How old are your kids? Are they interested in the Agent P missions throughout World Showcase? Since she was little, my DD(10) could start in WS when it opened at 11 and stay until closing and never get bored. You can do the agent P missions for a good part of the day if you do them in several countries and they are a lot of fun. We have been going to F&W with DD since she was 7. She (and we) love it because she can try different foods, she never would have tried from a menu. She is willing to try things because she knows if she takes a bite and doesn't like it, she can just hand it to her Dad and we will get her something else. She doesn't have to commit to a "meal" so it is great for us since she has never been the most adventurous eater. Weekdays are typically fine. It does get more crowded in the evenings, but it is nothing like the weekends in terms of all day crowds and the Saturday night wildness. We typically start eating F&W stuff when they open at 11 (and the lines are fairly short)- eat until we are full, and then have a dinner ADR in WS around 7 to avoid the crowds and long F&W lines. I would suggest going at the time you intended with your original plan, and just staying longer. I would stay until FEA and then either do an ADR in EPCOT after that, or maybe hop elsewhere if you want to avoid the evening F&W crowd.
