Hi everyone,

Thanks so much for all of your prayers - They worked. We got about 8 - 10 inches of snow and kept electricity. We didn't get it near as bad as some. Thank God!! Stephanie and Marty, who are just 35 miles east got over 15" and Matthew in Lincoln got between 12" & 15" also. But yesterday was nice and the streets and interstate are clear and dry. Again thanks so much!!!

Glynis ~ The cantaloupe jam was a christmas gift from one of my parishoners but I could get the recipe if you want. I had never heard of it before and OH MY GOODNESS it is delicious. So much so, that I gave the empty jar back and asked for more. :rotfl2:

On Saturday I made 3 Chicken pot pies and they turned out great. I froze one, gave one to Elizabeth and the family and Doug and I ate the other one. Thanks for all of the tips - I was right proud of myself. ;)

We planned our whole day around the Super Bowl last night. I think Doug started watching the pregame around 1:00. I put a beef roast in the crockpot and we had BBQ sandwiches, coleslaw, chips and dip. And of course a beer or two. I loved the commercials - my favorite one was the Doritos one with the baby. Loved it.

I will not be around after today until Friday. So please don't worry about me - but please keep me in your thoughts and prayers. We are bringing in a Trainer for me and this new program. Finally I will be able to acess all it can do. With being thrown into this postion and just getting by, I will be taught how to do it right. I am a bit anxious but also excited. I can DO THIS!! Wish me luck!

WFDT ~ Grilled chicken sandwiches, pasta salad and sweet potato fries.

Steak & Spinach Salad with Warm Bacon Dressing​

Ingredients

1-1/2 lb skirt steak
1 pkg Doles baby spinach (raw)
2 c. [cooked] rotini pasta (warm)
6 or 7 sliced mushrooms
2 oz. slivered almonds
6 strips of bacon
2-3 oz. olive oil
3 T. dijon mustard

Sprinkle sea salt and freshly-cracked pepper on steak. Grill on both sides for about 5 minutes (or, you can grill steak on griddle) Remove from heat source and slice into 1/4" to 1/2" slices (keep warm). Meanwhile, in a skillet, heat and cook bacon over medium flame till crispy (crispy enough to crumble). Blot cooked bacon on paper towel and crumble. Set aside.

Mix spinach, mushrooms, almonds, pasta, and crumbled bacon in a large mixing bowl. In skillet, add olive oil to bacon drippings. Add mustard, 1 T. at a time, whisking (you can add a few drops of warm water so that you get a smooth consistency). Keep warm over low flame. Add steak to other ingredients and toss. Pour warm dressing over salad and quickly toss. Serve immediately. Serves 4-5.

Mainly quiet weekend. The not mainly part was yelling at the TV during the game last night. :rotfl: Didn't do any special food as it was just me at home, just had some tortilla chips and jarred cheese sauce.

I posted Go Giants on my DN's FB page and she asked me how I could betray her DM like (she is a Redskins fan and they beat the Giants 2X this season.) I asked her, my DN, how could she do that to me (cause the Pats beat the Ravens and she was there when it happened), her answer "Oh" :rotfl:

Have to say my favorite commercial was the M&M one. "I'm sexy and I know it" :rotfl:

Ellen- I am so happy to see you here!!!!!!!!!!!!!!!!! Thank goodness you and your family weathered the storm. It could have been so much worse! I am also happy you are getting help at work!

We had a nice little gathering planned last night but got a call from the REhab in the morning. Buddy's mom was sent tot he hospital for a little trouble breathing. She was in full blown trouble when we got there. We spent the day there and got home about 6 to have burgers and chips for dinner. She is in ICU and is being treated for a UTI, sepsis, C-Dif- and pneumonia. We had an appt this afternoon so only spent a few hours there this AM. I will call in a little bit to see how she is doing and maybe head back in for a while. We cannot stay int there long so the nurse said it is not a great idea to be there the whole day.
 
Dinner last night was a success! The brown sugar/balsamic pork loin was delicious!!! And the Butterfinger blondies were incredible!!!

Dinner tonight will be bacon wrapped chicken teriyaki skewers, steamed broccoli and brown rice.

UncleR made pineapple teriyaki chicken last night, and OMG. I almost died it was so yummy. She was originally going to wrap it in bacon, but we decided at the last minute to leave it off. Have you had these before? I'd like a review!

Tonight we had leftovers from our Super Bowl appetizer-athon. And they were yummy all over again.

UncleR made pineapple teriyaki chicken last night, and OMG. I almost died it was so yummy. She was originally going to wrap it in bacon, but we decided at the last minute to leave it off. Have you had these before? I'd like a review!

Nope. We've never tried this recipe before. The kids were flipping through my cookbooks and found the picture. They thought it would be good. I did make my own teriyaki sauce! Never done that before. It tastes really good. I'll let you know how this recipe is.

Jen- I wish it was Friday too!

Glynis- i would love your recipe for the teriyake sauce please. I bougt chicken tenders to make something for Anna yesterday but tossed them in the freezer today. I would like to make that chicken I think.

I have frozen doctored up French Fries int eh oven now and have burgers ready to start. Tomatoes and onions for Buddy. I make lousy burgers but had bought 2.5 pounds of ground sirloin so I could make an American Chop Suey for part of our meal last night. Well that turned into burgers last night and I am just too tired to figure our something else for the other half of the package. Buddy will eat anything so thats okay. We had a late lunch so we aren't really hungry but I have to feed him, he is having his elbow repaired tomorrow and cannot eat after midnight.

Last night he was playing his VM messages on his cell and I hear this loud raspy little voice. He had saved a few of Nola's messages and so we got a little bright spot :goodvibes She calls him if he drives by and does not stop in to see her so he has gotten a lot of calls!

I made chicken noodle soup yesterday with my lovely roasted chicken ;) It was so good! I used the Barefoot Contessa's recipe and it worked great. Quick and easy! I will post it later. While at Panera I picked up some bread bowls for out soup. Comfort food x2!

Today is leftover soup. I saved my bread bowl for today so I am looking forward to lunch. Ina has a recipe for buttermilk biscuits I want to try. I will let you know how they work out and post a recipe.

Saturday I grilled. I made grilled mahi mahi with curry sauce (No picture) and also grilled some thick pork chops with jerk spices:

Dinner last night was really quite good! Here are the recipes I used:

Bacon-wrapped teriyaki chicken skewers

8 oz. bacon (not thick sliced)
1 pound boneless, skinless chicken breasts
1 (16 oz.) can pineapple chunks
1 recipe Teriyaki sauce, recipe below (word of advice, double this!)

Cut the bacon into thirds. Count how many pieces you have and then keep that in mind when cutting up the chicken breasts.

Cut the chicken into bite-sized pieces; you'll want roughly as many pieces of chicken as you have of bacon.

Drain the pineapple and place in a bowl. Set up a workstation with kabob skewers, chicken, bacon, and pineapple, plus a shallow dish or heavy-duty zip-top plastic bag for marinating the skewers.

Wrap a piece of bacon around a piece of chicken and secure with a toothpick. Thread the meat onto a skewer. Top with a chunk of pineapple. Repeat twice so there are three pieces of meat and three pieces of pineapple.

Reserve 1/2 cup of the Teriyaki Sauce and pour the remaining sauce over the chicken. Marinate for 4-8 hours.

If you choose to cook these on the grill, preheat the grill to medium-high heat. Place skewers on grill and baste with reserved sauce. Cook for 7 minutes, turn, baste, and cook for another 7 minutes.

To cook these in the oven, preheat oven to 400 degrees and place on a foil-lined baking sheet. Cook for 20 minutes, turning and basting once.

Teriyaki Sauce:

1/2 C. granulated sugar
1/2 C. soy sauce
1/4 C. cider vinegar
1 clove garlic, minced
1/2 teaspoon ground ginger
1/4 teaspoon black pepper
1 Tablespoon cornstarch
1 Tablespoon cold water

Combine sugar, soy sauce, vinegar, garlic, ginger, and black pepper in a small saucepan. Bring to a boil over medium-high heat.

While the soy sauce mixture is heating, whisk together cornstarch and cold water. When the soy sauce mixture comes to a full boil, whisk in the cornstarch mixture and stir sauce until thickened and clear. Remove from heat and allow to cool.

In my opinion, one batch of the sauce was definitely not enough. It really needed at least a double batch. It sure tasted good, though!

I also think the skewers needed a vegetable, and a green or red pepper would have been great on these!

I had a large spread for the Super Bowl. I did not get pictures of everything because people were very hungry so I had to start serving right away. This was the menu:

Patriots-themed cupcakes (purchased from a bakery)
Patriots-themed chocolate cake with vanilla icing (homemade)

So yesterday John and I took the day off to recuperate. We went to the stadium to welcome the team home and then I made dinner. I baked a huge loaf of bread that had sweet bell peppers and provolone cheese chopped up and worked into the dough.

PIO, congratulaions on the weight loss! I have to go on a diet after John and I get back from my upcoming vacation. I think I put on about 10 pounds over the holidays! I am worried that my bathing suit might not fit...:rolleyes1

Becky- all I can say is Holy YUM!!!!!!!!!!!!!!!!!!!!

Buddy had surgery on his elbow today so we are not doing much. He had some sandwiches for a late lunch and will have a light supper of probably the same with soup. He has been asking me to pick up sandwich meat and you all know I usually don't buy that stuff but today I hit the deli and got him his favorites along with some ham for me. Any of you who know my sandwich man knows he is one happy camper!

Buddy's mom is coming along a bit. She was really sick, still is actually but her breathing is a bit better. I could not go today but have spoken to the nurse about increasing her anti anxiety meds. She is incredibly agitated so the nurse wanted to know her baseline. I really wish the rehab folks had called to discuss her medication levels and how long it took her to respond to them .Thanks for all your prayers. Buddy is doing okay but this is really stressful. He said he is so conflicted, he cannot stand to see her like this but it is the compassion he would have for a stranger, not how one would feel about seeing your Mom like this.

Today was a productive day at work. So glad tomorrow is already Wednesday, though. I've been tired!

I've been menu planning for Valentine's and some upcoming special events. I'm having a blast trying all of these new things. I think this weekend we'll be making our own ravioli for the first time!
