I (unfortunately) do not have the day off. I go back to work today. And 5:30 is awful early when you've been sleeping in every morning. :faint:

I couldn't sleep last night either. I tossed and turned all night. :confused3

The kids don't come back until tomorrow, so today will be a paperwork day for me.

Tonight UncleR is making chili for dinner. It's cold out, so I get to come home to a nice bowl of hot chili. :cloud9:

David and i both have the day off... Not looking forward tomorrow, going back to work and the weather tomorrow is forcasted at 22 when we are leaving. Ughhhh
 
OK, since I didn't post it last night, here is the recipe for

Mexican Lasagne

what you need

1 lb. lean ground beef
1/2 cup chopped onion
1/2 cup chopped green pepper
2-1/2 cups TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa
1 can (11 oz.) whole kernel corn, drained
1 tsp. chili powder
1 tsp. ground cumin
12 corn tortillas (6 inch), divided
1 container (16 oz.) BREAKSTONE'S or KNUDSEN Cottage Cheese
1 cup KRAFT Shredded Sharp Cheddar Cheese
1 can (2-1/4 oz.) sliced pitted ripe olives, drained

Make It
PREHEAT oven to 375°F. Brown meat in large skillet on medium heat; drain. Return meat to skillet. Add onions and peppers; cook until crisp-tender, stirring occasionally. Add salsa, corn and seasonings; mix well.

LAYER one third of the meat mixture and one half each of the tortillas and cottage cheese in 13x9-inch baking dish. Repeat layers; cover with remaining meat sauce. Sprinkle with Cheddar cheese and olives.

BAKE 30 min. or until heated through.


I don't like olives, so I don't put them on. This recipe comes from the Kraft Foods website, but Fran found it years ago on the side of a tub of cottage cheese.
 
Morning, all!

Last month, Scott and I were officially together for 10 years! :cheer2: We decided to do something romantic and we are going to do it today since he's off. We are going to the movies (probably MI:4) and to an Italian restaurant we love that's only open for dinner. Yay! We will probably take down our tree this morning and get all of the Christmas stuff put away.

Christmas has been put away and David and I are cleaning everything in sight and putting everything in its place. Prepping for Thursday.

Good for you! We are being very lazy today. I am just watching the Rose Parade over and over and hanging out on the DIS. Fran is napping! (what else is new? But I guess it's better than shopping on eBay!)
 
Hi, everyone! We're back!!!

Christmas was wonderful! We had a really nice time with Alan's mom on Christmas Eve, and enjoyed a good turkey dinner, a movie, and presents with Gramma. Christmas day was relaxing! We went to church, then came home and did stockings. After that, we ate brunch (peach french toast casserole, egg/sausage casserole in the crockpot, egg nog and fresh fruit), and then dove into the rest of the presents. We were done around 3:00 in the afternoon, and then spent the afternoon, chilling, watching movies, and resting.

The next morning, Alan went to work at 4:30, and I got up, packed the car, loaded the sleepy kids into the vehicle, and we drove to my dad's. My sister and her family were there for a couple of days, as well, so it was nice to have a visit. While there, we had Christmas: Part 2 and that was really fun! Alan drove down on Wednesday and we were able to spend some time with him there.

On Saturday, Alan left for Iowa for the GOP caucus. The kids and I stayed at Dad's to ring in the New Year. It was a quiet night for us. I made salmon patties (kid's favorite), and we opened some sparkling cider. By 10:00 we had "rung in the New Year" and the kids were all in bed. I know we are fuddy duddies, but, since I had to drive home yesterday, I didn't want to be too drowsy. Alan will be in Iowa until Wednesday, so I'm hoping that he'll want to celebrate when he gets home. He knows he owes me, since he was treating me kind of crappy while we were at Dad's house. We'll see.

There have been some amazing photos and recipes posted! I can't wait to try some of them out!

Jen - Your pasta looked amazing! I'm going to have to beg for the attachments so I can try it!

Brandi - Your trip to Mexico was so inspiring! What a neat thing to do!

Nancy - Your SIL is making me very angry! I hope that it all works out for your MIL.

I know that I've missed a ton, but my excuse is that I just read through 10 pages of this thread, and my mind is kind of mushy, now! Has anyone heard from Kathy? I hope all is well with her!

We have been cleaning and cleaning and organizing...

But I had to take my car to the dealer...

So my car was bought brand new in April of 2000, it is an Acura CL, and has 130K miles on it. The passenger low beam was not working, so we replaced the bulb... $140 for a bulb, you have got to be kidding me, something about zenon gas and blah blah blah, so I buy them on Amazon for half price but still...

Then I take it to my guy, David and I are his son's god parents... Anyway, he replaces the bulb, took him 3 hours, the whole front of the car had to come off, why do they make it so hard... Anyway he replaces the bulb, I still have no low beam, it is the ballist, So he recommends I take it to the dealer, because if anything happens, they have to fix it. So here we go...

It is $864, to replace the ballist for the low beam on the passenger side... I bought two headlights from Amazon, so they are replacing the other bulb for gratis. But really, why is so expensive for a headlight.....

Next they tell me that the ball joints have too much play in them and they need to be replaced, they want $500 to do that, and something about a lower arm controller on the back, for $300, and by now all I hear is blah blah blah, I hand the phone to David....

I am scared to ask him what he told them to do....


Now I must say that this car runs great, gives us no problems and will last for years (i hope).

I just finished the filling for the eggrolls made from the blackeyed peas and collards. Boy the filling is really good. Course it could be the peas I made yesterday :rolleyes1. I didn't even add the bacon and cheese yet.

This week may be quiet and I can get back into the swing of posting again. This Christmas season just sent me for a loop. Even though my Dad and Stepmom have been gone for a while, it just hit me hard this year.:confused3

I will be breaking in the new cookwear by making fried pork chops, mashed potatoes/gravy and broccoli.

I also baked some Beer Bread from a Tastefully Simple party I went to a few weeks ago to go along with it.

Work was good. Our kids don't start back until tomorrow, and most of us spent the day catching up, so today was REALLY unproductive. :laughing:

I came home to warm chili ala UncleR! :cloud9: It was delicious, and just what I needed after a long, tired day and cold weather.

Janice- Sweetie, it is never okay. It is different, it is manageable, it is tucked away. It is never okay. :hug: I miss my Mom on the strangest days and for me it is not really the Holidays. I have been blue this year though but I think it is because I miss Mike. He used to haunt Costco and the Job Lot, rode a big Harley and was the sweetest man. i have been seeing him all over, in Costco, the Job Lot and on his bike. :sad1: Buddy is not commenting adn i cannto tell gail. She had a rough time.

Today is the last day of our break. I have no idea how Buddy will occupy himself but I have plenty of things I let go. We ate lunch late after coming home from the Rehab and a meeting with the lawyer for Alice. So far neither of us is hungry so i will cook the chicken I took out tomorrow and we will forage in the fridge when we want to eat.

Brandi - :scared1: I had one of those things a couple weeks ago. The car made this strange hissing noise that stopped when you put on the brakes. I wanted it checked out before we went to Las Vegas, $600+ later, the car was fine. :faint:

I just got back from the grocery store and decided we're having burgers and cole slaw for dinner. Our friend Arline went home today. Tomorrow my cleaninng lady is coming at 9AM and we're going to put the fininshing touches on the house. The cat Nazi is coming tomorrow night, so we find out if my sweetie Mac gets a pal to chase around the house!

Alan is a photographer with a television station here in Salt Lake. Because 2 of the GOP candidates have Utah ties, they sent Alan and a reporter to cover it.

Morning, everyone!

Yesterday was wonderful. The movie was great; I was surprised! I hadn't seen any of the other Mission Impossible movies and it was the most fun (movie-wise) I'd had in a long time, lol. Moreover, with the exception of the guy behind me kicking me every time I crossed his feet, the other theater-goers were great, too. You know, a good movie can be ruined by talkers and such. We lucked out yesterday, lol. We then went to Provino's, which was wonderful, as always. I had an epiphany while there.

I admit that I easily get distracted in public places. There were a few people around us with iPhones, a kid with a DS, etc. The light from things like that always catch my eye and like I said, I get distracted. My epiphany? Instead of getting annoyed with other people's electronics, why not make these romantic dinners at home? Scott is wanting to take some time, especially on the weekend, to work on his computer whatnot, and that would be a perfect opportunity to cook. Normally we go out on Saturdays before we get our groceries. I told Scott why don't we just get up a little earlier and go out for breakfast, go to Target and then go get our groceries. We will have more than enough time in the afternoon for him to study/work and for me to cook. Also, enough time for me to set a pretty table, complete with candles and such, without him knowing. Good idea, eh? I may make this a part of my New Years resolution.

I need to do some research on finding some special things to cook. You know, you can buy filet mignon at the grocery store cheaper than what you can get it for 1 at a nice restaurant, so I'm thinking steak may be on the list. I'm really inspired so I may take some time today to work on some menus. Good idea, you think?

Today I am making black bean soup and cornbread. It is currently 22 degrees and feels like 11. Woo hoo! I LOOOOOVE the cold, so it's great day for soup.

Lindsay- I used to make special dinners at home when the kids were young. WE did not have the money to go out to a fancy restaurant on special occasions but could afford to make a nice meal and celebrate at home. Hvave fun planning your romantic dinner!

Today is reality day. :dance3: I have a lot to catch up on, things are not the way I like them here and I get distracted if there is too much hanging around.

Good morning. I'm home sick. I gave this crap to UncleR as well, I think. I haven't decided if it's a sinus infection or some sort of cold or another ear infection that has decided to reappear. All I know is ugh. :guilty:

I have no idea what tonight's dinner will be, as neither of us are feeling much up to cooking.

I'd hug y'all, but I don't want to infect ya', so I'll just say have a good day! :lmao:
