The What's For Dinner Thread - October'11 (recipe index in OP)

Good morning y'all! It's Friday!!! :cool1:

I have a late meeting at work today...hate when they do that on Fridays! :headache: But, it'll be made better by our luncheon! :teeth:

Tonight's dinner is the cheeseburger macaroni we were supposed to have yesterday.

And then, lots of yummy cooking this weekend.

Oh, just me, again, popping in to drop some news! It's not set in stone, yet, so I need you all to cross your fingers for me.

Alan is on a VERY short list of photographers from his news station to be sent to London to cover the Olympics this summer. This means he'll be gone from July 20 to August 12, approximately. We were talking last night, and, if things run true to form, they'll send him to London a week early to set up equipment, scope out venues, etc. If that's the case, Alan wants to use his frequent flyer miles to bring me to London for a week with him. This would be amazing! We've always talked about doing this, but have never been able to afford it. The kids are old enough that we could farm them out with relatives and not worry (mostly about Timmy). We never had a real honeymoon, so this would be a dream come true!!!

Please cross your fingers, toes, eyes, whatever that he is chosen, and that we can swing this! I would LOVE to go to London with him, and just relax without the kids!

This will have to be a very quick fly by. I hope to catch up with all of you later. I am really getting scared about this storm coming in to the Plains. We have started out with a Winter Weather Advisory, that soon changed to a Winter Storm Warning, then to a Blizzard Watch to now we are in a Blizzard Warning. They are saying upwards to 15 inches of snow. Which in and of itself is major, but it is to start raining tomorrow morninng then turn to snow with winds between 35 - 50 mph, which are white out conditions. Whth a wet heavy snow and the wind I just hope we keep electricity. Living on a farm, if you have no electricity that also means no water. It gets a little hard to use the bathroom, stay warm, cook, let alone get into town if we do lose electricity. But our main concern is getting water to the cattle. As long as they can drink water they will be alright. And of course Doug is on call this week so this all may fall on me. I am getting all of my work done at the office today so I may just stay home tomorrow. Wish us luck and a few prayers would really be appreciated.

I hope to get some baking and cooking done this weekend to get my freezer full of easy peasy meals. I love to be in my kitchen where it is warm when it is snowing. We shall see how that goes.

WFDT ~ Beef stew (in the crockpot), 9 grain bread (in the bread machine) with cantalope jam.

we didn't have the turkey cutlets last night even though I cooked them - I just put them in the freezer for hot turkey sandwiches next week.. I had a work super bowl pot luck at lunch yesterday and wasn't hungry at dinner so the boys got pizza and dd got subway.. (i ate some popcorn later in the evening)

WFDT --- Barber chicken (apple and brie for me and Kiev for DD and one of each for Hubs) Weaver chicken tenders (for ds) FF and cold veggies.. pretty easy night ..
 
Morning, all. I'm so TIRED!!! I got home from book club last night to utter CHAOS. There were 10 children in my house, trying to settle down for bed. On top of that, Timmy had fallen and hit his head on our slate floor... HARD. So hard, there was a huge lump on the back of his head. His pupils seemed ok, but Alan and I were a bit worried, so we kept him in our room for the night. This turned out to be a very good thing, as he began throwing up around midnight, and didn't stop until 4:00 this morning. Poor little guy. I don't know if the throwing up is related to the head bonk, but he was pretty miserable... and I had to stay up with him so I was pretty miserable. He finally dropped into an exhausted sleep at 4:00, which was when I had to get Alan up for work. After Alan left at 4:45, I was able to go to sleep... until 6:00 when I had to get up to start getting the high school kids up and going (school for them starts at 7:25). So, now, I'm up until all the kids are gone to school. I've decided not to go to bowling this morning, but snuggle in bed with Timmy and try to catch up on sleep!

Dinner tonight will be easy! Cowboy quesadillas. Yum! I can hardly wait! Hope you all have great days!

I fainted this past year and I threw up right after I hit my head pretty hard, it is a sign of hitting your head.

I got my hair CHOPPED today. I needed it so bad! I feel 10 pounds lighter.

Tomorrow's Friday and we're having a "Best Chocolate" recipe luncheon. I don't like chocolate, so I'm going against the grain and making a pineapple sheet cake. :lmao:

Marisa and Kady got hair cuts yesterday too and both felt better. I always wait too long and when I finally go I feel so good! My hair is heavy and I actually get headaches so I understand that ten pound thing!

I am way better today! Marisa picked up Subway for Buddy last night. He was at the hospital after getting his thumb caught in the splitter. Marisa said he did it on purpose to avoid coming home to a sicko! I am sticking to crackers and some soup today.

We got the paperwork from the court today. We do have an appointment with an attorney. He said he will be able to help Buddy navigate this whole thing so we know what we can do in regards to her things and what we cannot do. To be honest, I am thankful we do not have the care of her estate, it is going to be a nightmare of paperwork and the judge tried to warn his sister of that. Our lawyer will be able to make sure that we have done our part and that we do not overstep our roles as well as help Buddy learn the protocol to getting his Mom's bills paid. We need all of her records and this will be the first test of how we work with the sister. She also has not had glasses since October and I have asked for an exam but no avail. Her lower plate is missing too so she has a hard time eating. I need to rectify this as well now that we can do so.

Buddy knows that he can charge the fees to his Mom's estate but we have decided not to do so. He has never taken a penny from his mom and does not want to do so now that she has so little left.

My soup turned out good although I did end up steaming the bacon, I put onions and shallots in too soon. :headache:

Dinner tonight may be something with sausage. I had more than a pound of spicy turkey sausage and have just enough left to make either a sandwich or some sort of pasta sauce.

First, more :hug: for you being sick and for the situation with your MIL. That is such a mess, and I think Buddy is such an amazing guy for stepping up even though he's been estranged. It shows that he's not being selfish (like some people) and that he has his mom's best interests at heart.

And no, I don't like chocolate. I think it tastes like dirt. In general, I'm also anti-nut. :lmao:

I normally roast boneless, skinless chicken breasts. No more! Any suggestions?

I like to make chicken enchiladas, chicken and dumplings, egg foo young, jambalaya, chicken croquettes...others too but they slip my mind right now.

Alison I am so glad to hear that you and Fran are running around as much as you, that is great.... I am longing for the day I can spend more than 30 minutes in an upright position.

Dinner was good and she has been working me to death, the good news is that she's been taking me out to dinner every night. Last night was Teppan, she just offered me Pho or Indian food tonight. I was going to make John Wayne's Cheese Casserole. Since it's after 4PM and we're now just getting started on going to the warehouse stores and I have to go grocery shopping she offered dinner. She must feel really guilty since she doesn't like Indian all that much and has never tried Pho.

Actually the plan changed a bit - I still had pancakes (apple cinnamon) and bacon, Hubs had a pastrami sandwich and chips, DS had 2 egg and cheese sandwiches bacon, and Monkey Bread and DD had French Toast, bacon, a sausage patty and grapefruit.

That's mighty nice of you to customize so many meals, my max is two different meals.

Well it looks like Pho for dinner. Our friend Arlune came down today for our trip to Disneyland next week. She's game for trying it, and Fran postponed the warehouse stores to Sunday. I just have to grocery shop while she goes to the nursery and tha out for dinner!

I normally season the skin with salt and pepper and squeeze a little lemon all over the skin. Then I rub the skin with some butter, sprinkle some thyme over the butter and then pop the chicken into the hot oven to roast.

Hope Timmy is better. A knock on the head is not pleasant and it would have been enough to send me to the emergency department at the closest hospital.

Morning, everyone! Well, it was a long day yesterday... mostly because once Timmy was up, he was fine and raring to go. I, on the other hand, was a walking zombie all day long. Alan came home from work early and closed me in our bedroom to nap. Didn't happen. With 10 kids at the house, there's always someone wanting something!

I wasn't too worried about Timmy's head. After 4 other kids, who have all bonked their heads (Katie's was the worst... actual concussion), we've seen enough doctor's to know what to do. His pupils stayed the same size, and we watched him carefully. Another good thing is that we live in such a small town, our pediatrician lives 1 street over. We've called him on several occasions, and he comes over. Nice guy!

Dinner is somewhere out tonight! We get rid of the 5 extra kids, and then Alan and I are heading out somewhere!

I hadn't had it cut in about 2 1/2 months. But, my hair is very short. And it was suddenly in my eyes and over my ears. I couldn't stand it anymore.

Happy birthday to Lindsay's dad!

Morning, everyone! Well, it was a long day yesterday... mostly because once Timmy was up, he was fine and raring to go. I, on the other hand, was a walking zombie all day long. Alan came home from work early and closed me in our bedroom to nap. Didn't happen. With 10 kids at the house, there's always someone wanting something!

I wasn't too worried about Timmy's head. After 4 other kids, who have all bonked their heads (Katie's was the worst... actual concussion), we've seen enough doctor's to know what to do. His pupils stayed the same size, and we watched him carefully. Another good thing is that we live in such a small town, our pediatrician lives 1 street over. We've called him on several occasions, and he comes over. Nice guy!

Dinner is somewhere out tonight! We get rid of the 5 extra kids, and then Alan and I are heading out somewhere!

Today will be full of lots of cooking and blogging, and some getting ready for our appetizer day tomorrow.

Tonight's dinner is carnitas with homemade tortillas. But, I'm also making a goat cheese and mushroom tart for tomorrow. And maybe some homemade oatmeal cream pie cookies.

Morning, everyone. Today is my dad's birthday so we are taking him to his favorite restaurant, The Chop House. I got a cake for him (his favorite) so no cooking for me today.

Lindsay- I meant to tell you I prefer bone-in chicken and generally buy it. My Mom used to roast whole chicken legs that she had rubbed with veg oil and seasoned with salt, pepper and paprika. She used to cook them to death but I still get nostalgic and roast them like that with my own twists. I will often use lemon pepper or garlic powder as well as the salt and pepper on any bone in chicken. I roast at 435 for about 15 to 20 minutes to crisp up the skin and reduce the temp to 350 after that. I pour off the fat and then glaze with whatever I have in the house, sometime honey and mustard, sometimes apricot jam or duck sauce. Maple syrup and mustard is good too. Do this after the fat is cooked off the skin.

I buy whole chickens, cut them down the backbone and spread them out flat, bone side down. Press them as flat as you can and then roast.

You can use the cooked meat any way you want after that.

If you are looking for a stock I use chicken thighs and poach. When the chicken is cooked remove the chicken and toss the rest back in the stock pot and simmer with an onion, carrots and some celery. Strain, cool overnight if you have time and remove the fat that will move to the top. This is the soup base I use and if I have it I use it for gravy as well.

Anyone hear from Ellen? The weather in her neck of the woods if not good.

Ingredients

2 lbs (approx 8 cutlets) chicken cutlets, sliced thin
2 cups Italian bread crumbs (I use gluten-free)
6 oz. chopped pecans
1 t. garlic powder
1 t. paprika
1 small can mandarin orange segments, drained
1/2 c. dried cranberries
4 oz. Emerald[FONT="Comic Sans"][SIZE="1"]R[/SIZE][/FONT] glazed walnuts
6 oz. feta cheese, crumbled
1 pkg. Dole's Spring Baby greens (you can also use baby arugula, but don't use Boston, bibb, or iceberg lettuce)
1 tomato, cut into small chunks
4-5 oz. raspberry viniagrette

Combine bread crumbs, pecans, garlic, and paprika in a large Zip-Lok baggie. Individually dip cutlets in a bowl of room-temp water and toss into baggie. Shake until well-covered. Saute` breaded cutlets in olive oil. Set aside, covered, to keep warm.

In a large bowl, combine the rest of the ingredients except the viniagrette. Slice chicken cutlets into 1/2" slices and put into bowl with salad greens. Toss. Pour viniagrette over salad and toss again. Serves 4.
