Also, a comment to buy more points than you think you will use initially because nearly everyone does. The price per point buy in cost of a medium sized contract is often significantly lower than smaller sized contracts.

The idea is if you cancel, you would need enough time to rollover points, so, you need 4 months for the rollover and one month to cancel so you would want a date more than 5 months from when you travel, if my math is correct.

My question is this: if we have a March use year, we would need to bank points by 10/31. If we planned a trip in November and canceled in early October (31 days before the trip), we could still have time to bank those points by 10/31. Is my logic right?

That’s correct. But your December trips would be at risk. As above, I’d go for August, September or October in your case. If the December trips you’re trying to book are in early December, I might lean towards the August or September just so you have a little more time to walk the reservation but that’s a very minor consideration.

If there is an answer to the question, which month's are you LEAST likely to travel to WDW, that would also help you pick a possibly even more ideal UY. Ideally, you would want those months to come just before the start of your UY.

Look at the rest of the year too. Not just on your Nov & Dec trips. Look at the point charts. Will you see yourself going in the Spring? May & Sept have good point charts.

We mainly travel to WDW May & Dec. At times, end of April & Sept. Our UY is April. Been great after obtaining our first points in 2020.

To bank points you need cancel at least 31 days out. If you cancel at 30 days or less, points go into holding, and different rules apply including no banking.
