The What's For Dinner Thread - October'11 (recipe index in OP)

I had a large spread for the Super Bowl. I did not get pictures of everything because people were very hungry so I had to start serving right away. This was the menu:

chilled fried chicken
devilled eggs
shrimp cocktail
mini mac and cheese bites
lobster sliders
whisky bbq beef sliders
guacamole, pico de gallo, and mango salsa with tortilla chips
mini cornbread muffins with honey butter
buffalo chicken quesadillas
caprese salad skewers
mixed greens salad with apples, spiced pecans, and gorgonzola dolce
bacon wrapped grissini with brown sugar glaze
Patriots-themed cupcakes (purchased from a bakery)
Patriots-themed chocolate cake with vanilla icing (homemade)

The game did not turn out so well but the food was good at least. Here are some pictures from Sunday:

Wow is all I can say.... Amazing. I am so hungry.
 
Everyone's food is looking wonderful!

I missed everyone and it is nice to be back, but I ate some wonderful food and had some amazing meals.

Sharing that time with friends made it a great experience.

I hope everyone is feeling better and things are going well in everyone's life.

Tonight Fran is going to attempt to make clam chowder with my help. She hasn't cooked anything in probably more than. 10 years. We'll see how she feels about it when I comes time to actually cook it!

It was a very relaxing trip, we did not do a whole lot, we ate and drank too much but we had fun. we had great weather at sea and the days were 85 to 90 degrees, and lots of sun! Really helped with the winter blues...

How's your foot?

The foot is doing better, I hit the 6 weeks mark while on board and got to get rid of the cane, I am just in the walking boot now and go back to the Dr this week, so fingers crossed everything is good.

I think we're going to have fried rice for dinner tonight...either that or fried noodles.

I have no idea what is for dinner tonight, grilled chicken and salad maybe, or it should be so I can shed some of the cruise weight...
 
Well, we are having pasta for dinner today. Along with a squash casserole that my mom used to make. We got summer squash in our bountiful baskets yesterday, and so I figured I'd make a taste of summer for my kids. We woke up to a few inches of snow, and more on the way.

Dessert will be a chocolate raspberry cobbler that I had planned for a couple of weeks ago, but never got made. Should taste good while watching "Once Upon a Time!"

Well considering we just had lunch at the Costco buffet, I have no idea what's in store for dinner. I tried to get her to plan, ie. Well if we want to eat around 7PM, the soup should be done by 5:30 or 6 so that it has some time to simmer. She immediately cut me off saying that wouldn't happen because we were going to be over at 1st St planting.

Then we got a call to show the vacant apartment between 3-4PM. It's nearly 2:30 now and we're at Lowe's so I don't see where the planting fits in. :confused3 Sundown is just after 5PM here. It makes more sense to me that we work on dinner after I show the apartment, then we get an early supper, early to bed and have a chance at an early start for tomorrow. Today was supposed to be my day for paperwork and bill paying anyways, but she forgot that she agreed to that! :rotfl:
 
Planting in cooler weather, at least you wont sweat from heat.

I was able to escape the planting today. In fact we started dinner after showing the apartment and it has been simmering since 6PM, it should be good dinner at 7PM!

It's a pretty, but cold day here! The kids have spent their day off just hanging around with friends. It's been nice.

I have a pot of chili cooking, and a cherry pie in the oven. I was going to try my hand at some English toasting bread, but the day just got away from me. Alan didn't have school today, either, so he came home early, and wants to do something fun with the family this evening. So, the bread will have to wait until another day.

I hope you all are having a grand day!

Work was hell though. We are being trained on a new computer program to do all of our paperwork for our kids. And oy! :headache:

Then I went shopping and came home and UncleR and I made a spinach salad with a warm bacon vinaigrette dressing. It was yummy. But, I'm still hungry. :lmao:

Dinner tonight was grilled pork chops , roasted cauliflower and baked potato.

Everything was really good, and David said "this is best cauliflower i have ever had". It made me smile...

Here's a toast to all with a day from He!!, I am so tired, at first I was promised a steak dinner out, and then I had to cook my own steak dinner! Oh well, I probably make it better anyways!

We DID rent the apartment!!!!! or should I say Home, it is part of a duplex and not a complex.

We are having leftover chicken pot pie today.
