Uses for leftover rotisserie chicken?

I'm sitting here doing my grocery list and I have a whole rotisserie chicken, deboned and frozen in the freezer. I'd like to use it this week for dinner. I'm open to anything! The only thing I could think of is nachos or chicken salad and none of which sound all that appealing.

Yes, we could always do that!:rotfl: However, DH gets tired of just roasted chicken so I was hoping if someone knew of something good I could make. Grocery day is Tuesday! :thumbsup2
 
Depending home much you need per serving with my family, I would make two dinners from that, we are a family of three.

1st dinner. Pineapple Chicken on rice -- 1 can of pineapple, terriacky (sorry spelling), garlic, 1/2 an white onion, and some green peppers, or what ever veg I had. Cook till peppers and veg are soften and mix in chicken, place on rice and enjoy.


2nd choice for dinner -- BBQ chicken on mashed potatoes, I use Kraft BBQ chicken and rib sauce, but add 1/2 cup salsa, and what ever veg I have presliced and frozen in freezer, this past Monday I had red peppers, and it sounds odd, but if my sauce is to thick I would add some coca cola. Like a splash, and put all ingredients in crock pot, or stove pot, medium with chicken.

We are a 1 income family, and I am the coupon frugal CFO of our family, so I know how to make it stretch and how to make it for a picky child to eat and enjoy too.

The key is to change up the flavoring so you don't feel like it's the same old chicken. :0)

Salad: dice the chicken; add diced celery, red grapes sliced in half, cashews and mix with mayo.

Or you could add green grapes and pineapple chunks. If you're not a fan of cashews, try walnuts or pecans. You could even add diced apples and raisins.
 
Yes! Shred it, warm it and put it on top of salad.

Cheese enchiladas is a great ideat too! Flautas too!

Use the carcass and make a chicken broth with onions and carrots then add the meat and rice for chicken soup.
 
We use it to make veggie burritos. Steamed California blend, rice, chick, and cheese. Put in wrap and put them on a griddle. Delicious!

Where were you 78 carcasses ago!!! I always throw it out. I use chicken broth from the box at least 4 times a week. Can you PM with more specifics? Put it in the crock pot or a pot? I'd just use it as chicken broth. Thank you :thumbsup2
 
I'd shred it, mix it with BBQ sauce and use it to make a flatbread. We use naan bread and then layer the chicken, diced green apple, diced tomato and diced yellow bell pepper. Sprinkle some shredded cheddar over the top and bake it for about 15 minutes on 350.

I bake mine on a pizza stone and the naan gets a little crispy. When I bake it on a cookie sheet, it goes a little soggy but it's still good. :)

Not the op but what I do is put the carcass in a large stock pot. Cover with water all the way. Add in halved onions(skin on) carrots, peppercorns, and an herb bundle of whatever fresh herbs you have ( I usually do some sage, thyme and parsley all tied up and dump that in. Simmer on low for as long as you can. I've let mine go for about 2-3 hours. Strain. Cool. Then store.

The only thing you have to be careful of with the chicken is that it can be very salty, so while I would normally add salt to my stock if using a store cooked chicken I don't. You can always adjust salt later, it's easier to add more vs. Taking it out!
 
Crunchy Biscuit Chicken Casserole

2 (5 oz) cans boned chicken or 2 c cooked, cubed chicken
1 can condensed cream of chicken soup
1 reg can green beans, drained
1 sm jar sliced mushrooms, undrained
1 c (4 oz) shredded cheddar or American cheese
½ c mayonnaise or salad dressing
1 tea lemon juice
1 can (10 ct) refrigerated Pillsbury biscuits
1 to 2 tab margarine or butter, melted
¼ to ½ c crushed cheddar cheese or seasoned croutons or seasoned or unseasoned bread crumbs

Heat oven to 375°
In med saucepan heat ck soup, cheese, mayo, and lemon juice until hot and bubbly
Stir in chicken, mushrooms, and green beans
Pour mixture into ungreased shallow 2 qt casserole, 12x8 in (2 qt) baking dish or 9x13 pan
Separate biscuit dough into 20 biscuits
Arrange biscuits over hot chicken mixture
Drizzle melted margarine(or butter) on biscuits
Sprinkle with crushed croutons (or bread crumbs)
Bake 25 to 30 min or until deep golden brown
Serve immediately

LOL I just put the carcass in a large pot cover with water. I dice up a whole onion, add pepper and 1 tsp salt (you may find that you need to add more, based on your taste) and simmer for about 2-3 hours. During last half hour, I add sliced carrots. I don't strain, not sure if that is a no-no.
 
We like hummus wraps. Flat bread or torillas w/ hummus, chicken, baby spinach or romaine, avacado, cucumber, shredded carrot, shredded cheese.

I make my own broth all the time.

Just like pp have said, put in into the pot, fill with water, add seasoning, boil, I do strain mine, let cool.

I find it's easier for me to pour it into freezer lip-loc gallon size bags, then I lay them flat to freeze.

I also pour an ice cube tray of broth, sometimes I just need 1 or 2 cubes of cooking liquid, more tasteful than water.
