So a friend of mine made this rum cake, and I was bowled over by how Delicious it was. I begged for the recipe and just got it. Truly this is one of the best rum cakes I have every had.

K-la’s Almost Tortuga Rum Cake
Serving size: 12

Tortuga Rum isn't available for sale to the public. It's only produced in the Caribbean and used in Tortuga Rum cake. I used Cruzan Vanilla Rum!

Basic Cake Mix
2 cups cake flour
1 1/2 cups granulated sugar
4 teaspoons baking powder
1 teaspoon salt
1/2 cup butter, cut into bits
3 tablespoons vegetable oil

Rum Soaking Glaze
1/2 cup butter (NO SUBSTITUTE)
1/4 cup water
1 cup granulated sugar
1/2 cup Cruzan Vanilla Rum - HI-style rum For the Cake
1/2 cup finely chopped walnuts
1 (3.5 ounce) package instant vanilla pudding mix
1/2 cup milk
4 eggs
1/2 cup Cruzan Vanilla Rum - Hawaiian-style rum
1/2 cup vegetable oil
1 teaspoon vanilla extract



For the Basic Cake Mix: Use an electric mixer on low speed to combine the ingredients in a large mixing bowl until the mix is the consistency of fine gravel, and all of the particles are almost equal in size.(Basic Cake Mix may be stored in a container in the refrigerator for 3 months. This makes about 5 cups of mix and may be multiplied for other recipes as needed.)

For the Cake: Preheat oven to 325 degrees F. Spray a large (12-cup size) Bundt pan with nonstick cooking spray. Sprinkle the chopped nuts into the bottom.

Place Basic Cake Mix, pudding mix, milk, eggs, rum, oil and vanilla extract in a large bowl and combine on medium speed with an electric mixer for about 2 or 3minutes. Scrape down the bowl halfway through. Batter should be very smooth. Pour into prepared Bundt pan and level out top. Bake until fully golden and tester comes out clean and cake springs back - about 55minutes. Remove from oven and place on cooling rack while making soaking glaze.

Rum Soaking Glaze: In a small saucepan combine butter, water and sugar. Bring to a boil carefully as mixture boils over very easily. Reduce to a simmer and cook until sugar is dissolved and syrup is combine well and a little thicker. Remove from heat and add the rum and mix to combine.

Doug did real good with dinner last night. When I got home there were grilled chicken salads ready. Boy they hit the spot. We were just finishing up when Marty & Stephanie (and Addie - their Great Dane and Coopers BEST friend) walked in. They looked like they swallowed a canary. HUM...... can't be they are expecting, cuz they already are .....ok what's up. We walked out to the driveway and they had a new Chevy Tahoe sitting there. It is so pretty and they are so excited. We took it for a test drive and we gave our stamp of approval. We are so happy for them and it will be perfect once the baby comes.

Morning, all. Wow, it feels like Spring here! I told my kids not to get their hopes up, it's way too early in the season for this warm weather to stick. I'm sure we've got some storms on our horizon.

Thanks for the steak food porn! I don't get good steak here, because Alan feels like that's his territory, and so I'm not invited to make it. However, he gets distracted easily (he's like a magpie with shiny objects), and tends to forget that he has meat on the grill until it's as tough as old shoe leather! And then, of course, he blames it on the grill! I need to show him these pictures so he can see what REAL home cooked steak looks like!

I have Scouts this afternoon, and I'm not really looking forward to it. I thought I was going to be able to stop doing Scouts by now, since Jacob is no longer a Cub Scout, but there's no one else willing to take over the Webelos den. The Cub Committee Chairperson asked me if I'd be willing to stay for another 6 months. So, I guess I'm in until July. Sigh! It's just a lot harder to be enthusiastic about activities when your own child isn't part of the troop. However, the boys are cute, and they are so grateful. I just come here to vent, and then go do my job.

Dinner tonight will be crispy coconut chicken tenders with apricot curry dipping sauce. Yum!!! I love this recipe, and the fact that it's so easy makes me really happy! We'll have some corn or green beans on the side.

Happy Tuesday evening y'all! Work was good and laid back today. Tomorrow will be busier.

I told you guys I would post the sausage recipe that we made this weekend. It's up on my blog, but here's the recipe:

Italian Sausage With Fennel

1 lb. ground pork
1/2 tablespoon salt
1/4 tablespoon black pepper
1/4 tablespoon fennel seeds
1/2 tablespoon fresh chopped parsley

Simply adjust seasonings for your particular weight of meat. Mix all ingredients together. You can either stuff your sausage into casings, or leave un-stuffed.

This is SO flavorful and yummy!

So I have to tell you that I stood up, in my surgical shoe and brushed my teeth, and my hair, this morning... Small Steps but made me feel almost human again..:goodvibes

WFD? Some kind of fast food drive through. Seems to be the story of my life right now! We have band tonight and even though it's only 33 miles from home in LA traffic it's usually at least an hours drive, we allot for two just in case. Sometimes we're early, sometimes not.

The good news is that we sign the papers with the contractor on Thursday and they want to get started Friday and Saturday. That will be nice so hopefully we can take our trip to DL and not worry about the buildings! Also I found out today that on our visit we are entitled to all sorts of VIP and special services, so I had Fran call about those today! This is going to be a fun trip!

Friday evening I went to a Pampered Chef show and bought a few things including a chocolate cookbook. :cloud9:

Saturday night I went to a Bull Roast. Pretty good food especially considering there had to be close to 1000 people there. They had some really good fried oysters. Usually at things like that they are a little on the chewy side. These were really moist inside. Sunday I did nothing much although DM did bring home blue crabs for dinner.
 
If it's Wednesday night, it must be dinner at Mum's....rice, chicken curry, vegetable curry and stir fry veg/tofu.

DS went back to school today....can you believe that 6 weeks just went by in a blink of an eye? It feels like yesterday when he broke up for Christmas break. And it's February already.

Still trying to stay to the WW plan and be good.

Morning, everyone! Sorry I didn't make it on yesterday. I met Amanda for breakfast at the butt crack of dawn and it messed up my whole morning routine, lol.

Tonight is dinner at the church :)

This is summer vacay for us. DS got 6 weeks this time but he's changed schools. So, we're heading into the 8 and 9 week summer vacay period.

1st term is a variable term...depends on when Easter is. So, this year, this term is 8 weeks. He will have 2 weeks off at Easter (autumn for us).

Then another term, usually about 13 weeks in length. He'll have 2 weeks off, which is the winter break (June/July'ish).

3rd term and another 13 week term or so, taking us to our Spring break in late September. And another 2 weeks off.

The kids then go back for another 10 - 12 weeks before summer vacay again.

I think I did count it up one year. Parents can count on the kids having about 13 weeks of school holidays in a year. :faint:

Our kids actually have about the same amount of time off during the year, just not as spread out. Most of it's during our summer.

I can't imagine what parents do for work during that time!

The DIS is running so very slow!

Last night I made meatball sliders. Tonight is Japanese food--udon noodle soup, and also vegetable sushi if I have the time to make it.

We had a slight change of plans yesterday. My book club is meeting tomorrow, and I haven't been able to get the book from the library. Well, they called me at 5:00 yesterday to let me know the book was in. So, I raced home from Scouts, loaded up the kids in the car, and drove 35 minutes to the library. Since we were out, we stopped at the local hamburger joint for 89 cent hamburgers for dinner. I love this little "mom and pop" place! Best hamburgers, and you can't beat the price.

That means I'll be reading all day today and tomorrow to get the book read! Wish me luck! It also means that the crispy coconut chicken tenders will be dinner tonight.
