I can agree that the adult vegetarian meals are quite poor. I don't know how adventurous your daughter is but the appetizers/ salads are quite good. It might be a good idea to look at disney cruise blog for menus with her so she had fair expectations. If she finds something she likes as part of the rotational dining menu, she can request it in another restaurant.

Been on many cruises as a vegetarian. Never have any issues finding plenty to eat.

I have not asked in a while, but they do also have an Indian meal in the mdr. Mention it the first night. They brought it out every night.

We also asked for tofu “steaks” and they brought them out.
