Ah, bummer.
Easy! Here is the recipe for popovers:
Preheat oven to 425 degrees with you popover pan in it (you can use a muffin tin in a pinch).
In a blender, combine the folllowing:
1 cup flour
1 cup milk
2 eggs
1 tbsp. melted butter
1/2 tsp salt
blend until very smooth.
Grease the hot popover pan and pour in the batter. Cook for 35-40 minutes, until browned and popped. Remove from the oven and poke a hole in each popover and lay it on its side to let steam escape. If you want a crunchier inside, you can put them back in the oven for a couple of minutes at this point.

Here is dinner last night. I made a salad of arugula with pistachios, aged gouda, apples, cranberries, and bacon with a maple mustard dressing. It was good:
We also had chicken pot pie. I like to cook my puff pastry lid on a seperate baking sheet so that it stays nice and puffy:
WFD tonight: I have a mushroom-roasted pepper-chicken sausage-tomato stew that I made on Sunday. Not sure if I am going to serve it over polenta or pasta yet...we'll see.
