The What's For Dinner Thread - March '11 (recipe index in OP)

Hey, all! Sorry for yet another drive-by, but life's been nutty and for some reason I just can't get going. I am sleeping very well at night but remain sleepy during the day. I'm blaming it on the heat, lol.

The food went over very well! My SIL came over yesterday morning to get her food. I was showing her the cake and told her she had a quart of homemade ice cream to go with it. She laughed and said she doesn't know if I'm evil or amazing, lol. I got a kick out it. I hope they like the ice cream. I make it with a custard base and took it a little further than I normally do. The result was some pretty rich ice cream. Mmmmmmm!

Today I am making Kitten Cajun Pasta. Any old timer WFDers remember that one? It's the jambalaya pasta that's one of my husband's favorites. I'm going to try and get my butt in gear and go work out here in a little while. Hopefully that will help my energy level. I need something, that's for sure.

Doug and I are loving the fruits of the gardens. That is one (of the many) perks of working at the church. Many parishioners bring in their bounty to share. I LOVE IT!!! Yesterday I got zucchini, yellow squash, tomatoes, cucumbers, green beans and sweet corn. YUM!!!

Well today is the day we should find out the sex of our 2nd grandbaby. Elizabeth and Jay are going to the doctor this afternoon and they have been told that they should be able to see what "it" is. I will keep you informed.

I am so sorry about the vacation problem. I know how that feels, I am having a major Disney withdrawal :sick:

I love farm fresh veggies! Standing in on babywatch!

And tonight is our anniversary so we have reservations at a fabulous newish restaurant which was named as Bon Appetit's top 10 best new restaurants nationwide. Can't wait!

So it was DS' birthday this week and without knowing how, we seem to have gotten into a pattern of a 4-fold celebration. That's 4 cakes which I promised to share on this thread.


Cake #1 - At DS' party with friends, at the weekend. Vanilla Lemon cake.

Cake #2 - At home with us, on the day. Decadent Chocolate Mud Cake (I got the individual serves instead of a whole cake - no leftovers for unwanted snacking!).

Cake #3 - At school with his classmates. You've already seen these Vanilla Cupcakes with butter frosting.

Cake #4 - At my mum's with the extended family, Wednesday night dinner. Frozen Goodness Ice Cream cake.

This is a tradition I could get used to :upsidedow

Dinner was late last night. I grilled burgers and served with salad, grilled onion slices, brocolli, and fresh corn for Buddy.

We weigh in and then I am visiting our friend who lost her DH last month. I want to bring some lovely memory lamps for the two girls and for Kim. They are beautiful and I hope they like them

I have sad Otto news. The vet had taken some tests that took over a week to get teh results back. Debbie found out this weekend that her little buddy's cancer has spread to his liver so she has opted not to continue treatment. She brought all of teh lab results to her vet in VT and they felt that the little guy would not benefit from the treatment and he would only be sick, Honestly, she was not thrilled about the treatment in the first place and felt that it would only diminish his quality of life. The vet has given her meds to help him but she is devastated for her friend. The worst part is that we are all so far away from her and she has just moved to this outpost so there are not real close friends nearby. We are setting up a visitating schedule and I hope to be able to get there soon. This is Buddy's busy time though so :confused3
 
I am having time management troubles :confused3. I am not sure what my problem is. Dinners have been thrown together. I think Mr A is starting a revolt.
I am falling behind here too. I am trying to read but forgetting what I read, I am apologizing for being a rotten friend.


WFD is grilled burgers and mac n cheese. to appease the savages.;)

Janice - You are such a great friend, don't ever apologize. Life just gets in the way and messes with us to keep us on our toes.;)

WFD – French onion Salisbury steaks, mashed potatoes and a roasted beet salad.

I rememeber how it was for your Little Girl. :sad1: I think tha deb is willing to do whatever it takes to meke sure that Otto does not suffer. The vet gave her steroids to make him more comfortable. She needs to watch him because the tumers in his throat make him choke so that it the first problem. She spent several hours on Monday or Tuesday, (I forget what day is what lately) so she knows that she will need to make that horribel decision soon. Dan told me that the vet thinks Otto only has a few weeks before the cancer spreads too much. :sad1::sad1: I remember taking Buster back and forth to the vet all the while trying to make sure that I was treating him the right way. For me it was when he would not eat, that little boy loved his food and when I could nto coax him to eat at all I knew that if I prolonged this he would suffer. He was not in pain though, not that the vet cuold tell. I know deb will fall apart if her little pal is hurting.

She will know when she needs to make that decision. I knew when I had to let my girl go. It was one of the hardest things I've ever done but I knew I had to for my baby girl.:hug:

Well yesterday was a bust - I will quote the 2 messages Elizabeth posted on Facebook - one was a status and one was a response.

"Dear Little baby we would love to know what you are! So on aug. 31 PLEASE uncross your legs!!! Thank You Mom and Dad, & especially Your Big Brother Ethan!"

"Another NO go...it has to be a girl because she's such a lady! She will not spread her little leggies! Ethan had his legs wide apart like look at me, I'm a boy =] We will try again aug. 31."

She is starting to feel a bit better and is more like herself so for that I am so thankful. The Doctor says everything is as it should be. Praise the Lord!!

Stephanie sees the doctor on August 24. Can't wait for that one. Hopefully they will hear a heartbeat, I know it will be early but that always makes it so real.

Another cool and rainy day - of course it is - it Golf day!! Hopefully it will clear up this afternoon.

Thanks everyone for the well wishes on the root canal. The procedure was almost painless!!! The dentist said that I probably wasn't put on antibiotics beforehand the last time. He said it's necessary to reduce the inflammation & pressure inside the tooth first. I can't remember, but regardless I'm happy that it didn't hurt! Kind of sore now, but the meds are helping.

Ellen, Congratulations!!!! :banana: TWO grandbabies!! What a wonderful blessing! I hope Elizabeth gets her answer next time around. Maybe it is a girl, I know Jude was all out there for the world to see!

On Tuesday I cooked a a new version that we've never had before. White beans with shrimp, an Emeril recipe. Bob ate it last night & was talking to his plate! lol! Then again, the man loves his beans!

Dinner tonight will be leftover beans.

So glad the root canal went so smoothly! Yep, I'm Julie, and I have been insanely busy. The canning was fun. So far I have 8 pints of tomato items (salsa and bruschetta). We've been hard core cleaning and reorganizing and now my dog is terribly upset. It took him 40 minutes to work up the courage to get a drink from his dish, and we didn't move it!!

What was the Emeril recipe called???

I'm glad this week is over so that I can run from one busy long week into another busier jam-packed weekend. Don't know whether I'll have time to cook this weekend but as I'm heading to the market and getting seafood, I am determined to try to get some seafood chowder (and that shot for Clambake Related) done! :laughing:
 
Sheryl – I’m so glad your procedure went well!:hug: It’s odd that your dentist said that because I wasn’t put on an antibiotic for either of mine and they were both pretty much pain free.:confused: I’ve never tried the beans & shrimp together, may need to check that out! The video of Jude “talking” on facebook is the sweetest thing I’ve ever seen.:cloud9:

This is my 2nd to last weekend before I go back to work on the 15th. :scared1: Where did the summer go?

Today, I'm cooking for the first time since being back home...with assistance from my favorite sous chef. :teeth: We're having posole...easy, comforting, and just what I need to make me feel better.

Sorry I didn't get back in yesterday. The day got completely away from me, and before I knew it, it was 4 and time to go home. Is it just me or did this week - heck the summer - just fly by. I can't believe school is to start here in less than 2 weeks. Where did my summer go? But I totally have to agree with Kat - I am so ready for football to start!!

Sheryl ~ I am so glad to hear that you got through with no pain. I thought of you all day yesterday. Hope you are feeling much better this morning.

Kat ~ I agree - You have NO idea how I wish we were closer. Doug and I were so dissapointed that we couldn't go in October, but we have talked about a cruise with us leaving from NO. If so maybe we could get together for dinner some night. I am determined to meet you someday!!

We got about a 1 1/2 of rain last night. It was a welcome sight as the fields, lawns, and gardens were really needing a good drink.

Friends, What photo uploading program are y'all using? I have lots of pics I haven't posted lately because photobucket is just a huge PITA!!

I've used Shutterfly forever and just stay with it, since years of pics are hosted on there already. Super easy to use.

I have just had the worst 3 minutes of my life !!
Colin thinks the balance for our October trip is due soon so asked me to call Disney.
He left out some paper work with the ressie number on it.
I called and the the girl said " Oh that bookin has been cancelled,yes,there is a cancelled notice on it !! " :scared1:
I frantically started readin my papers and right there on the bottom ......CANCELLED

I swear the room started to spin I thot I was gonnae throw up then little Miss Sunshine pipes up with " Oh no wait, there is a note and another number here and that seems to be fine, oh yes here you are ha ha not cancelled after all "

When it rains it pours, but in a good way this time. Kyle has been unemployed for over a month and got two job offers over the weekend. He went to orientation for one this morning and has first contact with the other early next week. Whichever one is the most flexible and willing to work around his classes and baseball will be the one.:goodvibes

I tried to go back and pick up posts I missed and I'm so sorry if I still missed some.

DH is trying to leave town - his flight has now been delayed 2 hours so he's actually still at the airport - but he's supposed to be at a family reunion this weekend. Which means I have 2 full days with NO schedule, NO work, NO other person to consult, and I love it! I had big plans for today and instead, I've slept more than I've been awake. And I refuse to feel guilty about it.

My mom called and wanted to bring over some steaks she bought so I could grill them. I'm going to do a roasted green chile cheese grits and grilled zucchini/squash to go with them. It'll be nice to have just a night with the two of us.

I need to finish decluttering my house. I am starting to think I might have hoarding issues. I have stacks of magazine that I am having a hard time letting go off. They food magazines :worship: I am going to try the tough love approach and just pitch them anything older that 3 months goes :eek:

I am on my own for dinner not sure yet what I am having.

Good morning - idea for those magazines.. I had the same problem, so I went thru them, picked my fave recipes, copied on my printer, then put them in a 3 ring binder.. It worked great! So now I have a huge binder, with dividers for chicken, beef, etc etc... Have a great day!
