vegetarian at CRT (dinner)

My sister is visiting next week. She has been to DL several times -- never WDW.
We really only have next weekend to spend in the parks. She is leaving the decisions up to me.
For Sunday dinner I made PS at CRT.
My sister is a vegetarian. Their menu does not seem vegtearian friendly.
I am not too worried because I know how good Disney chefs are at accomodating dietary needs and lifestyles. I noted on our PS that one of us was a vegetarian.
And my sister said not to worry. She never has trouble finding something she likes and will eat.

Can any vegetarians build my confidence that CRT will be a good eating place for a MK first timer?
I just thought the castle -- what better special place can there be to eat at MK?

I noticed on AEN that there are only two appetizers and one entree at CRT Dinner that do not have meat or seafood. Admittedly eating in the castle cannot be done at DL, but a side trip to Boma is almost a vegetarian's paradise.

I know they have a vegetarian entree at lunch-grilled portabello mushrooms and asparagus. I'll bet the chef would be willing to make it for dinner if you asked. When we were there, I noticed a chef come to the table behind us, since they were dealing with several food allergies, to discuss the choices. Although Mom and I shared it, it was really her choice of entree, not mine, so I can't say how it was. However, she seemed to really like it.

We only have two days in the parks. So I hate to use time running to Boma's and back.
HOWEVER -- I did make a PS for Monday evening at dinner at Boma's. That was a good suggestion.
Tuesday is my sister's birthday --- and a biggie.
This weekend will be the celebration. I wanted a Boma PS on her b-day, but only early and late were available. So I "have" to "suffer" with Monday evening.
But I think I will take her into the Adventurer's Club Tuesday evening.

I am sure the CRT chefs can accomodate her if for some reason she doesn't want their one choice. I am surprised there is only one meatless choice.
I often order vegetarian dishes, and I am not a vegetarian.
