Jen- I am so upset for Buddy. His Mom is the poster woman for horrible mother. Her entire family is estranged from either her or each other :sad1: I am feeling snarky lately and just posted on a MIL bashing thread and I figure if I can treat this woman with courtesy and respect then I have a hard time understanding that one! Anyway, Buddy is going to talk to a lawyer to see what he is able to do if he needs to step in. WE tried to get his Mom to at least give him POA so that he could protect her and make sure that his nephew could visit but she changed her mind and left things the way they were in order "to give Cathy one more chance." Well, she had the stroke and it triggered he dementia. Sometimes she is fine and others not so much. Cathy needed to remove the phones because she kept calling the police to rescue a baby that was crying. The night aide quit when she called the police to complain the girl would not let her go out to find the crying child. Now things are the way they are so we'll see.

You know what? I don't think it's snarky at all to vent sometimes about situations that really stink. :hug:

I used to work at an acute care rehab center on the brain injury team. Essentially, I got all of the stroke patients that had dementia, and I know exactly what that entails. So, double :hug: at that too.

And for anyone who's wondering, dinner kicked butt and the fried cabbage was lovely.

Why yes, yes I do!

Buffalo Chicken Dip

1 (10 ounce) can chunk chicken, drained
1 (8 ounce) package cream cheese, softened
1/2 cup Ranch dressing
1/2 cup Buffalo wing sauce (such as Frank's Red Hot, not to be confused with their pepper sauce. Start with less if you want and add more to your desired hotness.)
3/4 cup shredded Cheddar cheese

blue cheese crumbles (optional)


Heat chicken and Buffalo sauce in a skillet over medium heat, until heated through. Make sure to break up the chicken so there are no big chunks. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in shredded cheese. Pour into a shallow dish or pie pan and sprinkle with blue cheese crumbles and microwave it until the cheese melts. We usually only sprinkle blue cheese on half of it for those who aren’t blue cheese fans. Serve with chips for dipping.



*I leave off the blue cheese.

Ingredients
1 lb of shredded cooked chicken breasts

Cook at 350°F for about 30 minutes. If you are making only half of this, a 2 quart dish will work.

Reviews suggest changing the ranch dressing for blue cheese and perhaps adding blue cheese crumbles. SOme skip the cheese on top becasue it gets hard

tortilla chips (for dipping) or crackers (for dipping) or raw vegetables ( for dipping)
Directions
Cream the cheese and ranch dressing.
Add celery.
Set aside.
In skillet, saute hot sauce and chicken.
Stir chicken mixture into cream cheese mixture.
Spoon into a 9 inch pie plate and cover with cheddar cheese.
Bake at 350 for 30- 35 minutes.
Serve warm with tortilla chips, crackers, or cut up raw veggies.

The first one is the one I think I was watching an old friend make...we've lost touch so I can't ask her.
 

OK, I was trying to respond to everyone's stuff, but it's too awful that I can't deal. We have to cancel our WDW trip. I posted pictures of Fran's leg on my PTR and the responses I've gotten make me feel better becuase I should not make someone in this condition and pain get on a plane.

But it's still hard dealing with the fact that we have to cancel a trip I've been looking forward to for over a year. I guess now we'll have a two years to plan. I just hope nothing happens to this trip or I'll think that I'll truly give up on PTRs!

Hi, all! Just popping in really quick to say good morning! For those of you who pray, say one for me at 8:30 and 11:00 this morning. I need all the help I can get! For those of you who don't, just think of me :) I'd appreciate it!

How did it go?

You get yourself a head of cabbage and shred it. Dice up about 6 slices of bacon and fry them crisp, like bacon bits. Then fry the shredded cabbage in the bacon grease (you can pour some grease off if the bacon gives off a bunch) with some salt and pepper. Sometimes I add some garlic or onion powder. Taste and make sure your seasoning is to your liking and fry the cabbage until just tender. You don't want it too soft but not crunchy. Add the bacon bits back in and toss. Serve to your family. If they don't like cabbage, then there's more for you.

It is yummy. And healthy. Ignore the bacon grease and bacon. :rolleyes1

Man, I love fried cabbage. Sadly, cabbage HATES me so I can rarely eat it. I may try it soon just to test the waters again...

My recipe is basically the same as posted, but I adapted it for a small crockpot -

Buffalo Chicken Dip, aka Crack Dip
2 boneless/skinless chicken breasts, cooked and shredded
2 (8 ounce) packets cream cheese
3/4 cup hot sauce (like Frank's)
1 cup ranch dressing
2 cups mild cheddar cheese (I used sharp)
Dipping utensil - we used tortilla chips

Put the cream cheese, hot sauce, ranch, chicken, and cheese into a crockpot. Mix as much as you can, turn on high so it can start to meld together. Stir again, once it begins to bubble, and turn to low. It'll take 45 minutes-1 hour to be ready.

Oh - and I don't like canned chicken so I threw two breasts on the grill and just shredded the meat. You can sub in canned or even just rotisserie chicken.

We call it crack dip for a reason.






Man alive, what a weekend. There was a street festival all afternoon that our church is participating in so I left immediately after worship and went there until almost 5pm. Then, picked up Ace (anyone remember the shelter pup we fostered a couple of years ago?) bc we are dogsitting for my brother for a few days.

Got him home - tired and ready for a shower (it's hot today!) - and he and Winston decide to get into it not once but five times I had to break up a dog fight. Ridic.

Now I'm supposed to be helping serve at a dinner but I'm crying mercy and staying home. I'm so tired.
 
Glynis- I lost the post when I responded to you earlier this week. I wish we could have heard you and Alan sing, it must have been a lovely way to pay honor to someone you both held dear. I have to tell you that I was thinking of you this morning. One of my favorite weathermen (DH thinks I am a freak......I think he is the cutest!) was on the air for the last time this morning. He is taking a job in SLC and I am going to miss him. If you see Curtis Grevenitz on the air please smile at him for me. He is that nice!!!!!!!!!!!!!

I will certainly keep an eye out for him. Do you happen to know what station or affiliate he will be working for? No biggie, we only have 4 local channels, so it won't be hard to look for him!
 
So dinner is leftovers from last night for me and Buddy is having wings in front of the TV. WE got a disturbing call from his mom. They have that rocky relationship and the last time we went to help Buddy had to tell her he was not a yo-yo so she needed to either give him the tools to help her or his hands would be tied. His sister came any and it was very unpleasant, he told me not to go without him. Anyway, no contact, no news but his nephew told him she had aides caring for her and that he was not going back.....Buddy's sister made it impossible for him as well. Long story short, we went over and I have no idea how this is going to turn out. I will visit because I would not be alone but Buddy thinks I need to wait until he is there, sister is loaded for bear lately according to the aide.

So we broke open a bottle of wine and now Buddy made a face at his wings. Oh well..................he will get over it, he is having some wine and he never has any if he is working the following day.

In the morning, Alan and I went to a funeral for one of Alan's "great-uncle's". He was married to Alan's mother's best friend. It was a really nice funeral, and Alan and a brother were asked to sing (I ended up accompanying them). Once that was done, we came home to find that the kids had actually listened and obeyed, and cleaned the house from "corner to corner!" So, we decided a nice reward was in order. Our first stop was at a local artist's studio, so Jacob could complete one of his requirements for a Scout merit badge. It was great fun to see how the sculptor works from beginning to end on a piece. After that, we drove to Salt Lake City to a small shopping area that goes all out for Halloween. While there we did a "tour" of the witches homes, learned how to dance like a witch, attended a witchy cooking class, buried a few plastic cockroaches, and went on a witchy scavenger hunt. The kids had a great time. We were going to treat ourselves to some fudge and caramel apples, but the line at the candy store was at least 40 minutes long. Yikes!!! Instead, we told the kids we'd take them to a movie. We drove through a hamburger stand for dinner, and then took the kids to see Harry Potter 7.2. It was a ton of fun!

Today has just been a relaxing kind of day. We went to church, and have just been relaxing ever since. Jacob helped me make a loaf of banana bread, and it is smelling heavenly! I didn't have any nuts on hand, so this is a plainer loaf than I normally make. Dinner tonight will be breakfast for dinner. Pancakes (apple cider pancakes with cinnamon sugar on top), and Alan will make cheese and tomato omelets to go along with them.



Princess - Your dinners make me ashamed! They always look so amazing! I wish Australia was closer so I could pop in for dinner some night!


You're right! It sounds like a full day! If Oz was closer, you could definitely pop in for dinner and I could hear Alan (and you) sing! And I only the post the dinners that are porn worthy. You should see the scrappy meals we have during the week!

How were the Apple Cider pancakes? Do you use the same mix consistency as per donuts? I really liked the taste of those donuts and DS did too. And there was so little fat in it that we were all happy with it.

Went to my DN's party today at the American Girl store. Really nice but $$$$$.:scared1: I put pictures up on FB.

They serve lunch which consists of an appetizer, main dish, pink lemonade and ice cream and cake. The girls got to make a craft, a no sew fleece blanket for their dolls, and got a goodie bag with a doll "balloon", a book and a doll t-shirt. The birthday girl got a crown and all of the dolls did too.

I had artichoke dip with pita and a really nice Teriyaki Salmon with Asian Slaw on rice.

Not just a Texas specialty. My dad spent 5 years in England in his youth. He ate this a LOT there.....came home and made mum make it for us on the odd occasion or every week. I use MORE BACON to cabbage. You can never have enough bacon.

Thanks everyone for your wonderful wishes!!!!!! I couldn't keep track and quote them all because I'm just reeling from today. We canceled and booked so many vacations in about three hours that I don't know what to think!

Originally we canceled our trip and got the most amazing pixiedust! They put our points back into regular points instead of holding points, it was a one time courtesy thing. Not that we will do this often or hopefully ever again!

We tried for Aulani and they had availability in January, but our airfare was only good for Orlando. We would have had to pay a lot of money to get our Frequent Flyer miles back in our account and then pay a lot more for airfare to Hawaii. Since we could just move our trip to Orlando and they had SSR availability for early December, we took that. I had planned to go to WDW in December next year and F&W this year, we'll just flip the two.

So now we are arriving at 7AM on December 4th and departing via DME at 10AM on Dec 12th. We can see the holiday decorations and hopefully enjoy some of the dining experiences we hoped for during out last trip. Unfortunately we will not be able to experience any of the Food & Wine experiences I had planned, we will have to wait for next year, but hey, at least I am going to get to WDW right? :confused3
 
Alison - Glad you worked it out. Sounds like you did get the pixie magic with your points and a good result with christmas this year and F&W for 2012 (AND 2013).



WFDT? DS and I are having Peking Duck. DH asked for rice congee/porridge to help settle his tummy a bit more. So, it was the perfect opportunity to break out that Luv-a-Duck packaging!

I ended up not making the pancakes. Jacob and I made some banana bread, and I fell asleep while it was in the oven. I woke up groggy and grumpy and didn't want to do any more baking, so I just turned the banana bread into French toast while Alan made eggs. It turned out so yummy, it will be hard to go back to regular French toast.

I'm planning on making the pancakes for the kids breakfast one day this week, so I'll let you know how it goes.

I am forgetting a bunch of stuff...what else is new.

And the runaway hot pizza of the day, a Philadelhpia Cheesesteak pizza! I made it as a joke since my Dad is from Philly and cheesesteaks are another of his favorite foods. I figured combining two favorites into one meal was pretty savvy. Even my Mom loved this, and she hates pizza!

WFD: baked spaetzle with beet greens, carmelized onions, and emmenthaler, roasted beets, chicken apple sausage for me and knockwurst for John.
 
Good Morning everyone... Tonight's dinner will be Turkey and Blue Cheese Meatballs over pasta with a light olive oil and herb drizzle.

4 cloves garlic
1/2 onion, cut into chunks
2 jalapeno peppers, halved and seeded
1 pound ground turkey
3 tablespoons blue cheese
1/2 cup bread crumbs
3 egg whites
3 tablespoons olive oil
1 1/2 tablespoons soy sauce
1 tablespoon dried parsley
1 tablespoon Italian seasoning
1 tablespoon ground black pepper
1 teaspoon chili powder


Directions

1. Preheat oven to 400 degrees F (200 degrees C). Line a rimmed baking sheet with aluminum foil and set aside.
2. Pulse garlic cloves in a food processor until minced. Add onion and jalapeno, and pulse until minced again. Scrape the onion mixture into a large bowl along with the turkey, blue cheese, bread crumbs, egg whites, and olive oil. Season with soy sauce, dried parsley, Italian seasoning, pepper, and chili powder. Mix well.
3. Roll the mixture into 2 inch balls, and place onto prepared baking sheet. Bake in preheated oven until golden brown, and no longer pink in the center, about 25 minutes.

Thanks for all the well wishes for Kady. I don't know how kids bounce back, but they do!! Friday I was forced to see Paranormal Activity 3. I tried to say I couldnt go with a sick kid, but somehow my brother called Nan and asked her to watch Kady. So Kady relaxed with Nana and Pa, and I was scared throughout the whole movie!!:scared1::eek::sad1:

Saturday was a beautiful fall day so we went to pick apples. I didn't want to overdo it with Kady so we went home after and rested. I had a coupon for Aeropostale and wanted to use it to get her some hoodies, so later on we went out and got her new hoodies, sweatpants, and socks. I love when they have sales!!!

I am not adjusting to the cold temps very well. I really wish we had a few more weeks of warm, but I guess not.....

Allison - Hooray for the World at Christmas!!! That is a dream of mine. Unfortunately, with my Disney apathetic husband, I don't think that will happen. I'll have to live through you all!

Risa - The bread recipe was so easy! Jacob really did it all himself with me just supervising. I'll post it in a minute. Glad to hear that Kady is doing better!

Becky - Those pizzas look amazing! Alan's grill bit the dust this fall, and we're looking to replace it in the Spring. Once we get one that's a bit more predictable, I may get brave enough to try grilling the dough! You just always inspire me!

No idea on dinner tonight. It's supposed to get really cold here, and with our furnace out, I'm thinking I ought to bake something that will heat up the house! Maybe a lasagna. Anyone got a good, easy recipe?
 
Here's the banana bread recipe we used:

Banana Bread
Simply Recipes

3 or 4 ripe bananas, smashed
1/3 C. melted butter
1 C. sugar (can easily be reduced to 3/4 cup)
1 egg, beaten
1 tsp. vanilla
1 tsp. baking soda
Pinch of salt
1 1/2 C. all-purpose flour

Preheat the oven to 350 degrees. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4 X 8-loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.


This was incredibly yummy, and so easy that Jacob is convinced he's the world's best baker! It made delicious French toast!!! I only wish I'd had more bananas so that I could have made a double batch!
 
Allison- I love love love WDW during the Christmas Holidays! My most favorite time to visit there. I am going to be thinking of you all there this year :goodvibes while you are enjoying the decorations and shows that are all over the World.

I thought of you this morning. We tried to turn on the heat last night and nothing :headache: By the morning we were both freezing. The furnace runs and we had hot water so what was up with that???? The repairman came out and it was a transformer ?? Anyway. I have a lot of sympathy for you and your crew. It is not that you need the heat on full time but it is so nice to take that chill off and then shut it down.

Dinner is a baked ham with a sweet potato for Buddy, steamed veggies of some kind and salad. Yes.....back on the diet train!

Yes, I grill them. My oven is still broken. It's been 10 months now :eek: I have enjoyed the time using other devices to cook but now I have to get serious and replace the oven. Thanksgiving is coming and my Mom and sister are starting to issue threats. :laughing:

Glynis, are you looking for a meat lasagna? My go to recipe has spinach and mushrooms in it. I don't know if that would be acceptable to your kids. One thing I like to do to make lasagna easier is to use the no-boil noodles. I really like Barilla brand.

Alison ~ I am so sorry that you had to cancel your trip but even more worried about Fran. I sure hope she is on the mend. WDW will always be there so for now you need to concentrate on getting Fran better.

Becky ~ Those pizzas look A M A Z I N G!!!! We had homemade pizza last night and they were so good but looked NOTHING like yours. :worship:

Busy day again - What's new!! But I just had to come in and at least touch base with all of you.

WFDT ~ Roast beef (made in the crock pot - it has cranberry sauce in it - if it's good I will post the recipe), mashed potatoes, roasted brussel sprouts and home made biscuits with my newly canned apple butter.
