We do not have the park hopper tickets, but we do have more days than we will actually use (no time to run to parks on check out day). Could we go to two different parks in the same day?

You can't enter two different theme parks on the same day without the park hopper option.

It's a very common question. But Disney is well aware that anyone who can count would rather pay the small additional day price than the park hopper price. If you tried to enter a second park, the Mickey reader would recognize that you had already entered another park that day.
But, if you find that you want to head to a different park, you can add the park hopper option at any point during your trip. It will cost the same as if you had added it in the first place.
