Ah Hello...........Nebraska is even further. At least you can "almost" see it. And this seafood loving girl only can get frozen. But on the other hand we have the best corn fed beef. Pretty good trade off I guess.

Well no baby yet!! We saw them yesterday, Ethan wrestled in the State Tournament. He got 4th which was pretty darn good. We went to dinner after and I so enjoyed us all (except for Matthew) together. He called while we were eating so in a way he was there.

After dinner we went shopping for a bit and somehow we ended up in the baby section. We had a ball looking at all the darling little dresses with tutus and pink. I know I am setting myself up here, but oh how I want this baby to be a little girl. They have decided on Grayson Lucas for a boy and Lilian Rose for a girl. Lilian was my grandmothers name, so she would be named after her Great Great Grandmother. I think that is so neat. I promise I will let you all know as soon as I know.

Ellen- you can use this one. I think this is the one that I use. It is good. Some reviewers suggest cutting back on the sugar but I don't. Use good bread.


Baked Pineapple Casserole

"A bread and pineapple casserole that goes great with a ham dinner."
INGREDIENTS:
1/2 cup butter
1 cup white sugar
4 eggs
1 pinch ground cinnamon (optional)
1 pinch ground nutmeg (optional)
5 slices white bread, torn
1 (20 ounce) can crushed pineapple with
juice
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease a medium-sized casserole dish.
2. In a mixing bowl, cream together butter and sugar. Beat in eggs one at a time. Stir in cinnamon and nutmeg. Add bread and crushed pineapple into the mixture. Transfer mixture to the prepared baking dish.
3. Bake in the preheated oven until bubbly and lightly browned, about 60 minutes.

A Jack and Jill is common in our area and they run the gamut from huge pre wedding parties to couple showers. They are given by the wedding party, tickets are sold and there is generally a buffet with draft beer included with the ticket. Anyone can buy a ticket to the party. There are door prizes, raffles and sometimes games to raise money for the couple.

Last week we went to one that was okay, the food was good but it was crowded and the music was not very good. WE have been friends with the grooms father for over 30 years so we went, but normally we just would have bought tickets to support the couple. Buddy works with the groom.

Saturday the party was way different. We are good friends with the bride's parents and they have a large family. Most came so there was over 300 people there. It was more like a wedding and I know the ticket did not even cover the food. The meal was amazing and the DJ was a blast! The couple made a good amount on the raffles. The 50-50 was over 650 for the winner! The prizes were out of this world! The parents must have paid a lot for everything and I now I am wondering what the wedding will be like.

I hosted a J&J when Daniel got married but it was the old fashioned kind. No tickets sold, just an invitation with dinner and dancing. My family has to travel from just outside Boston so we decided instead of a shower this would be better.

Folks have strong opinions about how appropriate J&J's are but they are common in my neck of the woods and generally they are fun. Everyone can go so it gives folks a chance to celebrate the couple even if they are not going to be invited tot eh wedding.

Nancy - Your Easter menu sounds amazing, as always!!! Easter is pretty low key around here, so we don't go all out on food. We are having a barbecue/egg hunt on Saturday, so I'm getting ready for that, as well as Sunday's dinner.

I am so glad that you had a good time! Glynis- I have tried to have more laid back meals on Holidays but they tend to be more work for me. I don't understand why but they are.

I took out burgers for dinner.

I only have 3 more days of work this week! Friday is a vacation day!

We have a meeting with the nursing home staff today so Marisa is staying with the girls SH has a relay for life meeting this evening so no out to dinner for us. I have chicken breast so dinner will be chicken and something.

Morning, all. Well, my day, yesterday, changed drastically.

Timmy and I ran some errands, and came home for lunch. We had plans to go grocery shopping in the afternoon, but Timmy began throwing up so we had to change our plans. Poor little guy was so sick! From about 2:00 until 10:00 last night, he was miserable. Luckily, he is better this morning. You wouldn't think anything had been wrong!

So, dinner last night became whatever we could grab out of the freezer/fridge/pantry. So, tonight will be stroganoff sandwiches.

I'm hosting book club this week, so I'm cleaning the house, and making it all ready for Thursday night!

I jumped on this thread to see if I could get an idea for something to make for breakfast this morning. Now my head has exploded with all the good ideas on here. Congrats, now I am starving! lol

Well our nice and warm weather is gone gone gone. Real cloudy and overcast and the temp. is only in the low 60s. I just wish we would get some rain to go with this cloudy weather. We need it desperately.

Maybe with the swing in the barometric pressure we will have a baby today. She is being very selfish I think. Believe me she is SO miserable that she wants to meet this baby more than any of us.

Dinner last night was Subway's that Doug brought home. I was starved when I got home from Zumba and was so dissapointed when I walked in and the table wasn't set. But the little devil had these wonderful sandwiches in his hand with a little grin on his face. BRAT!!! I jumped in the shower real quick and we ate them in the Living Room watching The Voice.

WFDT ~ Creamed Chicken over biscuits, harvered beets and peach salad.

Tonight, it's Meatloaf:

Ingredients

2 bay leaves
1 teaspoon salt
1 teaspoon ground cayenne pepper
1 teaspoon ground black pepper
1/2 teaspoon ground white pepper
1/2 teaspoon ground cumin
1/2 teaspoon ground nutmeg
4 tablespoons butter
3/4 cup chopped onion
1/2 cup chopped green bell pepper
1/4 cup chopped green onions
4 cloves garlic, minced
1 tablespoon hot pepper sauce
1 tablespoon Worcestershire sauce
1/2 cup evaporated milk
1/2 cup ketchup
1 1/2 pounds ground beef
1/2 pound andouille sausage, casings removed
2 eggs, beaten
1 cup dried bread crumbs
Directions

In a small bowl, combine the bay leaves, salt, cayenne pepper, ground black pepper, ground white pepper, cumin, and nutmeg; set aside.
Melt the butter or margarine in a saucepan over medium heat. Add the onion, bell pepper, green onions, garlic, hot pepper sauce, Worcestershire sauce, and reserved seasoning mix. Saute until mixture starts sticking to the bottom of the pan, about 6 minutes. Stir in the milk and ketchup; continue cooking for 2 more minutes, stirring occasionally.
Remove vegetable mixture from heat, and allow to cool to room temperature. Place the beef and sausage in an ungreased 9x13 inch baking dish. Add the eggs, the vegetable mixture, and the bread crumbs. Remove the bay leaves. Mix well by hand, and form into a loaf about 1 1/2 inches high.
Bake uncovered at 350 degrees F (175 degrees C) for 25 minutes. Then raise heat to 400 degrees F (200 degrees C) and bake for another 35 minutes. Let stand for 5 minutes before serving.


Roasted Potatoes

Ingredients

2 pounds red potatoes, cut into quarters
2 tablespoons vegetable oil
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon dried rosemary, crushed
Directions

Preheat oven to 450 degrees F (250 degrees C).
Place potatoes in a large roasting pan and toss with oil, salt, pepper, and rosemary until evenly coated. Spread out potatoes in a single layer.
Bake in preheated oven for 20 minutes, stirring occasionally. Serve immediately

And I found this recipe, and I have been dying to make it, so tonight is the night! I have some asparagus from the farmers market. This is asparagus with lemon and ham:
Ingredients

2 tablespoons olive oil
2 ounces thinly sliced prosciutto ham, or any ham, roughly chopped or torn
1 pound fresh asparagus
1/4 cup water
1 clove garlic, thinly sliced
salt and ground black pepper to taste
1 juice of 1/2 a lemon
Directions

Heat oil in a skillet over medium-high heat. Stir in prosciutto and cook until crisp, about 3-4 minutes.
Place asparagus in the skillet, and toss gently until coated with oil.
Pour in water and cover with lid; cook for 1 minute.
Remove lid, stir in garlic and cook for 1 minute with lid on.
Remove lid and cook uncovered until the spears are still crisp but tender, about 2-3 minutes.
Season with salt and pepper to taste. Squeeze lemon juice over the top.

What a day!

The tornadoes in our area started in the area where I work. We were locked down off and on for a few hours here and there.

We are safe! But being in the hallway with a group of unruly middle schoolers (not my students) is not fun. :rolleyes:

Tonight for dinner we had chef salad. It was nice and refreshing!

We keep getting waves of storms, but I'm thankful we're safe. Of course, I'm thinking of the many people in our area that aren't as lucky as we are.

Morning! Busy day here!!! Lots of kid stuff to do and then I get to go to a baby shower for my niece!!! This is her first baby, and we're really hoping she makes it to her due date. Emily is epileptic, and the medication she takes to stop her seizures is affecting the baby's growth. Emily is 8 months pregnant, but the baby is only "measuring" about 3 pounds. It's got her doctor's concerned. If you've got any prayers left to spare, Emily and her daughter Olivia, could sure use them!!!!

Dinner tonight will be the meatloaf that Aimee posted on her blog a while ago. It looks so good, and I feel the need for comfort food!!!

LOL you are so right!! She did have Marty rub her ankles last night. That is also supposed to help it along.

Jen ~ I am so glad you and the family are all right. Jay is in Ft. Worth working on a Train. We were so worried about him, but he actually was in Mcalester OK on the outward leg so missed it all. So glad you all ore ok!!

No baby yet. She did have a dr. appt. this morning. She is dialated to 2 and 70% effaced, so I think (for what it's worth) that it won't be too long. If she hasn't had the baby by Friday they are going to induce. I so hope she has it before then. She really doesn't want to be in the hospital over Easter. I just don't see why if this baby hasn't come why they can't wait till Monday to induce. But again, I am just the Grandmother and what do I know - NOTHING!!!

On a good note - it is raining. Has rained all night and all day. One of those really nice slow, drenching rains that do so much good. I don't like gray cloudy weather unless it's raining, so I am a happy girl today. We need this SO bad.

WFDT ~ sirloin steaks (grilled it it's not raining, broiled if it is) baked potatoes and sliced tomatoes with steamed yellow squash.
