We went two Christmas' ago and if we weren't planning on renovating our house, I'd be adding an OKW resale so we can always spend Christmas in Vero on our VB points. The resort is decorated tastefully for the holidays but not quite so overwhelming Christmassie as say Main Street. There were a number of activities going on at the time...most of which we didn't do but my sister, nephew and b-i-l did some of them. We did do the Campfire sing-a-long but didn't stay long as the CM's didn't really know any caroles nor did we know any of the songs they were singing...I guess the songs we grew up with are now politically incorrect.

We tried to do the star watching/gazing, but the weather didn't cooperate.
Weather in VB can be iffy....normally the weather at that time of year is warm by Yankee standards, but it can be freezing or a nice balmy temperature. We had nice warm weather meaning we were swimming in the heated pool while the locals were wearing light jackets.
Unlike WDW, VB has a list of local restaurants and activities you may opt to explore. Its all kept in a book in the lobby.
As far as the resort restaurants, we were extremely disappointed with Sonya's. Well, we were set-up to be so...when we made PS's for christmas day, it was for a 'holiday' buffet...the buffet was normally scheduled for that night. When we arrived we learned they had cancelled the buffet and were going with the standard menu...which is _not_ Christmas dinner.

My sister's family enjoyed their meal but wifeypoo's was overcooked and whatever I had (I think it was steak) was not going to be good because I had my sites set on a holiday meal. We decided at that point any future Christmas day meals in VB would be ordered from Publix and heated in our room. [Yes...for those of you who don't cook on vacation, the kitchen is usually fully functional
