The What's For Dinner Thread - May '09(recipe index in OP)

I had a rough morning. I am losing things in my house due to packing and moving things around. First I couldn't find my skirt. Then it was a shirt I couldn't find. Then it was the shoes. Then, the hairbrush. Omg I was losing my patience and also running so late at that point that I didn't get coffee. Ugh! Then I get to work to find out that it is THURSDAY. Not in real life, of course. Just in this bizarre parallel universe I work in. Thursday is the only day I do not have a morning prep. Ugh! At least I was able to get a good amount of testing done. And I had to pull a kid off the fence but otherwise a decent morning.

The meeting this afternoon is by grade and we were supposed to meet in room 214. There is no 214. So we are meeting in my room instead since it has AC and we are pushing 90 today.

I am looking forward to the NYC meet, even though I don't know what we're doing! Kat, why don't you come up? ;) You could stay at my place...although not sure if you want to!

Have a good afternoon! I'm holding out hope that it will be better than my morning!

Hey Y'all,

Why is it cell phones never work properly when you really need them too. DH received a voice message that was sent around 2:00 yesterday & it didn't come through until 9:00 last night. The home health agency owner called to let him know that the aide wouldn't be coming, she was back in the ER. :confused3 Good news is she thinks she has found someone else for us. So we'll see how this works out.

I'm with Sheryl, those all sound good. And I'm getting really excited too!
Thank you so much! I really appreciate it, especially since we don't have a bookstore in my town and I'm too busy at work to go to B&N there. But if I have to read another dr's office two year old Golf or Sports Illustrated I might scream.
That is aggravating. I ran to Harris Teeter today on my lunch and picked up a few things. I specifically asked the bagger to put all the perishable items together so I could refrigerate them when I got to work. Well, he put my proscuitto in with the canned goods and because it was raining when I got out of the car, I didn't check the bags. So, yep, my proscuitto is in the trash! Grrrrrrrr.

BTW, one of Hailey's therapists needs some kind of Mary Kay lotion. I thought you did an order for Lauren. If I find out what kind of lotion, could you do an order for me?Not that I'm trying to butt in.....but are you thinking of doing some of the event-type things? Just curious since this will technically be the first F&W for me.

It sounds like Maria should send all of those books to you! You are in dire need of them!!!

Sorry about your proscuitto! Why does that always seem to happen with the expensive stuff?

Just let me know what she needs. If I have it in stock, I'll put it in the mail asap, if not I'll order it for her.

You're not butting in, we're all going to be planning together! We only did Party for the Senses last year and while it was nice it was just way too crowded and unorganized for the hefty price tag so we're not doing that again. We do all the kiosks in World Showcase and really enjoy them. We will have to check out the line-up and see what looks good so we can all plan!:thumbsup2

We could cruise the booths together. That's what we've done on our F&W meets. (with Becky & Laura, Bead Pirate, last year and the Nola girl meet we had 2 yrs ago.)

Also the food & wine pairing "lunches" are good deal & we've really enjoyed them. It's usually 3-4 small dishes paired with wines, it has run $40-$45.

Here is a photo of my dinner last night. The experiment with skewering the shrimp on sugar cane did not work out so well. I think I cut the skewers too thick, so it was hard to push them through the shrimp. Then, the sugarcane caught on fire on the grill! It was OK though, I just took the shrimp off the skewers and you could not tell that anything was wrong with them. They were marinated in coriander, soy, fish sauce, pepper, and ginger. The glaze I brushed on was a reduction of pineapple juice, honey, sambal oleok, white wine vinegar, and more ginger. It was yummy! Sweet and spicy both. I just put them on some arugula and that was dinner.

Tonight I am grilling a round of brie on a cedar plank. I think I am going to put some apricots, pistachios, and honey on it. I am also grilling some dates stuffed with parmesean cheese, and putting out a couple of pates and other cheeses, along with olives and a salad. Oh, and a baguette!

Becky, Those shrimp sound fantastic! Sorry the sugarcane didn't work, but the meal sure did. You are killing me with dinner tonight! Oh my gosh that sounds so good!

Sorry I can't do better catching up. My IBS was acting up last night & I didn't sleep well, so the brain isn't functioning very well today.

Bethany, Are you feeling any better?

Maria, Well how was Bruce?!!!

Vickie, Have fun with the boy today!

If the neighbor comes through with shrimp today, I think I might boil some for dinner. If not we'll have leftover brats, for a quick meal they sure were delicious! Even better with a new local brewsky I found last week. It was a micro-micro brewery's traditional german lager that was amazing. I have to go today & see if I can get more!

Have a good day friends!

Good morning, everyone! And I do mean GOOD! Alan and I made the decision yesterday that it's time to move Timothy out of our room and into his own crib.

:yay: I'm glad it went well and glad you got a good stretch of sleep!

Tonight we are having the smoked gouda and spinach stuffed chicken with sauteed zucchini and squash. Yum!

Wow, sounds like you could use a . Thanks so much for the sweet offer but my funds are extremely limited - trying to fund two households is breaking me fast. I'm so glad I set aside the money for our Disney trip and fortunately haven't had to touch it YET.:sad2:

I thought it was only my cell phone that did stupid things like that. I sure hope the aide situation works out this time, the last thing you need is added stress with the upcoming surgery.

Great ideas for F&W!!!!:thumbsup2

Ann~ please feel better, rest as much as you can, I'm thinking of you. If your up to a call let me know:hug:

Bethany~ Of course there will be eating:rotfl:I'm glad your feeling better but I think you need to keep yourself in all weekend, you missed pneumonia by a hair!

Becky~ you pics are beautiful & YUMMY!!!!!

Sheryl~ I hope this agency works out:hug:When I worked at an assisted living I was amazed at the stunts the agencies & those that worked for them pulled. Shameful~

Nancy, Marisa & Bethany~ I had another brainstorm! I could pick up Bethany & we could also head to Stamford & a place on the water.......

Vickie, please tell us the fish story AFTER Flying Fish! *remember they have chicken and pasta as well, don't let the menu scare you! I've been dreaming of the Argentinian beef they had last year at one of the kiosks, hope it's there again this year.

Gretchen & Sheryl~ I have the books all packed to go! I will make it to the post office tomorrow or Tuesday.

The concert was GREAT! He is just amazing! It wasn't outside in Giant Stadium because they are in the middle of tearing one down & opening the other so that was different & Bruce even commented it wasn't the same so he made the announcement he will be playing October 2nd at the new stadium!!! You know I'll be there. He did a really nice thing for the NJ Food Pantry last night, if you bought a bag of food they entered you into a raffle & you won artwork.
Great mix of songs, unbelievable energy, cute as he** & Greg laughs that I unlock my inner Jersey Girl because I dance & sing the entire time, great night!
Max Weinberg (drums) is no longer with the band after 35 years, I hope his cancer isn't back but his replacement is his son. Last year he played 3 songs with his Dad & now this year it's all him, he is unbelievable.....& only 18! I know too much Bruce info, can't help myself:)

Going to call the adoption agency for any updates...so please say a prayer.
Then watching SYTYCD BBL......

-burgers on the Weber kettle grill tonight.

- brined chicken halves on the WSM tomorrow, probably served with rice, and a salad

- BB ribs on the WSM on Sunday, probably served with beans cooked on the WSM, and some salad

- corned beef and cabbage on Monday(may smoke it on the WSM, or may just do it the S.Side Irish way, simmered). served with red potaotes

pics to follow here, or on my blog.

Beer is chilllin now, cant wait til about 5:30 when I get home to hang out on the deck, and enjoy 3 days off.

Thanks Kat, I do need that hug. The afternoon is not going much better. I was told I was being condescending because I smiled!

Good morning, everyone! And I do mean GOOD!

Vickie - I didn't know your boy played the viola. I play the violin! Tell him I'm proud of him for taking on difficult instrument!

Great night with Timmy...:thumbsup2

The Boy was the same,he settled so quickly in his own room.

The Boy really really wanted to learn guitar but his school doesnt teach that.We told him he could get private lessons but he would have to give up another activity. He loves his dancing, drama and Karate so that was a no-no.
The school then offered him viola and our thoughts were it would give him a good music base if he got guitar lesson in the future.

He now LOVES viola !!!

And he clearly has an ear for music.

:

I'm so sorry Vicki, I thought it was a funny story. I had no idea it was something traumatic. Please accept my apology.:flower3:

Oh Kathy dont apologies.

I can assure you it IS a very funny story...for everyone but me !! :rotfl2:

Got...to...find...a...way...to...get...to...f&w!!!!!

::yes::::yes::::yes::

Vickie -- How was the concert? I hope it went well. I am curious about your fish story as well.

The recital was so good....very proud mum !! :love

The weather stay good for the fair too so we had a great afternoon.

On my way to Ocean City, see you all later!

I hope you have a wonderful time !!

I can smell sea food at 100 paces.....

Still soooooooooooo jealous !!

Sendin love and good vibes ower the water...

Maria -- Have fun at the concert!

Sheryl -- I hope the aide shows up. Alexis is SO funny.

Ann -- I remember feeling like you do. You're almost there.

Ellen -- For Greg's first deployment, I set up email accounts for each of the kids so he could send them their own messages. It didn't really work out that time because he didn't have email access regularly, but I know things are much better now. Maybe Jay can send Ethan pictures.

I bought flounder for dinner, so I am pan frying it and making fish tacos. Hopefully, my avocado ripened up some sitting in the hot sun all afternoon.

Laura ~ That is a great idea. Actually they both bought new lap tops that are outfitted with web cameras. So they are able to real time talk. They are able to say prayers together before he goes to bed and he was able to hear about his last day at pre school. It is so different than the first time in 2003 when he went over. The idea of Face Book is a great one. I will pass that one on. We got him a digital camera so he will be able to download his pictures and send them home. Last time he had disposable cameras and they got sand in them so a lot of the pictures didn't come out. So very different this time. Thank the Lord!!!

Glynis ~ so glad to hear that Timmy was able to sleep and you to. The whole day just goes better if you can get some good sleep. Good for you.

Maria ~ I Love Bruce. You lucky duck you. I am so glad you had fun. You SO deserved it. Prayers are being said. Let us know.

Vickiy ~ I am glad you enjoyed your day and that the rain held off.

Sheryl ~ I just am so mad !! There is NO WAY that getting an aid should be this hard. You and Bob so deserve to be treated better than this. And they say we are in a recession and people need jobs. REALLY!!! I pray that the right one will find you, and when they do it will be a perfect fit.

KingCrab ~ I hate to ask, but what is WSM? Your meals sound wonderful. I just might have to get one of these WSM's. :rotfl2:

Bethany ~ Honey, I hope your day is going better. You should be almost over for the day. Please feel better - I worry about you.

Kat ~ Going to get my haircut is favorite thing for me. I am sure you are beautiful now. I have seen pictures - you are already beautiful - but I am hoping you enjoyed your day.

Nancy ~ Have fun at your party. I love Pampered Chef. I have really been thinking of becoming a consultant. It would fuel my trips to Disndy. :rolleyes1

Well I painted again at Stephanie & Marty's last night until 9:30. I am sore this morning. Up and down on that ladder really got to me. Tonight I am finishing the spare bedroom and upstairs bathroom and I am FINISHED. They want to move this weekend and I think we will let the youngens do it. We have spent every night there for the last 2 weeks. I want a bit of my Holiday. We shall see if that flys with them. Monday we are going to decorate graves, and that will take most of the day.

So dinner tonight will again be something on the run. I am so ready to be in my kitchen again. You have given me such good ideas and soon, real soon, I will be able to cook again.

Make it a great day my friends.

I'll post my fish story:

When I was a young girl, each summer, we'd go with my cousins to a family cabin in Yellowstone. My grandparents would meet us there, and we'd spend a week together. This cabin was wonderful! Electricity, running water, etc. Definitely not roughing it!

My grandfather was an avid fisherman, but he honestly believed that it was only a sport for boys. So, each morning, he'd take any of the boys out fishing early, early, early! Think dark thirty each morning. They'd come home before breakfast, clean the fish and cook them for breakfast.

One morning, they had caught a bumper crop of trout. Since it was raining, they decided to put the fish in the sink in the kitchen, and clean them when it stopped raining. I didn't know that. I got up and went to the kitchen to get a drink of water. Imagine my horror when I flipped on the light and saw a sink heaped high with fish, some of them still flopping around. I never touched trout again! Still can't.

Kingcrab - I forgot to welcome you to our family! Your meals sound incredible! Do you mind if I ask where you live? I, too, would like to know what WSM is.

.

sorry for the abbreviation, a (W)eber (S)mokey (M)ountain verticle smoker. I use that and also use an offset smoker at times.

thanks for the welcome, I live about 75 miles southwest of Chicago.

WSM = Weber Smokey Mountain smoker.

That is nice to hear what a difference new tech. can do for your family!! :goodvibes

Ellen don't be too mad, I can on to post new good news! :goodvibes

The new aide called and is coming by this evening to meet us. DH said she sounded "really on top of things, well spoken and a good listener." I told him not to tease me like that!!

The other aide has appendicitis. If the communication would have been there, we sure could have avoided a LOT of drama!

Ann, I hope you are feeling a bit better! Your girl must be in a hurry to meet the family!

Maria, Glad you had fun! Thanks for sending books, I will pass them on to Gretchen or anyone else who wants them. Also will reimburse you for postage.

Kingcrab, Your weekend of food sounds wonderful! I'm jealous, we are supposed to have rain here most of the weekend.

I have no idea now WFD. The neighbor hasn't come by with shrimp and my stomach hasn't allowed me out of the house yet. We are out of buns for the brats. :confused3

I don't want to really get my hopes up, but if this works out, I'm sure it will be due to the prayers & good wishes of all of my wonderful WFD & Nola girls!! :grouphug:

Kingcrab, Your weekend of food sounds wonderful! I'm jealous, we are supposed to have rain here most of the weekend.

thanks, there is a slight chance of rain maybe tomorrow, but I think we should be ok.

ran or not you still get to live in Louisina, I am jealous of that. New Orleans, Cajun/Creole food, and all those mudbugs.. :)

The concert was GREAT! He is just amazing!

Can never have too much of Bruce, IMO!

We are very lucky. I'm trying to decide what to have tonight between crawfish, soft shell crabs, roast beef po-boy.....tough choice!:goodvibes

Y'all who are close to great seafood would be ashamed but I'm really craving Red Lobster :rolleyes1 Seafood in my area is few and far between, there are 2-3 seafood restaurants total, so Red Lobster is about it. I keep craving their biscuits, thanks to the darn commericals! We may go there instead of cooking...

Can I ask for some prayers for Ace the Foster to get adopted soon? :flower3: Yesterday I was out of town for work, DH was in the shower, and Ace was eating the center of the living room chair. :sad2: Needless to say, I got one of "those" calls from DH and though he's calmed down a lot, Ace really needs to go to someplace that is open to a puppy. This is why we DON'T do puppies. My poor chair is ruined... and to make mends with DH, I think we're going to buy a new one instead of get this one reupholstered. He has already chosen one that he wants  Whatever works to smooth things over.
