
 
The other way of thinking is to schedule AK on a weekday because it's much less busy than weekends. On the other hand, HS is just about as crowded on the weekend as it is a weekday. In other words: by putting AK on a weekday, you're giving yourself at least one non-crowded day. For my upcoming trip: Saturday at Epcot, Sunday at HS, Monday at AK, Tuesday at MK (we like to finish at MK).
 
I would use the weekend day on HS. It’s at capacity almost everyday, so there’s no real advantage to visiting it on a weekday.
