The park is closing at 6pm one night we're there, and I'm wondering what will be the latest we can enter Three Broomsticks and have dinner? Do they stop admitting people to dine at a certain point prior to park closing?

No. You can only made reservations for breakfast and that is only if you have the Harry Potter Package. Three Broomsticks is a counter service restaurant.
