The What's For Dinner Thread - November '09(recipe index in OP)

I heard back from the doctor this morning, and found out that I do not have diabetes, thyroid problems, kidney disease, or any of the other things they tested my blood for. The only problem is really low iron. So, I'm back on the iron pills. I don't mind. All things considered, it's an easy fix.

Sorry I'm having time management issues. Glynis, I am glad you got good news and Kat I'm sorry you're not feeling well.

Dinner tonight was pan-seared salmon with Asian noodles and vegetables. It was really good, and it was on the table in 20 minutes. I still have so much to do this week...finish the shopping, start the baking, start the cleaning (not worth beginning before Thursday otherwise the house will just be a mess again come Friday) and we still have not decorated the tree. I think we are going to do that Christmas Eve.

Oh, and my cards did not go out today. I forgot where I sent them for printing :headache: so I went to the wrong place this morning and I didn't have time to get to the right store today. Tomorrow...

Ann - :hug: don't try to take on too much. Remember you do have two little ones, and that interferes with the ability to do what you usually do. Been there, done that.

Kat - sorry you're not feeling well.

WFD yesterday was supposed to be red beans & rice but we had frozen pizza.

We had frozen pizza yesterday too! Today was red beans and rice. It really is acceptable to eat them on days other than Monday.


Well round #2 is to hit late tonight into Christmas Day. We are forcasted to get 10 -12 + inches of snow with blizzard conditions. The ice is to start tonight. I am just praying that there is no ice because if there is we will likely lose electricity. And with living on a farm that is not a good thing. Can't even flush the toilet. We will have to chip ice and hand carry water to the cows and horses. Not a fun thing to do but oh so necessary. They can stand the snow and cold as long as there is water and food, they won't freeze to death. So my Christmas is on hold for the time being and we are all holding our breath to see what will really happen. It could be a very long next 3 days. Please say a prayer for us. I will check in when and if I can.

Good luck and of course prayers said and will continue. We've done without power before, but its usually after a hurricane. I'll take the heat any day over cold without power. And we certainly didn't have farm chores to handle.

Fingers crossed that I don't have the kidney problem. Went to the doctor for a check up and my blood pressure was high. Now, my Mom had high blood pressure, heart problems, high chlorestoral, etc., but I've been doing good. Since its a drastic change (and I kinda freaked out about it) the doctor ordered up some kidney tests. But she really thinks its just regular high blood pressure and gave me samples of a medicine to start after the test results are in, which will be a week or so. Plus she's doing a thyroid ultrasound because I have a nodule or something there. Yet more family history rears its ugly head. :headache: And all I went in for was because I'm due for my mammogram and my rosacea has been acting up. Geez, and I wonder why I don't like doctors :rolleyes:

Kathy is notorious for eating them on Mondays. It took me a few months to catch on to her pattern, but when I did this past spring, it became a bit of a running joke on here. I would get on and check the thread on my phone from work on Monday mornings to make sure the world was still on it's axis. :laughing:

I have read back....I can't remember all to post to though:sad2:...I'm a space cadet this morning. Between this annoying cold I have been fighting for 2 weeks+, My enemy visiting (not calling it my FRIEND!!) who arrived this morning, and this weird storm front hovering over us causing me a wicked migraine I can barely function to remember everything I have to get done around here.

Getting older stinks doesn't it?! :hug: My blood pressure was sky high when I went to the gyno. He told me to get a monitor & start checking it regularly. I haven't done that yet. I continue to have sporadic spikes with mine, but then I'll go in to the doc to get it checked & it'll be fine again. :confused3

Glynis, I'm glad the tests didn't find anything bad! I too would be happy taking the iron considering everything.:goodvibes

Nan, You'll be happy to know that my original meal schedule will stand. Angelina & Josh will come early & probably rush off after eating to visit his family. I'm not happy about that, but I'm going to try not to dwell on it.

Green Bean & Artichoke Casserole

Mashed Potatoes

Standing Rib Roast with au jus & horseradish sauce

Cherry Bounce Bread Pudding

Chocolate Cake


I know I've missed a bunch, but I've got to get going. PT this morning & then lots of errand running. I have to go pick up a package at the P.O., I'm wondering how long that's going to take? But I'm excited about getting it! My sweet husband decided to splurge on my Mom's gift! She has been talking about an Australian fire opal ring for years & he bought her one!! I can't wait to see it.
 
Gretchen- I'll be thinking of you this Christmas, it's certainly going to be a tough one. My grandmother had already got our Christmas gifts, it's going to be so weird to open them.

Hey All, just wanted to post to let you know that I am OK...just busy and kind of in a funk about DB. They did another series of tests and still did not pin point anything but did find something on the brain. They moved him to another hospital but not the better one...I think they want to keep him in the state of VT. He still has a fever and is not coming out of sedation. It just doesn't sound good. :sad1:

Sheryl- I hope my earlier post didn't sound like you were wrong to be upset about your Christmas plans, I just want you to able to enjoy your Christmas and not miss out on all the fun. I'm being a little grinchy myself, my inlaws always shrug their noses at the wine I buy, they only drink the wine they bring (I didn't think the hostess was required to open the wine brought as a gift) so this Christmas eve I'm not providing wine, I hope they like budwieser!

Every year I swear I am going to start Christmas shopping in January and have yet to do it! :headache: It is nuts out there! I meant to go out during lunch and couldn't, tomorrow morning I am going on my way to work.

Dinner tonight is a chicken pot pie. And maybe some hard liquor! :rolleyes:

Marilyn if I had to fight that crowd and shop for gifts, I'd need hard liquor too! Good luck.

Christmas day is brunch at one brothers and then an evening buffet at my oldest DBs. Looking forward to the side of beef, lobster casserole, and snail salad DM is making.

Dinner ended up being panini because I got home late from the hairdressers. I chopped all my hair off and I love it! I'll put up a photo on FB soon.

Here are the holiday menus:

Christmas Eve: no idea. I will be at John's folks and then his aunts. So, whatever they make. I'll be bringing wine to get me on an even keel. :laughing:

Christmas day brunch at Laura's: brie and chive strata, brown sugar bacon, fruit, Mom's Christmas rolls. I am not cooking anything, Laura does this meal.

Christmas dinner at my parents: Antipasto. My Dad is going in to the North End and buying everything. I think my only contributions are the wine and maybe a loaf of bread.

I have it easy this holiday!!

December 26th menu: rack of lamb, roasted fingerling potatoes with wild mushrooms and taleggio cheese (from this month's Martha Stewart), roasted brussel sprouts. I'll be making this meal. My Mom will be bringing pecan pie.

New Year's eve: still thinking about this one. I am definitely doing mini latkes topped with seared sea scallops in a chive-lemon beurre blanc, but that's all I have decided so far. It will be lots of hors d'oeuvres.

Dinner tonight: I have to go shopping after work with John to get Christmas gifts for his Mom and brother at Best Buy. I hate Best Buy at the holidays, ugh. I am hoping to have the keilbasa and pierogies I wanted to make last night for dinner this evening.

Also, thanks to everyone who sent me a card! I put them all up on display last night. I have so many that they cover the whole top of my liquor cabinet! :laughing:

Twice baked potatoes are done. Oreo truffle are made and rolled, I just need to dip them tomorrow.

I am an evil person, I conned my DM into getting what I need at WalMart. :rolleyes1

Got a little more of my baking done yesterday, not as much as I had hoped because I was just having one of those days. :headache:

I was making picture frames for people here at work and realized the back of the frames are missing. :confused: Not sure where they are and really didn't feel like tearing things apart to find them. I am off tomorrow so I may just run down to IKEA, I need a fix anyway :rotfl: and get another package of the frames and just use the backs of those and look for the others later. They are unfinished wood and I painted them and added wooden animals to them.

Then I was making the cookie cups and was trying to form the cups by molding the chocolate chip cookie dough in the mini muffin tins. :sad2: Didn't read the instructions before I started. You just drop the dough in the tin then when it comes out form the cup then. Once I realized that it went a little faster. :rotfl: I have a dough former that I got from Pampered Chef that worked really well.

After that I made peanut butter cookies, had the oven too high and didn't wait after I turned it down and the bottoms burned about half of them. :mad: Rather than throw them out I am going to cut off the bottoms, ice with chocolate and make sandwhiches with them.

After that, I was done!!!!!! I decided I am going to do a "Countdown" to the New Year and make the other things next week and bring in something differant every day. :thumbsup2
 
Dinner tonight is going to be crab legs, DM is on a seafood kick lately.

And I still do have to go shopping, I just didn't want to go to WalMart. :laughing: My dsis was bragging about the nice new clean one they now have near her house. :rolleyes:
