Things to do South of Orlando?

We are flying into MCO April 8. My MIL owns a home in Sebastian and will be picking us up, and we will stay until April 12. She has given us permission to use her vehicle and do as we would like during our visit.

Our plans are one day of Sea World (tickets aren't purchased, so tehcnically thats negotiable, but what we are leaning toward and researching), and at least one beach day if not more time at the beach (MIL is about 5 minutes from nearest beach for reference sake). She also has a pool at her house. This isn't really meant to be a GO GO GO type of trip, but we would like to take in a few things. I don't particularly want to take the time to make multiple trips to Orlando (if so, we would like hit up WDW...). Anything come in mind between the Orlando and Sebastain area? Its my DH, myself, and our 10 year old DD. I've considered the Brevard Zoo and Lapointe Farms. Just wondered what else might be out there that we are not thinking of. Thanks!
 
Lion Country Safari; Kennedy Space Center; Jonathan Dickinson State Park, various springs
 
April 8 th Thursday is arrival & rest day.

April 9 th Go for Kennedy Space center

April 10 th Drive down A1A to Vero Beach & use restrooms . There is along this road

a very interesting Fish / Wildlife Aquarium

Return Via Hwy 95 to see ia bit more of Florida & back to Sebastian

April 11th Sunday Zoo ? BUT Take M. In Law OUT for Dinner ... Place Her Choice

April 12th Monday Pack up & Relax then drive to M.C.O.
 
Check out Kennedy Space Center. It's not really south of Orlando, but it's straight north of Sebastian instead of going inland/west to Orlando. I think it's good for your ten year old, as she'll be old enough to really get a lot out of it.

Someone suggested Lion Country Safari but I wouldn't. It's an hour and a half south of you so it's pretty out of the way. It's a nice local attraction but I don't necessarily think it's worth going that out of the way. There is a small amusement at the end of the drive through safari but the last I heard it's closed for Covid.
