Good morning friends,

It is getting to be very hard to get into the Dis these days. I have tried since 8:00 this morning and have just now been able to log in. This is getting to be very annoying. I find I open the window and then go do something else while it opens - if it does. I just don't have that much time to sit and wait. Sorry for the rant but it is very disheartening.

The weather here has been just beautiful. In the 60's hugging the 70's, but all good things have to end. We are expecting a HUGE snow event this Friday into Saturday. They say parts of Nebraska will get upwards of a foot of snow. We don't have any plans and neither do my kids so we will just hunker down and stay put. We REALLY need the moisture so we won't complain.

I made turkey meatballs last night and they turned out really good. I have been so hungry for spaghetti and meatballs so this fit the bill. They were very easy and suprisingly very flavorful.

WFDT ~ Spaghetti and meatballs, green salad and garlic/cheese bread. I know, I know it's Wednesday and usually date night but we are eatinng at home tonight. Much to Doug's chargin.

Hi Ladies! I also am frustrated with the DIS. I have been trying to post but shut down because it is so slow.

last night was grinders from our fav grinder shop. Tonight I am trying a new recipe for chicken breasts with instant potato flakes. We'll see. I will try to get back tonight after Nola and Rylee go home.
 
Tonight I made Chicken Parm "Burgers" on garlic buns.

They were SO good!

Basically, you saute or grill some chicken breasts seasoned with whatever Italian flavors you like. Then you top with mozz and parm cheese until it's all melty. Spread some garlic butter on Keiser buns(I browned them) and make your sandwhich.

Dinner tonight is soup and grilled cheese sandwiches. Alan has late class, and Katie has her closing night of the play, so it will just be Jacob, Timmy, the twins and me. Soup sounds just about right!

I've got to sit down tonight and do a menu plan for the next week or so. We are watching my nieces and nephews this weekend, so I really need to plan some easy, LARGE meals! I will have my 5 kids, plus 5 extra kids. Yikes! I fear for my sanity!
I cannot get past all those kids you will be feeding! I am making dinner but now all I want is grilled cheese and spaghetti sauce sandwiches

..I've decided that I need to lose about 20 lbs and have started back to WW. Two weigh-ins later and I've officially lost 1.2 kg in the 1st two weeks. That's about 2.5 lbs or so.

But then again we are heading on to a cruise in a couple of days, and that never helps. :rolleyes1

I am a little jealous! Dan and Erica got a last minute deal on a cruise out of NYC and wanted Bud and me to come too. The price was right and the timing would have been okay too but now we have his Mom to care for so that is out for now. Have fun!!!!!!!!!!!!!!!!

So I have to tell you that I stood up, in my surgical shoe and brushed my teeth, and my hair, this morning... Small Steps but made me feel almost human again..:goodvibes

Saturday night I went to a Bull Roast. Pretty good food especially considering there had to be close to 1000 people there. They had some really good fried oysters. Usually at things like that they are a little on the chewy side. These were really moist inside. Sunday I did nothing much although DM did bring home blue crabs for dinner.

When I think you have no more new things to add to your weekends you add one more :worship:

WFD -Pancakes, chocolate chip and blueberry. Bacon. Fresh Fruit, bananas and strawberries

WOW!!!!!!!!!!!!!!!!!!!! Crazy weather! We were in the 60's today too but it is supposed to get cold. We generally get your weather a few days after you so I hope that your snow event is a snow ball..............not a snow storm!

YUM!!!!!!!!!!!! Red Robin used to have a chicken burger that was a fried chicken breast topped with a nice round fried mozz cheese topped with sauce. Oh, my fatty goodness! I must be hungry because I want everything on this thread tonight!

Dinner is oven fried chicken and veggie lomein. I bought the lo mein from teh freezer case.

Good Wednesday evening! I had a busy day at work. Then I went shopping for some staples and things for the Super Bowl and the next week!

Then, I came home and UncleR and I team-tagged to make tostadas. They were YUMMY!

Okay. Yesterday we went to court to gain conservator of Buddy's Mom's person. We think we should have gotten conservator of her estate as well because this is going to be a nightmare but :confused3

Long story short, his Mom almost died while in her DD care. Bud had tried to step in three different times but apparently his sister will not accept that I am in this picture. Yesterday her care was turned over to Buddy. We were surprised that his brother came to the hearing and supported Buddy. He told his sister that she has been complaining that she was overwhelmed so she should welcome the assistance. Buddy said very little, which was in contrast with his sister, who actually turned her chair around to face the wall in order not to look at us. She was furious at the documentation that started that she has not been cooperating with the health professionals or the social workers and that they endorsed Buddy and me to care for her Mom. The attorney appointed by the State also said that he did not want her to care for the estate or for her Mother. Sister refused to work with Buddy if I had any input and Buddy told her that was not negotiable. She hedged her bets and lost. The judge told her that no one would consider her a bad person if she turned over the finances but she insisted on keeping them. The only thing her DH would add to the conversation was to tell the judge the value of MIL house :sad2: Attorney for Mom was opposed to the arrangement but :confused3

I called an attorney today and have an appointment on Monday. Buddy needs guidance because this is not just about her health care but a whole host of issues that revolve around her "person". Right now the woman does not even have her pocketbook :headache:. The judge made it clear she needs to cooperatre but I have my doubts. The rehab does as well. I was told byt te SW that they are prepared to go back to court on Bud's mom behalf to request that the DD be removed from her estate because their experience is that she will not make sure the bills are paid :sad2:

Buddy is a mess. He has been estranged for over 20 years and that was no secret. He told the judge that he came when his Mom was in trouble and will do what needs to be done to provide for her care but he s so conflicted. He has no real connection with her so this is very difficult. His brother is the same way. He actually did the "dirty" work an made his sister stop.

I am on my second glass of wine tonight so if I ramble I am sorry. My MIL raised two very good men and she never respected them. Both came when they thought she was in trouble and while my DBIL said he was not willing to take this on since his brother was willing he would have stepped in. Buddy feels guilty because he hates to visit but I have assured him I don't mind..........although I was driven to drink two days last week :laughing: The truth is that I miss my own Mom and so I am okay with taking on his Mom. So. If I am not here too often it is because I need to be at the rehab 5 nights out of 7. I am cooking but is is not very exciting. I probably have put too much out here but I do not care. I am so mad that this woman was basically left in worse shape than a cat dropped off to a shelter. She had a stage four sacral wound and her DD refused to talk to the dr's. How she ended up like that is :confused3 DD has not spoken to anyone since and has not even brought a sweater for her mother. Nothing! She is in a johnny. Not even her Rosary! The lawyer will tell us what we can do and no matter what, I will make sure this woman is no longer dehumanized. I will gain more weight, she like donuts! and does not care to eat alone :rolleyes1

Jen- I am three sheets to the wind already! I made this wine and opened it on Saturday for friends so you know I could not throw it out;) I am not a whiner but my heart breaks for Buddy. He is my DH but honestly, he is the most moral man I know. If you knew the abuse he suffered at his mother's hands :sad1::sad2::sad1: He took it for his younger brother and sister.........the one who is the nastiest woman I know!!!!!!!!!!!!!!!!!!!! Beatings and abuse that is unspeakable! He would never hurt a Soul, in fact he is like the animal whisperer. Kids and animals are drawn to him, I think that they know he is a good person. ;) I confess that I made sure I had my hair done at the hearing and was not-so-secretly glad his sister looked like Hades! Buddy said she looke like she been rode hard and put away wet.............I said the inch roots needed to be colored ;) You want long hair you need to color your roots! I am one catty woman!!!!!!!!!!!!!!!!

Nancy - I don't know what to say except that if you need to vent, I'll be here to read and offer support any way I can. It is really sad to read your story; but then my parents came back from an extended family celebration with a very similar story this weekend. There is definitely karmic changes in the air. I know you and Buddy will do the best you can for your MiL and I can only hope that when/if DS gets married, that he picks a partner like you. :hug:
 
Nan I am sorry this is dividing Buddy's family. :hug: His Mother is very lucky she had him. Most people would just turn their back a keep walking.

Verdict the casserole is good I would make a few changes next time. Like add salt and pepper to the meat:rolleyes1 :rolleyes1 These last couple of weeks I feel like the push me pull me from Dr Doolittle.

Hi everyone! With the slow DIS and Fran running me all over, not much time to get on here. We've been ripping out plants, trimming fruit trees, visiting nurseries, and we still have to deal with licensing the cats and bringing in Pascha's clearance to be alive!.

Nancy, so sorry you have to go through all that crap! It's bad enough taking care of sick in-laws without having the courts involved and nasty relatives.

Hope everyone else is doing good and they fix this mess so we can all get on and chat like normal!

It's nearly 8PM and I'm sitting in Lowe's with a basket full of plants waiting for Fran to finish shopping. We are in a large shopping complex with at least six full service restaurants, a food court and multiple fast food places. I just hope we end up somewhere with a bar! I would really like a Martini or Margarita right now, but I would settle for a glass of wine.

Tomorrow will be a long day too. We have to finish cleaning up the yard and then plant these plants!

Edited: We are at Islands, Bacon Burger, fries onion rings and fish tacos.

Today I am making easy beef stroganoff with crescent rolls. Quick and easy. I seem to be doing that a lot lately.

You all know that I am a huge Barefoot Contessa fan. Well, I notice when she needs chicken for recipes, she roasts bone-in skin-on breasts in the oven and then pulls the meat off. I tried that for my chicken pot pie and holy crap, was she right!!!! That chicken was so delicious, so flavorful and juicy. So I marched my tush back to Publix and stocked up on them. I am now looking for some more chicken recipes I can do this with. I can't wait to make my chicken noodle soup with it. I normally roast boneless, skinless chicken breasts. No more! Any suggestions?

Nan- oh, my darling. I'm so sorry you are going through all of this. Give yourself and Buddy a huge hug from me, and enjoy your wine :hug:

Tonight's dinner is going to be homemade cheeseburger macaroni. Then, I'm making a pineapple sheet cake for work tomorrow.

Nan - This statement alone tells alot about you and your character, you are a loving woman with values and respect. You and Buddy together will make this right and you will be stronger and tied to each other more.

Always remember to true and faithful and these things will work out. I am not saying it will be easy, but the hard work will pay off.

I will keep you all in my prayers and if you need anything just let me know.
