Seven character meals woul dbe too much for our family. We usually stick to one per trip. I say, since they appeal to you so much, keep more than one, but not one every day. I'd keep three at the most.
Mostly the character meals are buffets. So you are getting up to get your food. The characters come to your table, but you still have to stop eating, pose for photos, have your autograph book ready (if you have one) every time one comes to your table...Then there are trip to the bathroom. You'll also want to time your trips to the buffet between character visits...The whole thing is very hectic. They are frequently rather noisy. Fun, but not quiet or relaxing.
Until you've been to WDW, I think it's hard to appreciate all the crowds, noise, going, sensory overload, and rushing that you'll experieince on a trip to WDW. ALL DAY there are constantly things to see, smell, taste, hear, feel. Your senses are stimulated all day. It's a great feeling, but it can be very tiring. Add to that - you'll be on your feet - on concrete - ALL DAY LONG.
After a whole day of that, a nice quiet meal is a treat. Even at our QS meals we often find ourselves eating at odd times just to get some peace and quiet. We usually try to avoid noon meals like the plague. I'll hop into a place at 11:30 for a light lunch, and then an on-the-go snack around 3 or 4 pm. At 11:30 there are no lines and plenty of tables.
Having said that, many table service places at WDW, still have some form of entertainment, and there are also non-character buffets. Mexico has the boatride to view, Morocco has a belly dancer, Sci-fi has movies, Ranforest has moving animals and thunderstorms - almost all have exciting decor and people watching. So truly quiet meals are limited. Le Cellier is one of the few places tht has neutral decor and relatively quiet atmosphere. Perhaps that's the real reason why so many DISers love it so much.
