I'm a vegetarian, do you think it will be hard for me to find things on the menu to eat?
 
NO! I went to Disney many times not eating red meat, and my trip in March was my first time as a full on veggie. I was nervous too, but I called the restaurants beforehand and they told me there are options and just to let my server know when I get there. Usually there were vegetarian options on the menu, but if there weren't or I wanted something else my servers were AWESOME in talking to the chef and making me a dish that I liked. You will be fine!

Some good veggie places are Coral Reef, Ohana (I know its meat skewers but you can fill up on endless veggies, noodles, and salads as well as bread and dessert), Boma, Jiko, and Chefs de France!
 
You should try the new Wave Resturant. I heard they have things on the menu. My husband likes to eat the veggie way so he's really happy were going there.
 
We eat at Disney weekly, and I've been vegetarian a year now - I never have any trouble. They're extremely accomodating, both at CS and at TS!

If you have any specific concerns, look over the menus and call Disney Dining/the restaurant itself beforehand and speak to a chef.

I would say the ONLY place I ever have trouble is the water parks, but we just bring our lunch or go to DTD anyway.
 

I've been a vegetarian for about 20 years now, and I think you really do need to plan carefully to find things to eat. True, most places have something veggie on the menu, but you could well be stuck with cheese pizza or a side salad if you're not careful.
There ARE lots of veg-friendly WDW restaurants - make your ADR's so you're not stuck. We always love Boma, the Crystal Palace buffet, California Grill (it's not on the menu, but they will make an awesome vegetarian plate), and Tusker House.
Any of the nicer restaurants are going to be accomadating, but it is luck of the draw with the chef - are they creative enough to come up with an interesting off-the-menu veggie dish, or are they just going to grab some pasta and cut up some zucchini and hope you're happy?
One last thought - if you go during F + W festival, I have always found plenty of veggie stuff from the carts.
 
Almost all table service restaurants have a vegetarian dish on the menu, although alot are pasta based. I looked at the menus beforehand, to ensure every restaurant I picked had a veggie dish my DH would enjoy, and he wouldn't be eating the same type of pasta dish every night.

Overall he really enjoyed the veggie options, and where there wasn't anything on the menu, the chef was very accomadating and happily made him a special dish.

CS choices were more limited though and he ended up eating a lot of pizza.
