Trying to find a Cooking Ingredient...

I hope someone out there may be able to help...

I am trying to put my hands on an ingredient that my mom and grandmothers used in French-Canadian Cooking. I am looking for "brown flour"...not wheat, rye, etc flour, but Brown Flour also know as fleur-grille (pardon my French if I mispelled ;))

I am trying to find a place I can mail order this from since I do not live in Canada and the only place I have heard of recently that you can find it is Mom & Pop type of grocery stores in Canada (maybe even only in the Quebec area...the only place I have found it in recent years). The last time I bought it years ago, it was in a small yellow box.

I googled brown flour, but all the sources for it seem to be in the UK. It seems to be a high protein whole wheat flour. Perhaps you could substitute?

Isn't Fleur Grille essentially "cooked" or "burned" flour?
You could probably make that...?

Brown all-purpose flour into a cast-iron frypan over medium heat, until just golden brown, stirring at all times, as flour easily burns.

Yes I have made it when desperate...but out of the box is sooo much easier :D and the smell of burning flour is kinda yucky ;) but for some reason tastes good when making gravies/sauces...go figure!!

Looks like I'll be grilling some flour this weekend :scratchin

Yellow box, huh? I wonder if it's Robin Hood Flour, or if its a Quebec based product...
 
I just emailed Robin Hood. We'll see what they say.

I have looked for the flour in other areas in Canada and have received many puzzled looks when I ask for it. It must be a local Quebec product. My family is from that area and many generations have used the product, but I'm beginning to wonder if its no longer made, I may just have to do it the old fashioned way.
 
Oddly enough, I just used "brown flour" 2 nights ago! I was making Ragout which is a french canadian dish that I make every Christmas. To brown the flour I just use a regular frying pan on medium. It takes a few minutes but then it browns well. Also you can just spread it on a cookie sheet and put it under the broiler. That works well also. I could probably buy it around here as I live in Ottawa and there are many Franco Ontarians but really it is so easy to make and just takes a few minutes!
 
I will check next time I am at the grocery store just to let you know if this area has it. I am curious now! :flower:
 
The reason I was looking was because I also wanted to make Ragout :)...as well as a couple of other recipes from my Canadian grandmother. So much easier right from the box when you don't have a lot of time ;)
 
Maybe Robin Hood will steer you right there and I will let you know what I see. It has to be around somewhere!
