Here are the dates for your trip, and remember if the monorail isn't running when you need it, alternate transportation (Launch boat to MK, and 5min walking path to TTC for Epcot monorail) will be available.

With the resort monorail coming up at 7, it's should start running then.
It's hard to say. They aren't using this time to complete any specific project or repair, but rather to do any maintenance or testing that needs to be preformed. On a normal evening when MK closes at 12, rails run until 1am and they don't actually all get back to shop until around 3am. Then they start coming back out the following day around 5am for the 6:30am resort beam opening. By the early shut downs on Sunday and Monday(with delayed openings the following days) it gives them almost a full 8 hour window to work on the system and trains back in shop. Same with the midday shutdowns, that gap in the afternoon is utilized for whatever needs to be done as well. This can include anything from changing tires, swapping out electrical buss bar, patching the beam, or systems testing.
The times for May haven't posted yet, but no you shouldn't have to much of an issue. To get to MK you'd take the resort rail, if it's not running the resort launch boat will be running. To get to Epcot, your best bet is to walk to the TTC and take the Epcot rail, if it's down an Epcot bus will run from the TTC. And from the poly it self is where you'll catch a DHS, AK, or DS bus.
If nothing appears to be running yet, you can head over to the Bus Info booth. It's at the far right end of TTC; follow signs for buses and taxis. There should be a coordinator in the booth and probably some drivers milling around at that hour, whom you can ask for assistance.We've stayed offsite, and had a 8:15ADR at MK .. we ended up parking at the TTC (got there around 7:15 to make sure we had time to get to MK), and someone saw us walking around, and called a shuttle over to take us over, since the monorail/ferry wasn't running at that time. I would get there earlier, and look for a CM, and explain to them that you have an ADR and need to get to MK. They should be able to help you with no issues.
