We are driving down and in the area July 3rd and leaving the 10th. Here our itinerary as it stand currently.

We won a condo at a charity auction and in hindsight regret it as it made more send to move around to avoid traffic etc. We still are not out a ton.

We purchased the Tampa Citypass, which was a steal for what we got. All Tampa Clearwater things are covered. We are not doing the Big 3 this trip as we've done that the past several years, so mixing it up.

7/3: Arrive at Condo in Winter Garden. Plan to get settled and go walk around Disney Springs.
7/4: We are looking for suggestions here. Only thing planned is Chocolate Kingdom tour. We'll be in Orlando area.

7/5: Leave around 10am and head to Clearwater area. Spend afternoon at Aquarium and check-in at Hilton on the beach.

7/6: Head to Tampa. Visit Museum of Science and check-in at Hotel by Busch Gardens.

7/7: Spend day at Busch Gardens

7/8: Checkout of hotel and spend morning at Tampa Zoo. After lunch spend time at Florida Aquarium. Depending on times may need to mess around until after rush hour then head back to Orlando.

7/9: Need to find more things to do in Orlando. Will spend time at Disney Springs. We have Cirque tickets that night.

7/10: Head home
 
Showcase of Citrus has a really cool monster truck bus ride that my boys and husband LOVED! Gatorland is a fun low key place to visit. My boys beg to visit there every single time we go anywhere near Orlando. Gatorland also has an awesome zipline that we loved. It is called the Screamin' Gator Zip Line. Definitely a cool experience.
 

Since you're seeing a lot of animals other places, I'll skip those kind of attractions and mention some which might be fun (depending what you like)...

Wonderworks (and the Outta Control Comedy Dinner Show)
The Titanic Exhibit (and the Gala Dinner)
The Merlin 3 pack - Orlando Eye (Groupon available for this), Sealife (yes, animals, but it is brand new:), Madame Tussaud's
Skeletons (Groupon available)
Ripley's (good if you get a good discount - not worth full price)
Any of the escape rooms (Groupons galore) or Private Mini Golf places (Groupons galore)

A day a water park would be fun. Aquatica is a good choice.
