My daughter and I will be arriving into MCO very late. Our flight arrives at 12:20 am, and we are not renting a vehicle. I need to get to a hotel very close to a Disney (only staying for a few hours) as we are checking into the Polynesian that next day. Since it’s just the 2 of us, would the quickest way to get to the hotel be a taxi? I’m afraid at that time of night, waiting for a Lyft might be 20-30 minutes, and I’d rather pay $15-20 more just to hop in a cab after we pick up our luggage. Any advise on this option or any other option?

There will still be a lot of lyft and Uber on the road at that time. When you look up the ride it will tell you how long the trip is estimated to take before you confirm so might as well try that first if it’s cheaper.

The very quickest way would be via a black car service where the driver meets you at baggage claim and escorts you right out to the car.
Otherwise, there will be taxis standing by, as well as Uber and Lyft drivers (there is a holding lot on the airport that has a virtual queue for Uber and Lyft that dispatches jobs to drivers as they come in; they can get to the terminals in 5-6 minutes).

There will be taxi's waiting outside for sure. If you feel that will be quicker than a Lift or Uber make sure you take a Mears taxi.
Do you know if they are marked? I know there will be several companies there, so if I choose to take a taxi I want to make sure

I had not realized there was a holding area for Uber and Lyft. I guess I just assumed since it was so late, it would be a longer wait. My experience is with Sanford, and that was a nightmare waiting for Lyft. Thanks for the info.

Yes, Mears taxis are very clearly marked and will be yellow or white and yellow. That said, your fare might end up being similar to if you booked a black car through Mears (or any other reputable company), and then you wouldn't have to worry about whether or not a taxi would be available.
Sanford has a holding lot, too, but there are so few flights in and out of that airport (some days only 4 flights in, for example), so there are never that many drivers standing by there. They do watch the schedule and know when flights are coming in, though. Uber is more popular at that airport than Lyft, but many drivers do both.

Why not stay at the Hyatt at the airport? Then get up early and get transport to Poly from there? We are having Tiffany Towncar pick us up at the Hyatt. We don't get in as late as you but didn't want transport to a non-Disney hotel and then get another transport to Disney hotel the following day.

I just did that. It was so restful.*

Even better, I transferred chase card “ultimate rewards” points to my hyatt frequent stayer account to pay for the night.

*once I got my checked bag. My bag was nearly as far away as you can get from the elevators/escalators to the area with the Hyatt, and it was exhausting (and hot since I dressed in freezing Seattle weather and didn’t change to Florida clothing before getting my bag).
