The What's For Dinner Thread - March '11 (recipe index in OP)

Hoping no one had any damage from the earthquake, crazy!!!!:scared1:

Nothing here, just rocked us pretty good for about 20-30 seconds. It's funny, when I realized what was happening I expected my coworker to freak out. She thought it was GREAT! :rotfl: She's never been through one before and was all happy.

Still in the middle of the crazy week so no cooking on my part. Tonight is leftover goolash DM made last night.

I spoke with Gretchen yesterday. I’m praying Hurricane Irene doesn’t affect them but it’s not looking good.:sad1:

It is hot hot hot out today. We are having an unusual hot streak going right now. It is to be in the upper 90's, high humidity and rain. Oh JOY!!!

We are getting a new 55" flat screen today for the living room. We are so excited. So as soon as dinner is over we are parking our fannies in front of the TV. :rolleyes1

WFDT ~ Spinach Tortellini, green salad (Doug calls them weeds :confused3 ) and garlic bread sticks.

Goofy (Jen?)- That lemon pie looks awsome, and definatly not what I expected. We are huge lemon lovers around here so we'll have to try it soon. We are going to try the mongolian beef also, I always had great luck with any of Aimee's recipes I've tried.

Today is my Saturday and it is the perfect summery fall day out. I also had my boss watch a presentation I gave yesterday and she was thrilled with it so I'm still on that high. The chance of me getting a year round job there is very slim, but that certainly will help if my boss likes my work.

Not sure on dinner tonight, but I know it will have a meat, veggie, and starch. Not sure that we've had a balanced meal in a while. Have a great day all, I know I will!

In the ongoing saga of this damn disease, I introduced some safe foods yesterday without any pain so things have calmed down. I'm going to steer clear of the old trigger food - salads, nuts, popcorn, fresh veg/fruit, etc for awhile.

We ate out last night but tonight I'm making tomato risotto. I really don't like raw tomatos but do like them cooked so I'm hoping it'll be tasty.

It's also meat free so we'll see what kind of reaction I get... :rolleyes1

Well, it's the first day of school here, and all went well this morning. Katie successfully got herself up at 6:00, and was ready in plenty of time to have breakfast before heading out to catch the bus at 7:30. I made breakfast banana splits, and they were a huge hit with all the kids. Who knew my picky eaters would like Greek yogurt?!? Good to know! Jacob and the twins headed out the door an hour later and it's just me and Timothy now. He's kind of lost, and asks almost repeatedly where the other kids are. I think he'll take a good nap, since he woke up about 3 hours before he usually does. Here's hoping! I'd like a nap myself!

Alan's first day of classes yesterday went really well. He's excited about his class load, and has worked his schedule out with his boss, so all is well there!

Dinner tonight will be a new one from the blog Our Best Bites... Tortellini Spinach Bake in a Creamy Lemon Sauce. I've had really good success with the recipes from that site, so I'm hoping this will be good, too.

Glad the first day of school went well. Dinner sounds yummy!

So, we just got done with dinner. (Aimee's mongolian beef!) Aimee, Aimee, Aimee...you naughty girl. That stuff is delicious. All during dinner, UncleR kept looking over at me and saying: "This is delicious! I love this!"

Big C and J loved it as well.

Anyways, we've officially adopted you as an honorary family member because we figure if you're "cooking" for us this often, you might as well be a member of the fam. :lmao:

Today was J's first day of school. He was incredibly nervous yesterday, but seemed to come home feeling good about it all. He's really excited about theater and ag.

I'm still in the throws of paperwork hell. :eek: I get to go tomorrow and meet all of my middle school kids who are in the self-contained classroom. I love those kids. :lovestruc

BTW, for those of you trying the lemon pie, go ahead and use 2 extra large lemons. We didn't like how the small lemons turned out in the pie. It results in more rind/less lemon ratio. So please use the big lemons instead.

Quick fly by....the boy started P7 yesterday.

Its the last year of what we call Primary school.
They have a bit more input and responsibility and he is enjoying it so far.
He has a P1 buddy who he spends break times with and he loves the wee laddie.

Work has been doing ma heid in, I was off on holiday last week and I actually could have cried yesterday at the thought of goin in

It was no better today and I have a feelin it could kick off tomorrow...some poor unfortunate could get Vickie'd.

Otto is doing okay I guess. I spoke to Deb ans she was taking him to the vet in Burlington. I think she wanted to increase his steroids to help his breathing. The fam is going to visit her this weekend so I will get more news.

I have to say that Buddy wants to take a flight in to visit your herd. He misses his animals more than I can say. He raised dairy replacements and there really is not a lot of money in that but I love those pretty Holsteins. They are my favorite cow. :cloud9: Jerseys are cute, like little deer and Guernseys are nice but I love Holsteins. Those big boned girls make me smile! But does he want to raise them?????? Noooooooooooooooooooo. He wants beef. I think Herefords. Did he ask me? No. I think he is afraid I want Angus but I don't like those fresh cows. :rolleyes1

Ellen - Congrats to Doug! And congrats on the tv. Our big one died a couple of days ago, and we're trying to decide what to do. We either need to bite the bullet and get a new one now, or wait until Black Friday and hope there's a good sale. Right now the kids can't do anything with the Wii, as it was hooked up to the big tv. We may move the Wii upstairs until Christmas, just as a stop gap solution!

We had a great day! There is a deer forest there and we were feeding then deer when all of a sudden they took off like their tails were on fire. At first we thought some kids frightened them but no one was after them. Marisa checked FB and there was an Earthquake post. I think that while we felt nothing those little surefooted animals did.

This was the cutest little zoo I have ever been to. It was clean. The animals were all in little habitats and well cared for. WE had a lot of fun!

And that is why we are having tomato sandwiches. I am on my second glass of wine, Buddy is still working and I have decided to be my good friend, Mrs B. :woohoo: I will spoil my wonderful hubby and let him have his favorite sandwich besides tuna......tomato!

My Dad was a Chef and a darn good one..............he was considered a Chef's Chef. (that is a good thing) and he would have just about drooled if he could eat some of my good friends in NOLA food. Buddy too..........those Cajun Tomatoes are on his bucket list :lmao:

We felt the earthquake here. The kids and I were sitting at the table eating ice cream and all of a sudden my water glass was shaking. It was the oddest feeling, but it was over so quickly, I didn't really think it was an earthquake. I didn't find out until I was at the skating rink that it was indeed an earthquake. We had dinner at my parents' house both last night and tonight. last night we had grilled kielbasa and tonight we had burgers.

I agree...it is tough to ruin wine, unless it is corked. Yuck.

Princess -- I am sorry for your loss. Your photographs are beautiful. I loved the ice skating photo where all the skaters were lined up but you only shot their skates. Very cool.

Glynis -- Is Katie in 8th grade or 9th this year? Good luck to Alan! And to you managing the new schedule.

I can sympathize with Katie and her feet. I have very wide feet and have never been able to buy the style of shoe I like but have to settle for what fits.

Some of the shoe styles that are out there, I have no idea who would be able to wear them. I have a small foot (size 6, regular width) and I have learned to always try shoes on because so many of them are cut in such a way that parts of my feet end up being squished.

Ellen -- I'm so glad you had a great birthday weekend. I can't believe Matthew is a senior already. Wow.

My mum never had it with me, I left home at 23 and was still writing letters and leavin out mince pies and milk for Santa. :laughing:

The movie was great although it was less of a comedy then most of us thought it was going to be.

My husband and daughter were going to make dinner on Sunday, the menu didn't appeal to me but I figured I would keep it to myself or the first time would also be the last! I ended up making it anyway though, long, funny story of my husband's good intentions- that failed miserably.

Aimee, I hope you are feeling a little better today. I really like tomato risotto. I have a nice recipe for cherry tomato and corn risotto, but i am guessing corn is one of your triggers?

Princess, beautiful skating shots! What kind of camera do you use?

WFD: Caprese salad sandwiches.

Shoe shopping went pretty well. She found some Converse sneakers and some pretty ballerina flats. She's pretty happy.
 
Katie's first day of 9th grade went well. She got to meet all of her teachers, and is really excited for French, Drama 2, Honors English and World History. She's not too excited for Geometry, but will suffer through it.

Leslie and Mary loved their 4th grade teacher today. I knew they would. She's wonderful!!! I think they'll really enjoy her style.

Our only down note was Jacob's day. He started out really well, but his class is in an older section of the building and has no a/c or windows. He said it got really hot. When Jacob gets hot he dehydrates almost instantly. Then he'll get a migraine and start throwing up. Luckily, he didn't throw up at school, but made it home first. He's huddled in my bed, now, trying to sleep off the migraine. Poor little guy! We've got a water bottle to send with him tomorrow to hopefully forestall any more migraines! I guess it got really hot in there. It was 97 outside, so you can imagine how hot an enclosed room with 28 students and one teacher could get!

I ended up not making the tortellini bake. Got too busy with Jacob's migraine, and Katie's back to school night. Instead, we are having scrambled eggs with creamed corn. Easy, fast and filling. Although, Becky's sandwich is calling my name!

Jen - I feel the same way about Aimee! I love her blog! Her recipes are amazing! Thanks for the note on the pie. I was wondering if the rind made the pie bitter, at all. I have a lemon pork chop recipe I like, but the rind can make it so bitter.

As far as the pie and the lemon rinds, that's why we changed our recommendation from using the small lemons to sticking with the 2 large lemons. The lemons are sugared, and that cuts through the bitterness, although there is still some tartness. With the smaller lemons, there was more rind, therefore there was a bit more bitterness and the texture wasn't as smooth. There was too much "chew" to the pie with the extra rind.

We (well, UncleR :lmao:) have made the pie several times. We thought the small lemons would allow for bite-size lemon pieces and would come out better. It just didn't. Use the big ones and slice 'em paper thin, they get tender as they sugar and bake. :thumbsup2
 
Hey y'all, I am hopelessly lost! I thought I posted yesterday. I tried to post earlier today. Our baby boy has turned in to a major screamer the past few days! I'm talking full out top of his lungs, face turns red, little hands in fist & back arched screaming! We can't figure out what's going on. Looks like a flat out temper tantrum but we're not ruling out anything at this point. It's been a rough week & it's only Tuesday!!!

We had leftover roast again tonight. I cooked a large roast, but only Chris & Alexis came over on Sunday.

Princess, Those pictures are great!! Love that you had some paid shots!! The skating pics were fantastic!!

Glynis, So sorry Jacob had such an awful hot day!:sad1: I hope he feels better quickly & the weather cools off for him! Are all of the classes in his grade in the un-aircondiitioned section of the school?

Laura, I'm sorry that you felt the quake, but kind of glad that you didn't realize what it was. That probably would have been much worse.

Aimee, I had wanted to say that I'm praying for you. I'm really hoping & praying that the inflammation just disappears!

Nan, I missed what thread you're talking about. I don't have time to do anything but check in here & that seems to be only occasionally.

However, I certainly do remember the cajun food bashing! If I remember correctly, it was lowland & not considered fine cuisine at all! :rolleyes1

The thread is about a bridal shop manager who refused to sell a wedding gown to a woman once she found that the woman was gay. It was legal for the women to marry in that state but that did not seem to matter. I am having a hard time understanding how some posters still think it is legal for a business owner to refuse to provide service to someone for any reason, "even bigotry".

I have issues with people who think their narrow opinion is the way it should be. Don't get me started on the narrow minds I work with. They are constantly commenting on the President. I may have to go all Vickie on them.pirate:

Our school dist is in the news they have cut the bus route down to pickup and drop off at elementary and middle schools only. The kids have to walk to the closest school. Some are up to a mile and half away. I am going to be sooooooo Happy when A is out of this District.:mad:

Robin - Dinner made by someone else is always preferable to making it yourself...unless you have to clean up after them. But then I remember when DH and I first got married and DH didn't know how to cook. I lived through 6 months.....not sure how....but I got through the overcooked, burnt, undercooked, burnt, bland, burnt, spicy, burnt, terrible, burnt food that DH ...er....cooked.

Kat - My Tuesday cooked dinners by DH are sacrosanct. Definitely not rocking that boat. Dinner made by someone else is always preferable to making it myself...;)

Jen - Whilst I appreciate you and your sentiments about your new best friend, how about I adopt you? That way, you can make my dinners for me. Afterall....Dinner made by someone else is always preferable to making it myself. :rolleyes1

Janice- That's going to be a long walk in the winter or in the rain. I hope A doesn't have to walk that far.

Sheryl- Sorry Jude (and everyone else!) is having a hard time. Hope he's back to normal soon. It's heartbreaking not knowing what's bothering them.

Laura- I didn't notice the earthquake at all, but I took my shower late in the day and when I got out of the bathroom the dog was right next to the door shaking, so I think he might have noticed.

Nancy- Hereford's are huge, aren't they? I have half a Scottish highland steer in my freezer, very tasty and naturally heart healthy. I love them and love their attitude. Granted the ones I know are around people daily from birth and are treated like pets. So I vote for highland beef.

Although my presentation went well, it doesn't really mean anything. My bosses (I have a few) would love to hire me, buy our hiring process is pretty screwy and there just aren't any open positions. Due to budget, even when people retire those positions probably won't be refilled. On that note, I am applying for a year round job somewhere else which would be an good, year round postition so wish me luck.

I have a busy day today, I need to get that application finished, meet with our builder, and now I need to fit in some basic hurricane prep. I should probably figure out what's for dinner too.
