Vegan mom takes on Disney..... Dec, 2011 PTR

We will keep you in our prayers as well! I have never had to deal with any floods or anything so I am lucky, but DH says that in Burma they had them often as well! So we will keep everyone in danger in our thoughts and prayers!

Sorry about not being able to book last week....:sad2: But what you were doing was so much more important...chipping in as part of a community to help others...prayers for all your neighbors!

I know this will sound really strange for Oklahoma but my area floods like this on occasion. Usually happens about once every 5 years. Not likely this year as we are 'under' on our rain accumulation for the season but when we are over, our water authority inevitably has to release water from the dam to avoid levee breaks and our town turns into an island. So while we don't deal with too much sandbagging for the river flow, we do a lot of fast moving of people from homes to try to preserve and protect from flood waters.

Being the good mom that I am :lmao: I decided to make dessert for dinner tonight. Kids have been begging for pumpkin pie. Well, I didn't have time to make the pie but figured that the best part always is the filling, so why not make pumpkin custard instead. :banana: Found the a recipe in one of my favorite cook books.

Off I go, grab all the ingredients, figure out how to make it vegan, oh but wait, I am in the middle of making dinner as well... ok, no problem, grab all ingredients that I will need for the roasted veggies that I can through into the oven at the same time... ok, no problem, I'm a fabulous multi-tasker!! ;)

So I start throwing all the ingredients to make the custard in the bowl. In goes the pumpkin, the soy milk, the spices..... hmmm, one of those spices doesn't quite smell right!!! Ah Crap! :scared1: I just through in GARLIC POWDER!!!! :lmao:

Ok, freak out now!! Thank goodness I was not mixing anything yet. Grabbed a spoon and got as much out as I could.... Throw in the GINGER, which is what was suppose to be in there in the first place, little extra nutmeg and cinnamon.... and voila! No one can tell the difference.... right?!!

Apparently they tasted just fine, no one complained and in fact the kids asked for me to make this EVERY night! Guess the garlic helped :rotfl::rotfl:

Laura, you all will be in my prayers... flooding is awful.

The pumpkin custard looks awesome. :rotfl: The addition of garlic is totally something I would have done!

Now I just need to book flights :goodvibes Though it probably won't be until the end of summer when I do that. I think the cost of flights will be too high for a while.

Now I think I start doing some SERIOUS planning. :rotfl:

Things are still getting worse right now. I was out sand bagging this afternoon and flew home to teach for the evening. Crest of the river won't be until the beginning of May so we have a long way to go yet.

Just found out on the very sad side of things that a resident of my town drowned in the flood on Sat. I don't know all the details but from what I understand he drove off the highway area into a flood zone and his vehicle got stuck. As he tried to make his way back to the highway he fell (?) or something (not really sure yet) and drowned. This is a friends father. Funeral is later this week.

I am really sorry to hear about the gentleman passing away! It just shocks me how fast things happen for better or for worse!

Thanks, the family is taking it pretty hard, no surprise there.Flooding is just one of those things, especially around here these days. most of the time we stay safe but sometimes someone makes a bad decision. But honestly those bad decision can happen anytime, not just during a flood. I think it just seems worse when we tag 'because of the flood' onto it.

on no - that is awful :( I pray things hurry up and get better and your friend and her family are in my prayers.
 
Hi everyone! well, it has been a few days since i have been on the boards.... my goodness I have a lot of reading to do! :rotfl2:

I have been bogged down in the business of life and have not had a chance to get on the boards, much less post anything!

Thank you for your good thoughts and prayers. :goodvibes The funeral was yesterday afternoon. Like all funerals it is a tough time but it was good to be able to support the family during this time.

As for flooding... So far everything is holding steady. I tried to take some pictures this week on my phone but they did not turn out. They have closed the dike to one town so far but the river has not crested yet. we are done sand bagging for the moment and our friends who are in the flood zone have their pumps and generators ready to go.

We have an extra 5 kids living with us right now!! :laughing: I have taken in the children of two families because getting to school from there houses is almost impossible now. This way they can walk to school and the parents don't have to worry about evacuating in the middle of the night with them. It keeps us pretty busy right now but they are good kids. parents are still at the homes to watch the dikes and operate the pumps. I see both families every day and we try to all have dinner together. It means making dinner for 13 people every night! I have NO idea how large families do this every day! we have been doing take out on the days when my teaching schedule does not allow a lot of time to cook.

I'm a little stressed trying to keep it all together right now. My exam is coming up fast and I need about 15 hours a week to study for it. It's really hard to find the time with every thing else that is going on.

no time to think or plan WDW. I miss delving into the boards and books and dreaming of things to come. I won't be around much in the next little while but I will try to keep up dating every few days.

What an awesome neighbor you are!!! Hang in there...sure it is crazy but I know what you are doing is appreciated and a real help to the families!
 
We will keep praying! I am so happy that there are people like you up there that are so willing to help neighbors with whatever you can! Someone will smile down on the situation and help because good things do happen to good people!

On another note everyone understands that you have a lot going on and are doing a lot so take your time to catch up- I mean we all have until december anyway =)! I hope that everything is getting better there, have a great day!

I am really sorry to hear about your friends father, how awful. I pray there are no more accidents like that.

So the trip is booked?!:banana: You will be checking in the day I am checking out, depending on the times maybe we will bump into eachother.

The time is going by so slow right now, but once October rolls around you will be wishing you had more time to get things done, to me it seems like time flys from then until departure day. But anyway during the slow times we have the disboards right?
