Haven't done it, but check out the Manatee Observation and Education Center that is nearby the resort.

We tried to do it in February but they needed 6 people to cover the gas cost and it was just the 2 of us. We went on the "Jungle River Cruise" later that day through the same company. If I remember, it was 3 hours and it was fabulous. We saw crocs, turtles, manatees and a LOT of dolphins. They swam along with our boat. The guys who drove the boat knew the waters very well and what animals hung out where. I definitely recommend them!

We also drove down to the manatee center. It was interesting, but the manatees did not come to the cove that day so we missed out on that. It wasn't really worth the drive (for us) because we went down there to see them, but maybe if you call before you come down and ask if they're hanging out you'll have better luck than we did.
