The What's For Dinner Thread - October'11 (recipe index in OP)

So now we are arriving at 7AM on December 4th and departing via DME at 10AM on Dec 12th. We can see the holiday decorations and hopefully enjoy some of the dining experiences we hoped for during out last trip. Unfortunately we will not be able to experience any of the Food & Wine experiences I had planned, we will have to wait for next year, but hey, at least I am going to get to WDW right? :confused3

The first part of December is actually my favorite time to go to WDW - I'm so glad y'all have dates rescheduled and a good plan in place!

How is her leg?

Becky, :worship: at the no oven. I lasted, like, 3 months maybe? My craving for brownies and cookies won out :laughing:



I'm going grocery shopping after work so hopefully I'll cook after that. If I have energy.
 
Ellen- I miss pumpkin patches, we don't have them around here. It's not as much fun going to the grocery store to pick out a pumpkin.

Becky- I just got Barilla no bake noodles this morning. One of my favorite things is to make manicotti with them. I saw it on American's Test kitchen, you just soften the noodles in hot water, fill them, and roll them up. So much easier than dealing with the tubes. We make a philly cheese steak pizza sometimes, that and bbq chicken are our favorites.

Nancy- I need to get back on the diet train too. I was doing so good and now the pants are getting snug again and I just don't feel as good as I do when I get lots of fruits and veggies.

Glynis- We made your recipe for pumpkin waffles you posted a year or two ago for dinner last night- still very tasty.

PIO- I saw the picture of your spoon, I definatly needed more sauce in my pad thai! I will try it again, more sauce and more oil.

Tonight we are having onion soup and chicken sausage sandwiches, I can't wait!
 
GLynis- I have no idea where he will be or when. Usually when someone leaves there is no mention but everyone loves Curtis :upsidedow
I thought of you this morning. We tried to turn on the heat last night and nothing :headache: By the morning we were both freezing. The furnace runs and we had hot water so what was up with that???? The repairman came out and it was a transformer ?? Anyway. I have a lot of sympathy for you and your crew. It is not that you need the heat on full time but it is so nice to take that chill off and then shut it down.

I'll keep an eye out for him!

Well, I think our furnace issues will be resolved either tomorrow or Wednesday. Alan found out that a cold front is moving in tonight, and by Wednesday we should have snow. The temps are not going to move any higher than 50 degrees for the rest of the week! We have gotten some good estimates, and he's promised me he'll make a decision today and get something scheduled! Cross your fingers!

Glynis, are you looking for a meat lasagna? My go to recipe has spinach and mushrooms in it. I don't know if that would be acceptable to your kids. One thing I like to do to make lasagna easier is to use the no-boil noodles. I really like Barilla brand.

Funny you should mention the noodles... that's the exact kind I picked up at the store this morning. I love the meatless lasagna, but the kids and Alan would rebel, so I'm going to try one with Italian sausage. I like the flavor of that rather than ground beef. Wish me luck! I've never been fond of the work entailed in making lasagna, so it's not something I've become really good at. However, in an attempt to heat the house, I'm willing to do it!
 
I am not liking being without my computer at home. pirate: I am really hating AT&T.

We are having leftovers I made chicken paprikash yesterday. I needed comfort food.

The good part of no computer is that my house is clean. Yesterday I cleaned my computer desk and found 2 gift cards :confused3.

Once my computer is back I'll post a few recipes that I made for Saturday's Spanish night.

Fran is recovering, the wound is starting to heal up nicely, but she's not doing so good. I guess she is resting, but she mostly sleeps, can't even stay awake to eat. I made summer salad (will post later) and I gave her a bowl of it, she kept falling asleep as she was trying to eat it. She's been in her recliner for about 2 1/2 hours and has been asleep moaning and groaning as she breathes.

It's been five hours since her last morphine, so I better go wake her to take a pill.

Aimee- Donny's condo needs to have the AC repaired. he is planning on renting it and I think Buddy's cousin's Uncle is taking it. Donny told me that he was okay without AC but he could not leave an elderly man in the heat. This poor guy has it tough. His wife is suffering from Alzheimer's and his income has been shattered. He has to walk away from his home and is devastated. DOnny is taking a loss but he thinks it is worth it to have someone he trusts in there.

ALison- Poor Fran :grouphug: That infection is knocking her sox off! If you wan tto cook with ground turkey make sure you ramp up the seasoning. It is bland and takes a lot more to make it flavorful\


Dinner is a teriyaki ham and veggie stir fry. I also fired cabbage but no bacon or onions :sad1::sad1::sad1:. I kept a lot of ham separate so Buddy will eat it. He can have it with the sweet potato.
 
We had Cool Ranch Taco Salad-

1 Lb. taco seasoned ground beef(according to seasoning packet) cooled

1 head iceburg lettuce cut however you like it for a salad(I like shredded...DH likes bigger pieces)

Tomato,pickled jalapeno, red onion chopped

Sliced black olives

Shredded cheese

Ranch dressing

Cool Ranch Doritoes slightly crushed

Mix ingredients to your liking.

**You really can make the salad however you want. I don't like the chips...everyone else I know does...They don't like the peppers I do...I prefer lightly dressed salads...See where I'm going wth this?;)
 
Hey, I'm going to be in Dallas in September for the Lesbian and Gay Band Association Conference somewhere arund the 16th, so we shoudl sort of schedule too so we know if we'll meet up before, after or during!

Thanks everyone for your wonderful wishes!!!!!! I couldn't keep track and quote them all because I'm just reeling from today. We canceled and booked so many vacations in about three hours that I don't know what to think!

Originally we canceled our trip and got the most amazing pixiedust! They put our points back into regular points instead of holding points, it was a one time courtesy thing. Not that we will do this often or hopefully ever again!

We tried for Aulani and they had availability in January, but our airfare was only good for Orlando. We would have had to pay a lot of money to get our Frequent Flyer miles back in our account and then pay a lot more for airfare to Hawaii. Since we could just move our trip to Orlando and they had SSR availability for early December, we took that. I had planned to go to WDW in December next year and F&W this year, we'll just flip the two.

Thanks for all the well wishes for Kady. I don't know how kids bounce back, but they do!! Friday I was forced to see Paranormal Activity 3. I tried to say I couldnt go with a sick kid, but somehow my brother called Nan and asked her to watch Kady. So Kady relaxed with Nana and Pa, and I was scared throughout the whole movie!!:scared1::eek::sad1:

Saturday was a beautiful fall day so we went to pick apples. I didn't want to overdo it with Kady so we went home after and rested. I had a coupon for Aeropostale and wanted to use it to get her some hoodies, so later on we went out and got her new hoodies, sweatpants, and socks. I love when they have sales!!!

I am not adjusting to the cold temps very well. I really wish we had a few more weeks of warm, but I guess not.....

Yes, I grill them. My oven is still broken. It's been 10 months now :eek: I have enjoyed the time using other devices to cook but now I have to get serious and replace the oven. Thanksgiving is coming and my Mom and sister are starting to issue threats. :laughing:

I can't believe you do all of your cooking through grilling! :scared1: I bow to your powers. :worship:

Jen ~ your Texas sheet cake looked wonderful - to die for actually. WOW!!

WFDT ~ Roast beef (made in the crock pot - it has cranberry sauce in it - if it's good I will post the recipe), mashed potatoes, roasted brussel sprouts and home made biscuits with my newly canned apple butter.

It was ahhhhhhmazing. It'll make ya' roll your eyes back in your head.

I hate chocolate but this doesn't taste like chocolate because of the cinnamon. It's sort of praline-esque.

Fran is recovering, the wound is starting to heal up nicely, but she's not doing so good. I guess she is resting, but she mostly sleeps, can't even stay awake to eat. I made summer salad (will post later) and I gave her a bowl of it, she kept falling asleep as she was trying to eat it. She's been in her recliner for about 2 1/2 hours and has been asleep moaning and groaning as she breathes.

It's been five hours since her last morphine, so I better go wake her to take a pill.

We had Cool Ranch Taco Salad-

1 Lb. taco seasoned ground beef(according to seasoning packet) cooled

1 head iceburg lettuce cut however you like it for a salad(I like shredded...DH likes bigger pieces)

Tomato,pickled jalapeno, red onion chopped

Sliced black olives

Shredded cheese

Ranch dressing

Cool Ranch Doritoes slightly crushed

Mix ingredients to your liking.

So, I got up this morning to a dense fog advisory. It's still dark when I leave for work and visibility was near zero this morning. People were going about 35 on the highway. :scared1: I did make it to work (thankfully) and the fog stuck around until about noon. And then it burned off and got up to almost 90! :faint: Thursday it's only supposed to be about 60 with lows in the 40's. :headache:

Work was long and then I went grocery shopping. Now I'm exhausted. In fact, I'm so tired that I accidentally just typed excited instead of exhausted back there. :lmao:

Tonight's dinner was hamburgers ala UncleR (she makes the best burgers) and a new dip recipe for chips. It's YUMMY!

Mexicorn Dip

2 cans (11 Oz. Can) Mexicorn, Drained
1 can (4 Oz. Can) Chopped Green Chiles
1 whole Bell Pepper, Chopped
3 whole Green Onions, Chopped
2 whole Jalapenos, Chopped (without Seeds)
8 ounces, weight Shredded Cheddar Cheese
1 cup Sour Cream
1 cup Mayonnaise

Mix all of the above ingredients together and scoop with any chip your heart desires.

And let me tell ya' ladies...oh. mah. gawd. it's good!

Well I can't find anything online, but we'll be there around September 13-16 if memory serves me correctly. We will probably come in a little earlier to do some sightseeing, plus I want to eat at a Steakhouse in Ft. Worth where I had the best steak almost ever!

I notice your recipies do have quite a Texas slant to them! That would be fun!

I hope she gets up and going, but I'm guessing that she is doing some serious healing right now. I'm going to slow down on her morphine though...
 
Summer Salad


My Starting ingredients

There are no real quantities for this recipe, in fact I didn't use all the cucumbers or tomatoes or the onion. I just get my bowl and keep going until it's full.

4-5 Cucumbers
6-7 tomatoes
1 red onion
salt & pepper
Cider Vinegar
Canola (or vegetable) oil

Peel and slice cucumbers (I always start off with 2). Place in bowl and sprinkle with salt and pepper.

Cut up 2-3 tomatoes, slice red onion thinly, sprinkle with salt and pepper.

Repeat until the bowl is full. Pour about 1-2 tablespoons of the oil and the vinegar throughout the bowl. Using your god given utensils mix until the vegetables are coated and well mixed. Taste. I like mine a little tangier, so I usually end up adding a little more vinegar to the mixture. Voila!

After my surgery, I was prescribed some pain pills. I'm not the best with meds, and only used them for a few days. Then, my tooth went bad a few weeks back and I had to take a pain pill. I felt drunk for an entire 24 hours on just one pill! :scared1: And I worked with children like that. :guilty: I can't do it unless I'm home, so I understand EXACTLY what you mean by backing down on the meds. I hope she can heal AND be pain-free.

One of my very favorite salads ever! :cloud9:

Another favorite is avocado, tomato, red onion, and italian dressing.
 
Turkey and Dumplings

My starting ingredients

Here is a great way to use up leftover poultry. I have a little. :rolleyes1

For the gravy:
2 cans cream of chicken soup
1/2 cup milk
1 cup cooked Turkey
1 cup frozen carrots, corn & green beans
1/2 - 1 cup chicken stock

For the Dumplings:
1 cup Bisquick
1/3 cup milk

Chop turkey into bite sized pieces. I like to chop the frozen carrots into smaller pieces.

Mix all the ingredients for the gravy in one pot.

Meanwhile, mix the biscuit dough.

Drop the dough into the gravy in spoonfuls, cover pot and simmer for 10 minutes.

Glad that the wound is healing. As for the sleeping, blame it on the morphine. It makes me so sleepy, and a bit sick to my stomach, as well. I hate taking it.

I love meals that you can tweak to each individual's taste! Makes a mom's job so much easier!

Perhaps they scheduled the conference to coincide the Dallas Pride.

The restaurant is Del Frisco's. I know it's a chain, but we ate at the one in Ft. Worth and it was awesome! We went to the one in Vegas last January and it did not disappoint! There's one in Dallas, but it didn't get nearly as good of reviews as the Ft. Worth restaurant. Coming from So Cal that's not much of a drive for us.

Last time we were in Texas she was hospitalized with pneumonia the day we were supposed to fly out. We stayed an extra 6 days, she was at Arlington Medical Center, not fun, but she is willing to go back. To Texas, hopefluly not the hospital.

She will never be pain free. Normally she takes percosett and norco to control her arthritis pain. That's why she needs the morphine for even more acute pain. Her normal pain maintenance meds would knock most people off their rocker!!!!! When I have a pain-related problem that's really bad, I take half of one of her pills and that kicks my butt!
