Dinner tonight will be black bean soup and tortilla chips. New recipe, and I hope it's good. We will most likely have sandwiches, too. The kids think you can't have soup without sandwiches.
 
Hi everyone. I have missed you!!

WOW.....I can't believe how slow it is in here. Usually after being gone for a few days I have 10+ pages to read through. Not this morning - only 3. :confused:

Nan ~ I sure hope Buddy is feeling better and healing nicely.
Prayers continue for his Mom. I sure hope things turn around soon.

Glynis ~ How did you like the ballet? Oh and I have been meaning to ask - how it Timmy doing with the Potty training?

Becky ~ I am jealous of your vacation. I think it will be July until I thaw out. Your Superbowl pictures were amazing.

Last week was GREAT!!! On Tuesday I picked the trainer up from the airport and we came back and worked till after 8. I went home and had some left over spaghetti. Wednesday and Thursday found us hunched over the computers. I had closed the office and unpluged the phones so we were not distracted. WOW - we really made headway and FINALLY I know what I am supposed to do and it is going to be so much better from here on out. There were a few tears and frustrations until the eventual light bulb went off. But all in all it was worth every penny to have her out. We clicked from the very beginning and left becoming good friends.

Thanks for all of your thoughts and prayers - They really worked and I feel so much better.

We are leaving right after work tonight for Lincoln. I have a Dr. Appt in Omaha tomorrow at 9 am. So we decided to get as far as Lincoln tonight. Besides we haven't seen Matthew since Christmas and it is TIME!!

Happy Valentines Day everyone. We are going to eat at the Cheesecake Factory tomorrow - I can't wait.

Quiet around here this weekend and at home too. This is going to be a crazy, crazy week and next weekend will be busy too so having a couple quiet weekends is good.

Dinner tonight will be fish with a tomato sauce of some sort, haven't decided if I want to do spicy or Balsamic yet. Will have it with rice cooked in my new Pampered Chef rice cooker. So excited because I cannot cook rice worth nothing. :yay:
 

Good Monday Morning!!!!!!!!!!!!!!!!!!!!! I am also glad to see folks around. I am here but just barely, Buddy's Mom is back in the rehab but really very sick. I am on my way there in a bit and then Bud needs to make some very serious decision regarding her care. Please keep him in your prayers, he is struggling with this.

Ellen-I knew you would get teh hang of the system!!!!!!!!!!!!!! I am so glad you will now have a "Partner" to make your job easier!

Dinner is out this evening. Dan and Erica have a dear friend visiting from FL and I invited them here for a meal before she returns home tomorrow. Erica said no way, no cooking for me! Oringinally we were going out for Indian:yay::yay: but the restaurant is closed tonight. I had told Dan that Buddy did not like it and he laughed...........said that since his wallet was creaking open to treat us he figured Buddy would "love" it! :lmao::lmao: Well we are now heading out for seafood at Dan's fav restaurant and Buddy is one relieved man. He told me he would have gone to dinner and he would have eaten it but even the pleasure of watching the moths fly out of Daniels wallet would not make him like it :rotfl2:

Thanks for asking, Ellen! The ballet was fantastic! It was nice to do something different, and being with Alan was wonderful!!! Timmy is progressing slowly. He knows what to do, he just gets really lazy! So, we've taken to letting him run around the house naked, and that seems to be helping. However, when we have to go to the store, or someplace else, he backslides! I know he'll get it, eventually, but it's a slow, frustrating process. I get really frustrated, because none of the other kids were this hard! They were all trained within a couple of days... once they decided it was something they wanted to do. I just don't think Timmy has reached that point, yet. Hopefully, soon.

I forgot about the Ballet! :guilty: I am so glad you had fun!

Don't get too frustrated with Timmy. He will get it! Brian is ready to hang Rylee. Welby went back to work and he is seasonal so he has been caring for the girls during the day. Rylee was almost trained but she is young. Really young and so she regressed. She was especially difficult for Brian, almost in your face kind of accidents. She would pull her pants down and go on the floor or rug or if they were in his truck go in the car seat. And then say "oh oh".Poor guy would have a sink full of soaking panties when Welby got home and he was so upset, she seems to take the change out on him. Rylee is fine here but nothing changed at my house. They took her several times to the Dr but he said nothing was wrong, and Brian could put her in pullups if he needed to. He did not but I can tell you I think he did the Dance of Joy when he went back to work this morning! ;) I really felt bad for the guy, that little Monkey is the spitting image of her mother and has her colorful personality so she was one heck of a stubborn handful for her poor Daddy :dance3: we found it amusing but we were not going through it, thank goodness!

Anyway, good luck with your little guy! He will put it all together soon!
 
Wow! It has been quiet around here! Sounds like everyone checking in is doing well! We had Egg Drop Soup and Beef with Broccoli. Tonight's dinner will be Chicken Florentine and pasta.

Sorry you are sick! No fun! Glad you are getting some doctoring! We are having chicken and dumplin' casserole on Friday. It's a new recipe, and I'm excited to try it!

I actually sat down on Saturday and made a menu for the coming week. Yay! Then I went shopping for all the food, and came in under 200 dollars for 7 of us for 1 week! Boy, did that feel good! I also like having a plan! Makes me a lot less stressed!

It also frees my week up. Timmy and I can now spend a lot more "potty" time at home, and not out and about! Maybe we can get this thing done!
 
Jen - Sorry you're sick. But I'm glad you posted here I was starting to worry about you two since you post almost every day.

Glynis - I know what you mean about a plan, and good that you'll have potty training time. I hope you get through that soon!

My menu is set through tomorrow, but you both have inspired me to do Turkey and Dumplings on Wednesday.

Well...I'm finally on the new laptop. Transferred most of my files; but still have the music to do. I've been too chicken to download pictures to this new computer, but I know I have to do it sometime. So, it will be Thursday before I get to having a clear space to do so. Wish me luck!

Morning, everyone! Today it's leftover mini meatloaves.

Italian Mini Meatloaves


1 1/3 pounds ground sirloin (I use 1/2 beef, 1/2 Italian sausage)
1 large egg, beaten
2/3 cup Italian bread crumbs, a couple of handfuls
1/4 cup grated Parmigiano, plus 1/2 cup
1/2 small green bell pepper, chopped
1 small yellow onion, finely chopped
4 cloves garlic, chopped
3 tablespoons tomato paste
Salt and pepper

Preheat oven to 425 degrees F.

Place meat in a bowl. Make a well in meat. Fill well with egg, bread crumbs, 1/4 cup cheese, peppers, onions, garlic, tomato paste, salt and pepper. Mix meat and breading and form 4 individual oval meat loaves, 1-inch thick. Coat loaves with extra-virgin olive oil and arrange on a baking sheet. Roast 18 to 20 minutes. (mine usually take longer than this)

Dinner tonight is still up in the air. I have all the ingredients to make the cream cheese baked spaghetti, which we all love. Or, we'll make individual "cracker" pizzas on tortillas. I'm going to leave it up to the kids. Alan has late class tonight, so he won't be here.

I'm also going to make a chocolate raspberry cobbler for dessert.

Later this afternoon, I have my Scout meeting. We are going to decorate pink lemonade cookies, learn some Scout stuff, and end with making fortune cookies out of felt, stuffed with Hershey's kisses! Wish me luck! I need to figure out the easiest way for 10 year old boys to do this!

I didn't end up making it last night. I went out shopping with a couple of friends and didn't get finished until late so I grabbed something on the way home. Will let you all know if I am successful. :thumbsup2

Morning, all! It's Wednesday so that means dinner at church tonight. My friend and I are actually going out to lunch today after Ladies Ensemble practice.

Morning, everyone! Cold and wet here. We've been having scattered rain and snow showers for the last couple of days. Not enough to put anything white on the ground in our valley, but my mountains are just covered in the white stuff!!!

Alan surprised me last night and took me out to dinner instead of going to his class. Bad student, good husband. He did go long enough to take his test, and arrange to get the notes from another grad student, so I guess he covered his bases. We went to little diner called Johanna's Kitchen. It was pretty good. They had a Valentine's special of prime rib, and it was very enjoyable!

The kids stayed home and enjoyed "cracker pizza". Tortillas topped with pizza stuff and baked in a 425 degree oven for 10 minutes. Apparently, Timmy was so obsessed with the idea of going on a date, he insisted that he and the rest of the kids dress up. Katie decorated the kitchen table for a Valentine's restaurant, and they all went on a "date" with each other. I'm really lucky that my eldest is camera savvy, because she videotaped the whole thing! It is darling!

Dinner tonight will be quesadillas. Something fast, easy and filling as my family runs in different directions tonight!

Jen- How are you feeling today? I was sorry to see you were sick but glad you got some doctoring from Uncle R!
Glynis- sounds like a great meal! We ordered Chinese for our valentine meal. I usually try to make a special dinner and decorate some pretty Valentine dessert but that never happened, we had appointments until 3 in teh afternoon so the plan was a bust. Good night but no cooking and a bakery cake. Oh well

I am not sure what I am going to so with my chicken tonight. We want to have a meeting with Bud's old partner, he has called several times to "kiss and make up" and it really is our financial best interest to do that so we'll see.

I am spotty here and on FB lately, we are up to our elbows in decisions for Buddy's Mom so I am shattered lately.
