Busy weekend here. Helped out at my BFF's church Spring Fling Saturday. I didn't feel well Sunday but did go shopping Sunday night for birthday gifts for my two nephews who are visiting this week, it's the older ones Spring Break. I think I overdid the fast food which I had given up for Lent. :sick:

Yesterday I took off work and we went to see them, my SIL's sister had everyone over for lunch. My youngest DN is just the cutest little thing, bubbly, bouncy, happy little boy. I hadn't seen him since last year when he was two months old.


So I have finally convinced David to let me do meatless Mondays. It has only taken me 8 years and his Dr telling him to lower his cholesterol, that he finally agreed.

So this Monday I am making Quiona and Black bean chili, but I am on the lookout for more ideas, so does anyone have recipes that have used and liked?

I have made a frittata which can be made with egg whites. I've also done portabello mushroom "burgers" on the grill, just salt, pepper and olive oil, then when they are done I put a little blue cheese on them, like a tablespoon, and have lettuce, tomato, onions and pickles on it then serve it with oven fries.

It's been crazy. Yesterday I was freaking out over this "wound vac". The more I learned about it's use the worse a feeling I got. We set up an appt with the doc this morning, she checked it out and said we were OK without the thing. But it was out of the trying pan and into the fire. The treatment now is to clean her wounds and apply a debriding salve to the wounds. These are wounds like I've never seen before! Just awful. Then I have to bandage them back up. I have to do this on all the days the nurses don't come. :faint:

Allison- Buddy's mom has a wound vac. It honestly is a contraption that works wonders removing toxic tissue. Her wound was a stage 4 sacral (sp?) wound and has been remarkably infection free since she has had it. I do agree that if you can get along without one that is better though. How is Fran doing and how are you holding up? I cannot imagine having to do wound care on my own so sending strength to you!

Marilyn- You had a busy weekend but seeing your nephew had to be wonderful!

Jen- how are you feeling today?

So I have to cook today no matter what. I hope to get to the nursing home early so I can be home to make dinner

Hello ladies! I have been having the hardest time getting on to the DIS for the past few weeks. It keeps freezing up and then I get frustrated and sign off before getting anywhere. But it seems to be working at this moment so I will say hello!

This goes back a ways, but before I kept getting frozen out, I asked for cabbage ideas from you. I ended up making a vegetarian stuffed cabbage. It's a Mario Batali recipe. Here is a link:

The flavors were very good. If I make it again I would omit the potatoes, I did not think they were needed. This could be a meatless Monday option, since I see there was some talk about that! I am going to go out on a limb and try and include a picture of it:

Nancy - thanks for the info. I don't think Buddy's mom is as active as Fran wants to be. I won't be alone in caring for the wound, just the days the nurses can't do it. She has a follow up with the wound care center today. I'm hoping they will do it today while we're there so technically my starting day would be tomorrow.

I haven't even thought about dinner. Fran asked for quesadillas, that could work, yet another meatless night and we're not even trying.

Today was good at work. I came home and UncleR had made us our BLT's. YUMMY! I'm moving straight from winter to summer foods! :teeth:

Hey, everyone! We came back from my dad's house yesterday in a HUGE rainstorm! It was really cold, too. I don't mind the moisture, because we really need it, but I do mind the cold! It's drizzly again, today.

Dinner tonight will be some kind of grilled cheese sandwich, in honor of today being National Grilled Cheese Sandwich day. Not sure what we'll do to dress them up, but I'm thinking slices of tomato and bacon. Yum!

Nancy - My prayers are going out to you, Buddy and Alice. This is not an easy time, and you are my heroes for doing what is best to make her passing easy.

Alison - You are a better nurse than I am. I just couldn't do any of the stuff that you are doing for Fran! Kudos to you!!!

Jen - I'm glad you are feeling better. We don't do much brunch around here. When we do, it's some kind of overnight French toast. Nothing too fancy. My kids saw the cookie pictures on your blog, and realized that mom has been hoarding a bag of those M&M's. Guess what they are making this afternoon? I'll let you know how they go. I also have a bag of coconut M&M's and mint M&M's. All kinds of flavor possibilities!

Lindsay - Good to see you! How are you feeling? I know your allergies were acting up. Are they any better?

Marilyn - Sorry you were under the weather with the fast food. That could be considered both good and bad!

Ellen - What joy to be surrounded by all the babies!!! That makes the holidays way better!!! Keep spoiling them all!

Hi All. I stopped in yesterday to say hello and was sure I posted a post; but it seems to have been lost in translation somewhere. :confused3

I'm back from Hong Kong with a bunch of pictures....of food. I've also come home with bronchitis and am coughing up a storm in bed. Yes....all you second name Louises out there....I am RESTING IN BED as prescribed by the doctor. I have a round or two of antibiotics to get through, cough medicine and paracetamol for the head ache.

It's been SO busy here this evening. I worked all day, then came home and started cupcakes for a coworkers bday tomorrow. They look good, though! Brown sugar cupcakes with a peanut butter brown sugar frosting.

Going to be a busy weekend, of CLEANING!!! :yay: I have so much stuff that needs to be sorted and it's going to be a great weekend weather wise to pull stuff out of the house onto the back porch, sort it and dispose of things.
 
Hi All! I have been cooking but it is disjointed. i had to cook the ham and the turkey I had in the fridge for Easter and made some sides to go with but Buddy is going to be a very happy guy this weekend becasue he can turn a lot of meat into sandwiches :lmao:

Allison- I think I am lost, does Fran need the would vac now? From what I was observed the dressing gets changed by the would nurse and the vac thing keeps the bad tissue from reinfecting the wound. I don't know the best answer for Fran but I wonder if your stress would be reduced, I don't think I could do what you have to do in order to keep her wound clean. I hope she heals very very quickly!

Marilyn- you are always cleaning! I need to but if I move any more stuff onto my front porch we will look like Ma and Pa Kettle :rotfl:

Jen- I want pics of your doily stuff! I am not creative right now but doily things to me a little things. Petite fours, pecan tassies, baby little napoleons, stuff like that.

PIO- Feel better!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

Buddy's mom is very bad. :sad2: i am heading there in a little while. She is getting pain med every three hours as well as whenever for breakthrough pain. ativan every 8 hours and whenever she needs it. She has a fever that will not come down even with around the clock Tylenol. Please pray.

7 more weeks of work. Not that I'm counting!

Today we had a luncheon at work, and I made some fabulous cupcakes for a coworkers bday. Hopefully I'll blog those soon.

UncleR made us yummy meatloaf and I made mashed potatoes for dinner.

Tomorrow is a snack day, sandwiches and dips. Then, Sunday I'm making homemade gyros with homemade pita. We'll see how it goes.

I'm so tired. This weekend will also be for resting. So, g'night!
