Gretchen- Thinking of you and your mom, I'm glad you were able to go with her and support each other.

Vickie- This is probably the wrong thing to say, but, your boy can be close to his cousins at home. I also happen to love Wilderness Lodge and I know you really wanted to stay there the last time. On the other hand, sometimes it really stinks doing the right thing.

Michelle- Hope your getting a good laugh out of your day now that it has passed.

Nancy, I don't know how to make olive salad, we can buy it in a jar. Would you like me to get you one & send it to you? As far jambalaya the zatarain's isn't half bad. I can look for a recipe. I don't use one. Do you want the real thing or an easier rice cooker version?

I've been using a recipe from Allrecipes - I want to say Kat sent it to me a long time ago but am afraid to misspeak and get into trouble if it didn't come from her and is not authentic :laughing: It's VERY easy and VERY tasty - at least to us. It's one of our favorite repeat meals!

I'm glad my day was able to give you guys a few laughs. Now that its over Mike (DH) and I had a good laugh over dinner too. I wound up having to call a plumber back to disable the damn alarm once and for all and we should have a new pump first thing tomorrow morning. Sounds like those with older kids have all been there too, oh the joys...

Gretchen- I am so sorry both for your loss and for the wounds it must have opened up for you and your mother.

Vickie- I can talk the talk but would wind up doing what would make my son the happiest.

soooo slow! I am trying with IE and Safari and it is like slogging through mud! I'll read back later...if anyone has actually managed to post anything! Here is dinner. Egg drop soup, vegetarian potstickers, fried rice, and bok choy. I have lots left over for lunch tomorrow.

We had a wake to attend last night for my SIL's grandmother. After the wake DH surprised the kids and I and took us out to Bugaboo Creek Steakhouse. Luke was so excited to go to "the moosie restaurant" as he calls it. It is a fun place with animated talking animals.

We will probably have the hot dogs (NY system style hot wieners for the local girls) that I was planning on making last night. Nothing fancy but one of DH's favorite meals when I give it to him as an option.

Hoping this rain has come to an end.
 
Vickie, I forgot to comment on your trip planning dilemna. What about if you planned a split stay and did the first couple of days at the WL, then surprised your boy by moving to the resort your sis chooses. Don't tell him they are coming until you get there and he and her bairns are totally surprised. That works for everyone involved and you get your WL (our favorite resort too!)

Good morning. It was an awfully long night. Poor Timothy would wake himself up coughing every couple of hours or so. He's coughed his voice away, and now sounds very hoarse. I'll take him to the doctor this morning, then run to Costco for some essentials.

Alan is leaving town for a couple of days on a news story, so it's just the kids and me for dinner tonight. I'm thinking that I'll get pizza for the kids, since I have Zumba class. I'll make a salad for myself.

Ann- Zachy absolutely loves Bugaboo Creek too.

Busy day today, I have to take Zachy to his gymboree class and then back home just in time to meet the babysitter while I go to a doctor's appointment. Hopefully I'll get back in time to throw in a beer-roasted chicken with potatoes and butternut squash. If I don't get back in time then who knows. Have a great day everyone!
 
Ann, I got my lunchbox at Whole Foods, but they probably sell it lots of other places. It's a laptop lunchbox. Here's their website:

Aimee, I do think you have to use cold rice for fried rice. Otherwise it comes out soggy. I usually just make extra rice the night before and stick it in the fridge for use the next day. The egg drop soup is super easy! Here is the recipe. This makes one serving, so multiply as you need to:

Egg Drop Soup

1 cup chicken stock
dash of soy sauce
2 tsp. sherry
1 inch ginger root, sliced
1 clove garlic, slices
1 egg, lightly beaten
1 scallion, thinly sliced (I used chives because I am out of scallions)
1/2 tsp. toasted sesame oil

Put stock, garlic, and ginger in pot and bring to a boil. Reduce heat and simmer gently for 10-15 minutes. Strain garlic and ginger from broth and discard. Return broth to saucepan and stir in soy sauce and sherry. Return to a simmer.

With a spoon, swirl broth in pan. Keep swirling the broth while you add the beaten egg in a thin stream. Once all egg is added, cook for another minute or two, continuing to stir, until egg is fully cooked. Taste for seasoning, pour into soup bowl and garnish with sesame oil and scallions.

Michelle, your plumber story made me laugh. You'll be able to tell your son about it when he is older.

Greg does seem to have a "special" knack for gifts, though I think he has gotten better over the years. Another one I remembered is that he gave her a set of golf clubs once. Of course Laura does not know how to golf at all, nor does she want to learn. But, no guy is a perfect gift giver. One time John gave me a pair of green rubber cleaning gloves for Christmas. He thought they were a good gift because he bought them at Williams Sonoma. :rotfl:

Vickie, which hotel would your sister want to stay at? I know how you feel about Wilderness Lodge...that's one of my favorites too.

I am counting down until Thurs :yay: Surgeon may find it odd that my face lights up when he comes into the exam room :laughing: It seems to be taking a longer time for the Vicodin to kick in and even then, it's not doing the trick. The constant pain wears me down some... DH told me the other night when I came in that I looked "beaten down" - thanks, dear. :rolleyes:

The worst part is that the Prednisone makes you hungry ALL THE TIME but anytime I eat it hurts so I have this hungry pain going on.

Wah. I need to stop whining.

DH went to the store this morning and I told him to leave something out for dinner tonight. I think we may have meatloaf and mashed potatoes.
 
Hey! Quick check in...the baby is sleeping so I want to feed Mom lunch and then relax myself. I took Riley to be groomed and got my oil changed and then picked up groceries (I have been ordering on line since the baby and I are sick).

I am still not 100%...please do not worry about me. It's just a cold.

Dinner tonight is something with chicken breast...I precooked it and froze it. I am thinking a mexican casserole that I have been craving and broccoli on the side. I guess I ordered more than I thought. I have the entire crop in my fridge!

DInner was just okay. I usually like leftovers but today they were just Eh! I am seriously annoyed with Buddy si that might have a lot to do with it.

So, Timothy is still running like a faucet, and is just miserable. He's now got a white coating on his tongue, and I'm worried about thrush. I'm breaking down and taking him to the doctor tomorrow morning. His fever is not as high as it has been, but he's definitely still hot. He just looks pitiful!

Oh yes, we've all been right there. Heck, I'm still there even though mine aren't little any more. There's never a dull moment in my house. My 12 year old has autism and you just never know what she's going to do. She was sick with high fever about 2 years ago and just lying on the couch. She handed me her juice cup for a refill and when I returned, I found my daughter had removed her gown and her panties and was standing buck naked with her fanny pressed against the sliding glass door. Obviously, she was using the cool glass to cool herself down. But I can only imagine what the people driving past our house thought. But if I am completely honest, there are several of the neighbors that I would have liked to moon myself. ;)

I don't think you're whining at all. You've suffered with this for a VERY long time. I just hope the surgeon can give you some relief quickly.

We all feel like we need to worry. We know how busy you are right now and I (and I'm sure everyone else) is worried that you're not getting well because you have so very much on your plate. Take care of yourself too.


Janice - Somehow I lost your quote, but I loved your story with Alex pointing out the lady's large bottom. At least he didn't ask a lady in church in her 60s if she had a baby in her stomach. :scared1: That was my brother's little gem and there was no place for my poor mom to run. :laughing:

Thank you to everyone for the kind words and sympathy. I'm sure it was just harder because our emotions are still kind of raw. I've been doing really well, I think and Mom has been too. She used to come over to my house every night for dinner because she couldn't stand to be alone, but she only comes 4-5 nights a week now. She said she wasn't afraid to sleep alone anymore and is now getting some real rest. So she is doing better and better all the time.

Tonight's dinner is going to be something with the pork tenderloin I defrosted, I just haven't decided yet. I need to work some tonight so it'll have to be quick.

The Dis is acting really goofy. I had a hard time just getting the thread to open, I tried to quote but then gave up on it. My brain is leaking too, so I'm sure I'll miss stuff.

Dinner last night was my italian sausage & beans. I added swiss chard & kale to it this time & used chicken spinach asiago sausage, it was yummy. I took a pic but can't get it to post.

Aimee, That recipe for jambalaya looks good! :thumbsup2 Smoked sausage would be more authentic then kielbasa. Lots of people throw shrimp, sausage & chicken in it. I'll usually do it with either shrimp or chicken & smoked or andouille sausage. Your surgery is this Thursday? or am I confused. I've been eating everything in site, from the steroid injection. It's finally starting to wear off.

Gretchen -- I'm sorry for your loss. I am sure your mom really appreciates all the support you have provided her these past few months.

I have tried to get Greg to seek gift-giving help, but he doesn't think he has a problem.

Glynis -- I hope the doctor is able to help Timothy feel better quickly.

Nancy and Robin -- Caili expects everyone to remember all of her animals' names as well. Fortunately, most of the names are fairly obvious (Bunny, for example) so I am usually able to come up with them as needed.

Robin -- How was the mascarpone in the pasta? I think I have some in my fridge too.

Michelle -- Your story really made me laugh. I am sure that is not one he will appreciate you sharing later on.

Aimee -- I don't think you are whining. You have been in way too much pain for way too long. I hope you can get the surgery scheduled quickly.

I spent a lovely hour this morning previewing the health videos the school is going to show Liam's class in a couple weeks. If I were a kid watching, I would want time to freeze. It promised increased hairiness, pimples, mood swings, awkwardness, embarrassing moments...doesn't that just make you want to relive puberty all over again? Anyway, wish me luck after school that day.

Dinner tonight is out for the kids, but I'll make myself something healthier when we get home.

Vickie- have ya'll thought of renting DVC? A 2 bdrm unit holds 8 people, and maybe would make it more affordable for your sister and still get you to your dream spot. I know what you mean though, Wilderness Lodge is our favorite too.
