What are Bacon Tomato Squares? that sounds really good!

Here's a toast to all with a day from He!!, I am so tired, at first I was promised a steak dinner out, and then I had to cook my own steak dinner! Oh well, I probably make it better anyways!

We DID rent the apartment!!!!! or should I say Home, it is part of a duplex and not a complex.

Hellooooooooooooo! Sorry I've been MIA. I've been under the weather the past few days and haven't posted. I'm back now!

We are having leftover chicken pot pie today.

I could swear I posted here yesterday. :confused:

Busy weekend and busy week ahead. Too much to do and not enough time.

I have two costumes to make for my godson for his play this week and his DM just got me the stuff yesterday. :scared1: Luckily they are easy to make although the vest I worked on last night just about did me in. :rotfl: The pattern called for it to be two sided and I decided that I would make it one sided. It is for Alladin so it really doesn't need to be fancy. Then I realized that I had to have a neater way to do the edges around the neck and arms. Figured it out but it took more time than I thought and I was covered in little purple threads by the time I was done.

Dinner tonight will be salmon and I am making my second attempt at using my rice cooker.

It's Tuesday! And paperwork day!

Our computers were down off and on all day long so it made getting paperwork done a hassle. :headache: More paperwork for me tomorrow! :rolleyes:

I came home and made smoky mac and cheese for dinner and it was SOOOO yummy. It's one of our favorite meals.

It's absolutely beautiful here in Central Texas right now. In the 70's. :lovestruc

We have beautiful weather as well! Tomorrow is supposed to be nearly 80. I'm hoping to get a long run in.

Tonight we're having chicken and quinoa with red bell peppers and onions. We'll have a mixed green salad too.

Well....I'm up to a weight loss of 2.9 kgs or slightly over 6 lbs. I still have another 7 kgs to go; but I'm well on target to lose 5 kgs before the end of March and then as much as possible before the end of June. :thumbsup2

Still not much food porn from me because we're really eating simple meals...but I hope to do better food (and within the WW points plan) at the weekends again.

Ash Wednesday starts today and Lent so this is a very busy time for me. I am starting/leading a 6 week Bible study starting tonight called "Chocolate for Lent" I have never led one before so I am a bit nervous. I have been busy getting everything set - it is based on the Movie, "Chocolat" with Johnny Dep. I have about 25 people coming so wish me luck.

WFDT ~ Pizza - YUCK!!! But that is what the Worship Committee is serving before services.

Morning, all! It's so beautiful here, and our temperatures are supposed to soar into the 50's! Of course, they'll drop into the 30's for tomorrow, but I'm going to enjoy the warmth while I can!

The cheeseburger pie was a lot of fun. Very easy too!

First of all use crescent rolls for the crust of the pie. Just press the dough into your pie plate. Brown a pound of hamburger and drain well. Add 1 teaspoon onion powder, 1/3 cup finely chopped dill pickle, 2 tablespoons ketchup, and 1 teaspoon yellow mustard. Cook that for about a minute. Then, sprinkle 2 tablespoons flour over the top. Also add 2 tablespoons of dill pickle juice and 2 tablespoons milk. Cook and stir until thickened and bubbly. Remove from heat and add 1 cup shredded sharp cheddar cheese. Pour into the crust and bake for 15 minutes or until crust is golden brown.

Remove from the oven and top with another cup of shredded cheese. Let stand until the cheese melts. Serve with extra pickles, ketchup and mustard.

My kids loved this! Every single one of them ate at least one slice. I really should have made 2 pies. Oh well. I'll know next time!

Dinner tonight will be barbecued chicken salad.

This was a pampered Chef recipe. It originally called for flakey biscuits so that is what I use. I used to make it during football games or on Race days.


"Like a BLT on a storebought pizza crust, this quick-fix treat couples bacon with basil, tomato and, yes, mayonnaise."
INGREDIENTS:
6 slices bacon
1/3 cup chopped green bell pepper
1/3 cup chopped onion
4 roma (plum) tomatoes, seeded and
chopped
1 teaspoon dried basil
2 tablespoons mayonnaise
1 clove crushed garlic
1 refrigerated pizza crust dough
3/4 cup shredded Swiss cheese
DIRECTIONS:
1. Preheat oven 375 degrees F (190 degrees C).
2. Place bacon in a large skillet over medium heat. Fry bacon until crisp. Drain on paper towels.
3. Crumble bacon into a medium-size mixing bowl. Mix in bell pepper, tomatoes, and basil. In a separate small bowl, combine mayonnaise and garlic.
4. Roll pizza crust into a 12x15 inch rectangular baking sheet. Spread the mayonnaise mixture evenly over the crust. Sprinkle the bacon mixture over the mayonnaise, and top the entire pizza with cheese.
5. Bake 18 to 20 minutes or until the top is bubbly and the crust is golden brown. Cool and cut the pizza into 24 squares.

Last night Buddy and I got in late from visiting his mom so we had leftovers.

I am not sure about dinner tonight, I am so sick! Not really, but I made a huge mistake today and I am literally sick over it. You know I watch my two girls and love every minute but I have been very nervous about it. Welby worries and that has me :dance3: which is not like me. Anyway, I took them to the Dr today, got their meds, fed them lunch and gave Nola a teaspoon of Rylees med. I have never done anything like this and I have been watching kids since i was 14.
I called the Dr and all is okay but I have to talk to her tonight. Buddy thinks I have to tell her that her nerves are having a bad effect on me and he is right. This is not her fault, but I am all upside down every day lately.
 
Oh, Nancy! You have so much on your plate right now. Not only the girls, but dealing with Buddy's mom, too. Don't get too hard on yourself. Mistakes happen, and you heard the doctor. You are a good caretaker! Did you hear that? YOU ARE A GOOD CARETAKER! Don't let this shake your confidence!
 
Hi everyone! I am back from vacation. I did no cooking at all the entire trip! John and I are going to be eating nothing but yogurt, quinoa, and barley for a couple of weeks to make up for all of that restaurant food!

I need to catch up on what's been going on, but wanted to pop in and say hi.

Sorry if I forgot anyone, I woke up in the middle of the night with a scratchy throat, woozy head and just not generally feeling good. I've been ODing on Vitamin C today and taking it easy. I told Fran I was NOT going to go planting things at the house we just rented, so she and the cleaning lady (well she's pretty much a jack of all tasks, she'll do whatever cleaning, yard work, etc that we pay her for) are going to do it while I play :sick:.

Boy, it's quiet around here, lately! I hope everyone is alright.

The wind howled all night, and kept me up. Weird! I don't usually hear the wind, but this was really loud! I guess a storm front is blowing in.

Timmy is going to the junior high today. My neighbor's son is in a class where they have to bring a pre-school child and observe them for an hour. Should be interesting. Considering that Timmy screams bloody murder when I'm not with him, I'm really crossing my fingers that this works. I don't know, though. I've promised him lunch at McDonald's if he doesn't cry, so cross your fingers, please!

Dinner last night was really good. Just a simple bbq chicken salad, but it really hit the spot! Tonight we are having tortellini sausage soup. Should taste good with the weather being so cold and grey!

Thank you Glynis. I talked to Brian and he said that Welby seems to be feeling out of control lately and I agree. I talked to her and let her know how her anxiety was affecting me. I think it is going to be better.

It will be fine today. I remember whe I needed to start taking Kady to pre-preschool. She was hysterical but loved it once she got there. This went on for some time and I remember telling Risa I needed combat pay. I never left, she knew that and I peeked in a few minutes after the door was closed. She was always fine.

It blew all the way to Nebraska. :rotfl2: We are under a severe wind advisory - 35 -55 mph winds. :scared1: I don't like the wind at all. Makes me feel like a caged tiger.

I have everything crossed that Timmy gets along ok. My Stephanie was just like this. Still a shy girl - even now.

Well Bible Study went very well last night - we had a really good time. I should have no worries, as they are all my friends, so if I do mess up they will just laugh at me.:lmao:

Doug sang a solo last night at services. It was just beautiful. I had no idea he was singing. Elizabeth, was with me and when it was over she turned to me with tears in her eyes and said, "Gramie (my Mom) and Grandma (Doug's Mom) would have been so proud." Yes they would have. I was blown away, I guess he kept it a good suprise for all us. I was so proud!!

Lenten Lunches at the various Churches in town start today. I can't wait - this is one of my very favorite times in the Church Calendar. We really have a great time.

WFDT ~ Beef Stew (in the crockpot) and a loaf of Sourdough Bread (in the bread machine). The house should smell so good when I get home.

Well the costume is almost done. :thumbsup2 The is just one part left and I need him at my house for that so that I can place and sew a cumber bun and lapels.

Dinner tonight will be meatloaf.

I am starting Lent next week, too much craziness this week. :sad2:I am doing 40 days of healthy living. No junk, no fast food, no diet soda, etc and at least 18 days of gym time, no excusses. :thumbsup2
