We are staying at the Polynesian and have early character breakfasts scheduled at 8:05 Akershus and 8:15 Crystal Palace. What time do the monorails start running from the TTC? Will we be able to use the monorail to make our ADRs on time or should we plan on using the early resort bus?

No, use the character meal bus. Get and early one so you can take some empty park pictures in Epcot. The monorail line won't be open in time to make it.

Don't go tooooo crazy about getting to Epcot early. We got there about 7:30 for an 8:00 adr at Akershus on Memorial day only to discover that there is a gathering place outside the turnstiles for character breakfast and other tour goers where you have to wait until about 7:50 or so...then they let you in when there is just about enough time to walk over to Norway. We did snap a few empty park pics along the way, but it wasn't like we had tons of time inside the park.

There are no buses from the Poly to EPCOT, and there have not been Character meal buses for quite some time.
The buses do run early so that you can get to the parks early for the breakfasts and tours, but the only way to get to EPCOT or MK from the Poly would be the monorail. Or you can take the boat from the Poly to the MK.
The fastest way to get to the MK just take the resort monorail from the Poly over to the MK. To get to Epcot you can just walk over to the TTC and get the monorail over to Epcot. If your longhouse is closer to the Ceremonial House then take the monorail over to the TTC and get the EPCOT monorail.

There aren't any buses from the Polynesian to either the Magic Kingdom or Epcot. The Resorts monorail and the Epcot monorail WILL be operating early enough for the OP to get to her breakfasts.
