The What's For Dinner Thread - March '11 (recipe index in OP)

Tonight's dinner was a success! I made creamy baked chicken taquitos. They are from the Our Best Bites blog. Very easy to make, and tasted yummy! Even Timothy ate 3 bites. Considering the fact that he doesn't eat, I'll take it as a win!

I've seen that posted all over the blog world for awhile but haven't gotten around to making them yet. Glad you liked them - they look delicious!!
 
Sour Cream Chicken Enchiladas are a big staple of Tex Mex food - but evidently it's mostly popular in North Texas :confused3 Regardless, they are one of our fave mexican dishes (DH's def fave) and I've looked for a long time for a real restaurant quality sour cream sauce. Found it! This is from a new blog I came across recently - The Homesick Texan. Just one of many I have marked to try of hers.

To cut down on time some more, you could always use shredded rotisserie chicken instead.

Sour Cream Chicken Enchiladas
For the filling:
Four boneless, skinless chicken breasts
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon olive oil
1/2 medium-sized onion, diced (I skipped - don't care for raw onions in my enchiladas)

For the sour cream sauce:
2 cloves of garlic, minced
2 Serrano chiles, diced
2 tablespoons of butter
2 tablespoons of flour
2 cups of chicken broth
2 cups of sour cream
1 teaspoon of cumin
1/4 cup chopped cilantro
8 fresh tomatillos, husks removed and cut in half or one 10 oz. can of tomatillos (I used canned - couldn't find fresh)
Dash of cayenne
Salt and pepper to taste

For the enchiladas
12 corn tortillas
1 tablespoon of canola oil
2 cups shredded Monterey Jack cheese
1/2 cup chopped cilantro

Preheat the oven to 350 degrees.

Sprinkle the chicken breasts on each side with the salt and black pepper. In a large cast-iron set on medium heat, and cook the chicken breasts on each side for three minutes. Place in the oven and bake for 30 minutes. When the chicken is done, take the chicken out of the oven and let cool. Then shred with two forks. Keep the oven on as you’ll be using it again.

While the chicken is baking, in a pot melt the butter. Throw in the diced Serrano chiles and cook until soft, about three or four minutes. Add the minced garlic and cook for another minute. Add the flour and cook for one more minute. Pour the chicken broth into the pot, and whisking constantly cook until chicken broth has thickened. Stir in the sour cream, cumin, cayenne and cilantro. Remove from heat.

If using fresh tomatillos, place them under the broiler on a foil-lined sheet and cook on each side until blackened, about four minutes per side. Place in a blender along with the sour cream sauce and puree into smooth. If using canned tomatillos, skip the broiler step and just place them in the blender with the sour cream sauce and proceed. (if you have an immersion blender, just add the tomatillos to your sour cream sauce and blend it that way)

Heat the canola oil in a skillet and cook the corn tortillas on each side a couple of minutes until soft. Wrap in a cloth to keep warm as you continue to cook all 12.

To assemble the enchiladas, pour one cup of the sour cream sauce in the bottom of a casserole pan. Take each corn tortilla and place in the middle about 1/3 cup of shredded chicken, 1 teaspoon of diced onions and 1 tablespoon of cheese.

Roll the tortillas around the filling and place the rolled tortillas seam side down in the casserole dish (I just reused my cast iron skillet to save dishes). Cover the enchiladas with the remaining sauce and cheese and bake at 350 for 25 minutes or until top is brown and bubbling.

Serve topped with chopped cilantro. Makes 12 enchiladas.
 
Running in briefly....As DH is HOME and it's a Tuesday, dinner is likely to be baked jacket potato and all the trimmings.

I play piano and guitar...and I like to think I sing a little....the emphasis on a little. DH plays drums; so we have quite a few instruments in the house here.

Ellen - Your weekend sounds nice and relaxing! How far away is Lincoln from your place?

Marilyn - hoarders house??? I think I know someone who might take some beating for Hoarder of the Year title.....:rolleyes:

Aimee - You got it right about the free drinks and opening of wallets. After a couple of alcoholic samples or six, my head was spinning and I needed some food to weigh me down! :rotfl:

Janice - That sounds like Rapunzel hair. WOW! And yes....baked potatoes with the usual trimmings was dinner tonight. What sort of toppings did the Food Network Mag recommend?


Lori - I'll bet you can try whatever cheese you want with the spuds. Most recipes that have cheese use gruyere but I think using a bluecheese mix sounds delightful.


Laura - nice to see you back! Hope life settles down a little for you so that you can make your way back to this thread more often.


Aimee - Love the taco seasoning. Gonna make me a batch this weekend.

Just a quick check in so you all don't think I forgot about you. Tomorrow is my Saturday so hopefully I will be able to catch up then. It has been crazy here and my husband has just discovered the computer so no computer time for me.

Morning, all!

It's a chilly Fall morning, here. It's also picture day, at school. So, I'm up early to make sure the clothes that the kids want to wear are pressed and ready to go. Also, Alan was snoring, and I couldn't sleep any more!

Since it feels like Fall, I'm going to make my first batch of oatmeal! As it's cooking, I'll add a little pumpkin and some pumpkin pie spice. It sounded good to me, and as my kids love pumpkin pie, I'm hoping they'll like it, too.

Dinner tonight will be baked spaghetti with garlic/parmesan rolls. Green salad on the side.

PIO ~ Thanks so much. Lincoln is 157 miles east of me. We live right on the interstate so from my exit to the exit we take in Lincoln it is excatly 2 hours - if we don't stop. Still too far in my opinion!! :rolleyes1

Robin ~ Hi there lady. Slow down some if you can. Why is this always the busiest time for all of us? I guess getting back in the swing of things throws us all off - just wait until they throw the time change in - that one always throws me for a loop.

Ethan had his first flag football game last night. Those little guys are so darn cute. It was a beautiful night. We ended up going for ice cream afterwards.

I was able to get my hedgeapples yesterday. I was so excited - I almost missed them. I got 8 and there were only 4 left. :woohoo: Oh it is so the little things that make me happy. :laughing:

The oatmeal was a definite keeper in our house!!! The kids all ate until there was nothing left for Alan! It was really simple, too!

I made my oatmeal like I usually do, then, just before serving, I added some brown sugar, 2 1/2 tablespoons pumpkin puree per person, and 1 1/2 teaspoons of pumpkin pie spice. I stirred it all up and it heated through. The smell was divine!!! The kids ran into the kitchen just to see what the smell was!

Next time I make it, I'll probably add some dates or raisins to it, as well. It would be heavenly with some toasted pecans, too! Definitely try it!!!

Jen - Feel better!!! I'm sending healing vibes through the computer!
 
Robin – Good to hear from you! I thought Johnny was the only man who hadn’t discovered the computer yet, lol!

Glynis – The pumpkin spiced oatmeal sounds yummy but it’s still too hot here for that. We don’t have “fall” we go right from summer to winter.

Ellen – I miss the days of watching the little ones play ball, they are so cute and fun to watch, enjoy!!!!

Kathy Walking tacos are regular taco meat with the fixings put into a Frito or Dorito bag (ind size) it is a camp favorite. We don't camp A can't handle bugs:rolleyes1 he is not a nature boy. Never has been even as a little guy. I remember he wanted to hold a worm I found in the garden. I put it in his hand and he turned green and start yelling for me to take it away. It pooped in his hand :lmao::rotfl2:

We love walking tacos! Although we call them camping tacos. We also do something similar for dessert with bags of teddy grahams, yogurt and sliced fruit.

That sounds so yummy, but it's so damn hot outside I can't imagine eating oatmeal! I'll have to file it away to make in a couple of months :laughing: I love oatmeal - so does DH. We eat it a lot when it's cold outside.


I'm making cajun tilapia with praline sauce over dirty rice. Will post if it's good!
 
Thanks for all of the well wishes. I've been fighting a migraine off and on all day. I woke up this morning and couldn't even walk.

And Aimee, on your recommendation from your blog, I spent a good chunk of today looking at the Homesick Texan's blog. OMG. I have a whole new crop of recipes!
