The What's For Dinner Thread - October'11 (recipe index in OP)

I made a ½ recipe tonight

Enchiladas Rancheras

Preparation Time: 45 Minutes (25 Active Prep)
6 servings

1 lb leftover poultry
½ tsp chili powder
½ tsp cayenne pepper
½ tsp black pepper
½ tsp garlic powder
------------------------------
4 tbl vegetable / canola oil
4 tbl flour
2 4 oz can diced green chilies
4 cups chicken broth
6 cloves garlic
1 tsp cumin
1/2 tsp salt
-------------------------------
1 medium onion chopped
2 cups Monterey Jack Cheese, grated.
12 corn tortillas

Heat 2 tbl oil in a saucepan, add flour and stir for a minute or two, do not brown. Add chilies, stir for 30 seconds, using a wire whisk, then stir in the chicken broth, garlic, cumin and salt. Bring to a boil, reduce heat and simmer for 10 minutes.

Meanwhile, preheat oven to 375, and chop poultry and sprinkle with chili powder, cayenne, black pepper, and garlic powder. Toss until well coated, and chop onion. Dip each tortilla in the sauce, place in pan and fill with about 3 tbl of the poultry, 1 tbl of onion and 1-2 tbl cheese. Roll tortilla and place face down in a greased 13x9x2 baking pan. Sprinkle with remaining cheese (if there isn’t any use more) and pour sauce over tortillas. Bake uncovered for 15 minute or until the top browns and sauce bubbles. Serve with Sour Cream or Guacamole if desired.

I’ll tell you ladies, it feels really good to not have tons of meat to cook, and actually start to get back to cooking small meals without the pressure of giant roasts spoiling! However I’ve got probably a hundred days of using up precooked turkey and ham!

Alison, that looks and sounds really good, I will have to try this.

100 days..... wow, you might get tired of that soon, at least I would :scared1:
 
Ellen – I am about 75% packed! Looks like the weather is going to be beautiful but a little on the chilly side which means short & long sleeves, open toe/closed toe shoes……kwim?

You are going to have so much fun! This is my favorite time of year in Disney, weather wise. I don't mind packing a few extra shoes and goodness knows I look for any excuse for a new Disney sweatshirt. I am an over-packer by nature :laughing:

I over-pack all the time too! I don't think I've ever needed a vacation as much as I need this one.:hug:
 
Kathy- It's not just you! My three year old nephew is in Disneyland for his first time. He spent his first night there in the ER getting his head stiched shut from his fall in the hotel room, only him! My brother said the staff at the hotel was awsome and they had two nurses there within minutes. When they got back there were a bunch of feel better baloons. Just another reason to love Disney!

PIO- Thanks for your pad thai tips. I will use a big glug of oil next time, I was pretty stingy with it. Fish sauce is still a new ingredient to me and I'm nervous to overdo it.

Last night we had fajitas, so tasty and for some reason we haven't had them in a long time. Like usual, not sure on dinner tonight. Have a great day all.

Lindsay, if you have almond extract in the house you can add a drop to your recipe as a sub for the amaretto.

Ellen, good luck with the renovation! My house could use some renovating, but I am too afraid after the debacle the last time I had work done. It ended up taking about 4 months longer than oroginally estimated.

Kathy, I love Disney this time of year too! I hope you have the most magical trip ever.

Merle – Sorry you were having tooth pain but glad it turned out well. I hope you don't have any further problems.:hug: I was having flashbacks to my ordeal a few years ago when you were describing the pain :eek: (for all the new posters, our first day at F&W in ’09 I spent at a dentist getting a root canal), only ME!!!!!

I remember that!! I hope you have a great time! I am totally jealous! Last year we went to F&W, and we saved our snack credits so Jeff could eat his way around the world. You cannot imagine how much he can eat, but lets say he used up 28 credits in 1 day!!:scared1:

Sorry I havent checked in for a few days. Thursday night I had to make cupcakes for Kady's party at school, Friday was her party at Nans, and Saturday we had a party at the Bowling Alley with Jeff's family. So Sunday, was getting all my housework done, pumpkin picking and crazy errands!

I'm an overpacker too!! I am so glad you aren't going until Thursday. I have quite a few friends leaving today and they are going to get drenched. I don't like WDW in the rain. But by thursday it should be beautiful.

This remodel is going to take a LLLLOOOOONNNNNNGGGG time as we are doing it ourselves. That is why we took all day Sunday to get everyting organized. I told Doug as long as I could still get to my things I would be ok. I don't do messes real well. :cool1:

Well I am starting Church Conference He**. Pastor Tess - she should be shot - took vacation for the last 2 weeks and is back today and now we have just 6 days to get our Conference book ready to be sent in to the Dist as our meeting is the first week of Nov. I have a lot of it finished but there is a LOT only she can do. So if I am not on for a bit, please don't worry - I will try to at least pop in daily when I can.

The last two days my foot has really been bothering me, so hopefully I can hold out, my life at work right now is just so darn crazy and I want to make sure it is all in order prior to the surgery.:scared1:

We used to eat fried bologna too! If I tell, she will Nanatize her food even more when I am over, or cook food I dont like... WHAT TO DO WHAT TO DO????
 
Hello! Thanks Linsday for the new thread. I did not tale pictures this weekend, so no food porn to add. However, I did use my slow cooker for the first time. I made a batch of lentil stew to take for lunch:

This is the first thing I made in my slow cooker. It smells great. I'll report back on taste tomorrow.

That looks delicious. I :love: love :love: my slow cooker, and I use it all the time.
 
Right this minute, I have a Bolognese sauce simmering. I actually made it ahead during a ground beef cook-a-thon, and now I'm just heating it up for tonight.

About the cook-a-thon...I bought 5 lbs of ground beef on sale. I divided it into 4 sections and 2 lbs became Crock-Pot Bolognese from the October All-You, 1 lb made 4 burgers for the freezer, 1 lb made 16 meatballs for hoagies, and the other lb was browned and frozen for soup later on.

It was a lot of work, but now I'm very well ahead.

So growing in the south and rural south, we had these huge chunks of Garlic Bologna, and my MeMe (grandmother) would cut a slab off and fry it in our cast iron skillet, cut the sides so it would not become a dome and then crisp the edges until almost black.... That was some serious good eats...
 
I've toyed with the idea of starting a cooking blog. I have a blog that I horribly neglect and I think I'd probably enjoy a food blog better. I have to be honest about something though. I am a little protective of some of my recipes (except with you guys, of course!) and want to keep some of them to myself. LOL, it's a family thing. I'd have to be choosy about what I put on it.

You should! I started mine simply as a way to keep up with all the random recipes I was trying! I was tired of holding onto cookbooks and magazines just for one or two recipes. Keeping up with paperwork isn't my strong point :laughing:

You could always keep your current addy and just tweak it to be cooking related.

Well, my apples were a flop. I listened hard to my mom and grandmother who told me to cook them carefully so they don't turn to mush. Well, it was half and half. Does anyone have a fool-proof recipe to help me out? *sigh*
 
Not sure what's for dinner tonight, may make something easy like scrambled eggs.


The Apple Dumplings I made are a big hit. I got the recipe off of the Tasty Kitchen site. It says to cut the apples into 8 slices but I just cut them into
4's and it worked just as well.


Easy Apple Dumplings

2 whole Granny Smith Apples
2 cans (8 Oz. Cans) Crescent Rolls
2 sticks Butter
1-½ cup Sugar
1 teaspoon Vanilla
Cinnamon, To Taste
1 can (12 Oz.) Mountain Dew Soda

Peel and core apples. Cut each apple into 8 slices each. Roll each apple slice in a crescent roll. Place in a 9 x 13 buttered pan.

Melt butter, then add sugar and barely stir. Add vanilla, stir, and pour entire mixture over apples. Pour Mountain Dew around the edges of the pan. Sprinkle with cinnamon and bake at 350 degrees for 40 minutes. Serve with ice cream, and spoon some of the sweet sauces from the pan over the top.

This is an awsome recipe. I know you haven't been following my PTR, but I've been fretting over what to do Sunday night the 30th. We could either go to the F&W fest, but it might be too crowded, otherwise we would go back to the room to eat or go to Beaches and Cream. This is an awsome recipe since we could make a half recipe and maybe add some bacon. I showed it to Fran and she liked it, so we'll make sure to buy cream cheese. We have pasta in our OL so between the ingredients mentioned here and what we plan to buy we can play it by eiar for the Sunday night of our trip and eat from the kiosks if the lines are short or make us some pasta in the room if we're still hungry. I will also make sure we have makings for grilled cheese sandwiches to satisfy hunger if necessary!

First, I'm so jealous of all of you that are going to Food and Wine.

Second, you will love this alfredo recipe. So easy, yes, but more than that, it is delicious!

Even if you don't use it at Disney, I'd recommend it at home!

(You can even use some of that poultry you've got frozen!)

I forgot to post my daily update in the last post. I'm frazzled, today was another long day. :lmao:

I didn't sleep last night, and neither did my poor wife. We had a cold front blow through and the wind was howling, and I think it kept both of us up.

It was FREEEEZING here this morning. Around 50, but with the wind, it felt much colder. Tonight we're getting down in the 40's. It was 90 yesterday! *faint*

Our town's McDonald's opened today. You couldn't even get in the parking lot as I drove past this afternoon. :lmao:

Tonight's dinner is fried fish with tartar sauce and fries.
