The What's For Dinner Thread - November '09(recipe index in OP)

Hello ladies. Just got home from VA. My dsis had to have emergency surgery last night, they thought her apendix needed to be removed but it was fine and they think it may have been a ruptured ovarian cyst instead. She is fine though, had surgery at 11 last night and was ready to leave when I talked to her at 9am this morning.

I went to see her at 11 and she was ordering lunch, which she inhaled, and on the way home I had to stop at McD's so she could get fries.:eek: Then we stopped at the grocery store. :rotfl: I left at 6 and she was leaving to take the 6yo to cheerleading practice.

The only time she had any pain today was if she "squished" her stomach too much.

Has anyone ever been to T-Rex in downtown disney? My kiddo loves dinosaurs and we would really like to take here there and make it my husband's birthday dinner.

As others have said, it's good. I have had the quesadilla's and a chicken sandwhich and both were good, and very plentiful.

Marilyn -- I'm glad dinner wasn't meatcakes. I wouldn't like that either. I forgot to tell you that Caili's class has the Ravens (each class picks a team out of a hat the first week of school, and if that team wins the Superbowl, the class gets a party) so she is now rooting for your team.!

Here is the recipe for the "Cheese Frenchies"

Cheese Frenchies

6 slices of white bread
6 slices of cheese
Miracle Whip
1 egg
1/2 cup milk
1tsp. salt
3/4 cup flour
bread crumbs

Make 3 sandwiches with bread, cheese and Miracle Whip. Cut in triangle quarters. Dip in batter made of egg, milk, salt and flour, then roll in bread crumbs. Freeze. Deep fat fry until browned. Do not thaw

Ok ladies that is the recipe and here is what I do. Yes I nanatized it.

I buy a loaf of white sandwich (you know the thinner sliced) bread. I use the whole loaf and make them all up at once. I spread Miracle Whip (not mayo) on both sides of bread and then cut into triangles. I then dip in batter and dredge in bread crumbs. I let them set on a drying rack them put them in the freezer. Once they are froze I put them in a ziplock bag. I take them out as I need them. They freeze well.

Enjoy!! These are worth the mess and the extra calories from frying them.

You'd never know that she had anything happen! And when we were walking out of the hospital she was about 10 feet ahead of me and getting further away. :rotfl:

I tried the :thumbsup2Chicken Cordon Blue recipe that Becky found the link for. It was very good and very easy. I would certainly make it again. I served it with some white rice I cooked in chicken stock. Here is the recipe again, I did make some minor changes. It is certainly diff than the regular Cordon Blue I have had but good.

Prep Time: 15 Minutes
Cook Time: 45 Minutes Ready In: 1 Hour
Servings: 6

Ingredients:

6 skinless, boneless chicken breast halves
6 slices Swiss cheese
6 slices ham
3 tablespoons all-purpose flour
1 teaspoon paprika
6 tablespoons butter
1/2 cup dry white wine (I used Pinot)
1 teaspoon chicken bouillon granules (I doubled this)
1 tablespoon cornstarch
1 cup heavy whipping cream

Directions:
1. Pound chicken breasts if they are too thick. Place a cheese and ham slice on each breast within 1/2 inch of the edges. Fold the edges of the chicken over the filling, and secure with toothpicks (I tied with twine). Mix the flour and paprika in a small bowl (I added a small amount of garlic powder), and coat the chicken pieces.
2. Heat the butter in a large skillet over medium-high heat, and cook the chicken until browned on all sides. Add the wine and bouillon. Reduce heat to low, cover, and simmer for 30 minutes, until chicken is no longer pink and juices run clear.
3. Remove the toothpicks, and transfer the breasts to a warm platter. Blend the cornstarch with the cream in a small bowl, and whisk slowly into the skillet. (I also added some fresh chopped parsley for color) Cook, stirring until thickened, and pour over the chicken. Serve warm.

Good morning all. Tom was supposed to come home last night but he was too tired. He is driving in now to work in NJ...so he will be here later. He is also working there on Monday so it will be nice to have him home.

Dinner will be sausage, pepper and onions subs and salad. The store has sausage on sale for $.99/lb...I could pass that up. I know they are high in fat but I parboil then grill them so some of the fat comes out, right? ;)
 
Good morning everyone! What a crazy week. Tomorrow will be a little busy with karate and errands. Then Sunday is a family get together.

Tonight dinner will probably be Costco's chicken since I have to stop there anyway tonight. They offered to make my dinner and who am I to refuse.;)

Dinner last night was SUPPOSED to be dinner out at Legal Seafoods, but there was a one hour wait for a table...no way was I waiting an hour! We came home and I made sausage and pepper subs. No picture.

WFD tonight: John is having a steak, and I am making a mac and cheese recipe that was on Pioneer Woman about a week ago. We'll also have a big salad.
 
Glynis -- Did the kids all make it through school? I'm glad they're doing better.

Oh, and please don't feel bad about your cleaning. I put away my Christmas stuff, but I haven't done my post-Christmas clean. My floors are a mess! It's driving me crazy, but with all the snow and sand, it isn't worth the time. They would just look awful again as soon as the kids came in the house.

Yes! The kids all made it through school, and are doing just fine! Must have been a fast-moving bug!

I hear you on the floors. With all the snow, sand, gravel, and mud my kids track in daily, it's all I can do to keep it swept. I'm hoping for some down time tomorrow that I can get the floors mopped, but if it doesn't happen, I'm ok with that!

TGIF - what a week this has been. First full week I have worked in over 6 weeks. I am pooped. We had year end reports due, statements to get out, Reporter out, Bulletins finished and Yearly Directory all but done. I wonder what I will do next week. Actually I have Monday off for MLK Jr. Birthday. And on Tuesday I have the 68 page Directory to collaite and get mailed out. Oh well thats all for another week.

Well tonight is the night and the butterflies are swarming big time for Matthew. I guess he is meeting her family. :scared1: I so hope they have fun.

Janice- That was very nice of Costco to make dinner. You know, my grandmother always said if people offered to do things for you and you always said no, they eventually will stop offering.

Ann- Glad the chicken came out well, Ron must have loved it. Did you use heavy cream or replace it with something else?

We are having a pioneer woman dinner tonight too, a white chili she posted a week or so ago. Thanks Becky and Glynis or I would have never discovered her site.

As evil as it is I did use the heavy whipping cream. It made a very rich thick yummy sauce.
