The sun is shining here! We've had enough rain, it's really nice to see the sun.

Maria- Enjoy dinner out, how are you enjoying Chicago?

Glynis- Glad you had so much fun at zumba and that it fits your schedule.

Lauren- Hope the little guy is feeling better soon.

Becky- I'm waiting to see how you make split pea soup look good.

Lauri- My brother used to work at the aquarium in boston but doesn't live in the area anymore. He also worked at the living seas in Epcot for a while.

Sheryl- Hope your doing well.

I don't know what's for dinner. Laura's got me thinking breakfast for dinner but I'm not sure. My sister in law gave us a bacon of the month subscription for Christmas and I'm looking for a reason to cook up some tasty bacon.
 
Ellen- I am trying to catch up too. Not doing well I am afraid.

DInner last night was roasted chicken thighs, roasted russet potatoes and a salad. I am like Lauren, eating when i am not hungry and i am also making some poor choices lately. I passed over veggies and salad for more potatoes! They were so good!

I have chicken for this evening, I have no idea how I will cook it......I am craving more roasted just like last night.

WFD- roasted leg of lamb with gravy, mashed or oven roasted red bliss potatoes, and carrots.

Off to try to catch up while Emma is napping. Not sure how long I have...I just took a nice long shower and actually shaved my legs in peace while DH was home.:rotfl:
 

Robin - WOW. All I can say is WOW! The candy and nuts look really great!

We were fortunate enough to get a behind the scenes tour at Epcot's Living Seas because of contacts Bob and I had made at the Aquarium. It was a really neat experience! A bacon of the month subscription? Wow, sounds like something we'd enjoy!!

Laura - congrats to Caili!

Glynis - glad you enjoyed Zumba. I may have to look for a class near me.

I don't use a crock pot often; guess I may need to start with all these yummy recipes floating around!

Kat - Call her. I know she's having a rough time right now, I'd just like to know that she's okay, and that's all there is.

Lauren - poor Thomas. Colds are no fun for adults, but little ones are especially tough. I hope all is okay with Andrew's braces.

I'm also eating more than I should. Just not in a happy place right now with work, among a few other issues. If the cold and rain go away, and we get more than a few minutes of sun here and there, I might be able to shake it.

I'm having a really tough time with 2 postings.....anyone else feeling this?

I can't keep up. I don't have access to fb during the day due to work internet limitations. So, I skim thru that at night for anything important, but don't post.

Last night Bob fixed chinese, we had fried rice and pork and sausage with veggies. Tonight we are doing breakfast for dinner.
 
Marilyn- Good luck with those fish, this is a fish free house. We had them when we were little and they just aren't for me. My brother on the other hand is a curator at an aquarium, I prefer them on my plate.

Mine was a fish free house until I decided to me the "good" aunt and let the DN's throw ping pong balls at fish bowls at the fair. When we called mommy with the good news about Goldie, she told me to keep him! :rotfl: They already had two aquariums of their own and didn't need a third, theirs were tropicals. Lunch was bought as a companion for Goldie, he was actually in the second round of fish bought, the others died. And Fair was obtained from again throwing ping pong balls at the fair.

I'll have to take their picture, once I finish the filthy tank cleaning that is. ;)

Dinner tonight will be the lasagna I was supposed to make last night. Didn't get home until 10 last night. Did get two of the things done on my list at least.

I think we should keep it here for the most part, but that's just my opinion. :)

Robin, I'll do my best to make it look tasty....but no guarantees! It IS split pea soup after all. :laughing:
 
Robin -- I am VERY impressed! I used to make truffles at Christmas, but they never looked that good. I don't usually need excuses to make bacon.

Marilyn -- I'm glad you're making progress. I don't do anything after 10 PM, unless it is to go to sleep.

Kathy -- I agree with Lauri. It is unusual for Sheryl to stay away with no explanation.

I'm having trouble with both spots as well. My vote is for here. If there is something personal going on that shouldn't be here, then let us know via FB.
 
Hey y'all, I just spoke with Sheryl. She's fine but depressed and in a funk. We've all been there before. Her physical issues are a prime contributor. I told her we all missed her and she wanted me to let everyone know she's OK.

We're having a NOLA meet Friday and she wants to go and needs to go so I'll be sure and do my best to make that happen.:goodvibes

Glad to post the recipe for the chicken carlito . I have used many of the recipes I have seen here. I wish I could post photos that look as good as those I've seen here. They look better than those from food magazines
Chicken carlito
1/2 lb chicken breasts
Garlic butter - 2 tbs butter 1/2 tbs minced garlic ,juice of 1/4 lemon
1/2 cup sliced black olives
1/2 cup chopped spinach (fresh or frozen)
1/2 cup prosciutto Chopped
1/4 cup vodka
1/2 cup roasted red peppers julienned
1 cup tomato sauce anykind
1/2 cup heavy cream
1/2 cup chicken stock
1 cup grated pecorino romano cheese
pinch each of salt, garlic powder, onion powder, and pepper
10 oz cooked penne ( i usually just make of whole lb of pasta. there is plenty of sauce)
fresh basil
Grill or saute chicken cut into bite size pieces and set aside Prepare garlic butter by mixing ingredients Melt garlic butter in a saute pan over medium heat, then add olives and saute for a few minutes. add spinach and prosciutto and saute a few minutes .Remove pan from heat and add vodka return to low heat to burn off the alcohol

Add roasted red peppers saute briefly, stir in the cup of your favorite tomato sauce, the heavy cream and chicken stock. Stir in romano cheese and pinches of flavorings and mix add chicken and cooked pasta Serve with fresh basil on top
It may look like it takes a lot of ingredients but most are staples, and once you get past cooking the chicken it goes quickly if you do your prep work ahead of time.

An excerpt from the 3am conversation this morning:

R: why are you tossing and turning?
Me: Everytime I fall asleep I hear this loud noise...<grumble>
R: I don't hear anything.....
Me: That's cause you keep waking yourself up with said loud noise!
R: Oh. I'm the noise?
Me: Yes- go take cough medicine and leave me alone.

The man is now napping.:rolleyes1

I found earplugs at Walgreens today.

As far as posting both places... it's WAY easier for me to post on FB, I spend more time on it, replies pop to my phone automatically, etc. Dis doesn't even have a mobile site so it's a PITA to post here when away from a computer. But I'll continue to try and pop in here when I have a chance. I think everyone should do what is best for them :goodvibes

Sorry to worry everyone. As Kathy explained I've just been feeling off & in a major funk. I've been in a shut down mode all week, skipped PT & sleeping a lot. I'm sorry that I am being a rotten friend again. Kathy's call helped! Thanks Kathy. :hug: I have to go get my hair done tomorrow & I can't skip it cause I have a lot of gray showing. Maybe that will help jolt me out of this mood.
