Morning all! It's a VERY wet and rainy day here :umbrella:

I have no idea what I'm cooking today because we have to turn around and leave when Scott gets home today so he will probably have to scarf down a sandwich.

Morning, all! It's back to the real world, today. Kids go back to school, and they are not looking forward to it. I, on the other hand, am! Alan has the week off work, so he'll be home except when he has to go to class. We should be able to get a lot accomplished this week! Number one is to get the Christmas boxes out of the attic, so I can get some decorating done this week!

We are spending the evening at a neighbor's house tonight, so I guess dinner will be something easy before that. Not sure what, though. Not turkey, since we finished it all up last night! Guess I'll be heading to the store this morning. Off to the first page to get some ideas!

Good morning all, hope you all had a great Thanksgiving. We spent the week being as lazy as possible, and boy were we good at it by the end of the week! We had a small Thanksgiving dinner, just the 3 of us and my parents so it was pretty simple to put together.

White chicken chili for dinner and a BIG salad. We really need to get some veggies in to offset the beer and cookie dough we've been having for late night snacks! Have a great day all!

Dear lord, heading back to work after a week off is rough. :lmao: Anyways, good news is, only 14 work days left till Christmas vacation!!! :cool1::cool1:

Work was good. J had an orthodontist appt. after school so I swung by there and picked him up. Came home and I'm making a Neely's recipe...smothered pork chops from their new holiday cookbook. UncleR made potatoes au gratin to accompany the pork. I'll post pics and recipes later!

Smothered Pork Chops

This picture is horrible, I apologize. But this dinner was THE BOMB!!!

Ingredients:

4 pork chops, 1 inch thick, bone in
Kosher salt and freshly ground black pepper
1 cup all purpose flour
2 T onion powder
1 T garlic powder
1 tsp. cayenne
1 tsp. paprika
1/4 cup oil
6 green onions, thinly sliced
2 cups chicken broth
3/4 cup buttermilk
dash of tobasco
chopped parsley for garnish

Directions:

Pat chops dry and season with salt and pepper.

Combine the flour, onion powder, garlic powder, cayenne, paprika, salt and pepper on a rimmed plate. Dredge the chops through the mixture on both sides.

Heat a large skillet over medium heat, and coat with the oil. When the oil is hot, slip in the chops and fry on each side, about 5 mins. per side, until golden brown. Remove the chops to a plate and set aside.

Toss the green onions into the pan, and saute until fragrant, about 1 minute. Add 3 T of the seasoned flour (leftover from the dredging of the pork chops) to the skillet, and stir with a spoon until it makes a paste. Slowly whisk in the chicken broth, making sure there are no lumps. Turn up the heat and allow the chicken broth to reduce and thicken, occasionally stirring. Once the sauce coats the back of your spoon, pour in the buttermilk, add a dash of hot sauce and stir to combine.

Return the pork chops to the skillet and simmer for 15 more minutes until the chops are cooked through. Sprinkle with chopped parsley before serving.




I don't know what's in UncleR's au gratin potatoes, but they were delicious as well. She kept turning to me and saying: "You can make this again!" :lmao: These were SOOOOO delicious and flavorful. We're fat and happy tonight. :teeth:

That's one of the fun parts about my parents visiting. Fran doesn't really drink wine (at least while she is still sick). I have lots of nice wine in my cabinet, but I don't want to get it out and drink it by myself. :confused3 My parents are always happy to help out!

My parents went home today. My mom was so helpful, she did the dishes every night, loaded and ran the dishwasher. She cleaned out the microwave, even the air vents for the range hood! We made such wonderful and lavish meals while they were here, tonight dinner is going to be Stouffer's Mac n Cheese. I better put it in the oven since it has to bake for 75 minutes.
 

Food photo catch up time! Though first I have to tell you that what I thought was going to be an easy pizza dinner is turning into a bit of a fiasco! I think I have gotten so used to grilling my pizza and forgot about the smoke detectors blaring and all the smoke that comes from cooking pizza inside! I hope it will taste good anyway :headache:

Flavor and texture were good but I think I annoyed my Mom by bringing them to a family meal as rolls are her holiday thing. I won't be making that mistake again! :laughing:

Well we start driving to Vegas on the 21st, but we have to pick up our friend who is going with us on the 18th, so drive up the 18th (4 hours), get her and her cats drive down on the 19th. Rest on the 20th. Drive to Vegas on the 21st. I don't want to get involved in a countdown becuase now Fran is doubting her ability to go. But I guess it's 23 days. She should be able to recover in that time right??????

My mom has always been really cool. In the 80's she took us to see the Eagles, Elton John, Rod Stewart, and Journey in concert. It was once she hit her BeeGees phase that I questioned her coolness. :lmao:

I mean she is almost recovered. I think. :confused3


Becky - WOW! Those pictures are amazing! They look like they should be on the cover of a magazine. Your shots look like magazine quality and the food looks like restaurant quality! Can I come to dinner at your house? :lmao:

This is why I had to post a disclaimer with the picture. No, the sauce was a brown gravy. :lmao: My problem is that I most often take pictures with my phone so I can upload directly to FB. It's easier that way, but the pictures come out crappy. I'll try to be better and use my actual camera next time. :laughing:

Fingers crossed for Fran. I hope that you guys are able to go because I know you really need this getaway.

My mother...how can I describe her through her musical tastes...let's see...she's a lover of Barry Manilow, Gloria Estefan and Engelbert Humperdink. :confused3 :rotfl2: She is not cool.

After my mom leaves (she comes by on her way to work once a week and has coffee with me) I may go lay back down for a few minutes. Say a prayer for me, or send goodthoughts, if you don't mind.

Today I am making tacos. Comfort food at a time when I sure need it!

Morning, everyone! Well, looks like the tummy bug is going to go around us, again. Katie came down with it last night. I'm hopeful that not everyone will be affected this time! Keep your fingers crossed for us. She's really upset that she's missing school today, as it's her tough day. She has French, Geometry, Earth Systems and World Geography today. Yikes!

Dinner is up in the air, until I find out how everyone is feeling. I did find a recipe for ham and egg enchiladas that looks good to me! It's technically a breakfast recipe, but that's ok, right? We'll see.

Lindsay - I hope you feel better soon. Those infections are nothing to mess around with. Are you on antibiotics?

Jen - Dinner last night looked so good!!! I may have to try that for my family. Tell Uncle R that I need the au gratin recipe.

Glynis, you cannot catch a break with the sickness in your house lately! I guess it is that time of year. I know when we were kids my brother, Laura and I always seemed to be sick. It got so bad one year that my Mom permanently installed buckets next to our beds!

Here is the rest of the photos from last week. Roasted root vegetables that I served on Thanksgiving. I didn't get many pictures that day it was too crazy with everyone rushing around finishing dishes:

Egg-free apple cider donuts that I made for Liam as a substitute dessert for the egg-full cake I made for John's family birthday dinner on Saturday. He only got to eat one, because the sugar made him crazy hyper! I gave the rest to my inlaws on Sunday:

The cake, which was a toasted coconut topped coconut layer cake with chocolate ganache frosting. It was super sweet--tasted like a giant Mounds bar. Again my inlaws got the majority of this cake as they have large sweet tooths:

the stuff in the bowl is fresh ricotta with olive oil and pepper flakes. We spread it on grilled bread.

It's great being a football fan down here lately. With LSU sitting at #1 and the Saints peaking at the right time it's just crazy here. We've never had both teams enjoying success at the same time. Good times!

Hey y'all!

Work was good. After school was out, all of the special ed dept. met over at our main building to practice our routine for a video post card we're doing to the district. Our pod is doing a Thriller routine! :cool1: It was so fun!

Came home and made pancakes for dinner, but I misread the recipe in my hurried state and they came out sort of thin and light because I added extra milk. They were good though! :thumbsup2

Tomorrow is shopping day so I'm not sure what dinner will be yet, but something yummy I hope!

It's been cooooooold here. Down in the high 20's and low 30's overnight and then only warming to the mid 50's. I'm freezing!!! Someone send us warm weather!

Hope everyone goes into Wednesday with a good note and no illnesses!

I liked them fine, but when my mom got into them, she bought all their Australian releases. I had many of the US releases, but she bought every one that I didn't have. Every weekend for my final HS years the BeeGees played loudly on our stereo all day. I had since begun to hang with a Rock n Roll crowd. It was completely that, "I'm not bringing my friends over here and have you embarrass me! :rotfl2:

Glynis - :hug: So sorry you've had to go through all these tummy troubles.

Becky - again, everything looks so taste and beautifully presented.

Aimee - I totally understand, traffic here is awful from Daylight Savings time change until after Christmas. Hope you enjoyed the BBQ!
