The What's For Dinner Thread - March '11 (recipe index in OP)

You need to stop eating such amazing food! I'm extremely jealous as I've been eating road food for the last four days.

I just need to stop eating PERIOD! I'm gaining too much weight!

This weekend has been quite a rush and yesterday I ended up making cupcakes for DS to take to school to share with his classmates. I made them in between rushing between activities and concerts.....so I didn't take any pictures of the process during the cooking.

I also thought that I had previously posted a cupcake recipe on the thread so I left the camera in the bag. Turns out that I have posted a cupcake recipe....chocolate! I'm definitely getting old(er)!. :headache:


WFDT - We thought we would celebrating dinner out with DS. Turns out he wants either McD or KFC for dinner! All the efforts of educating his palate....:sad2:.
It's takeaway noodles for me!
 
Vanilla Cupcakes


We made these for DS to take to school and share with his classmates. When I picked him up from school, about 6 of his classmates told me that they were great cupcakes!

Ingredients:

  • Butter - softened, 200g
  • Caster sugar, 375g
  • Eggs, 4
  • Vanilla essence or extract, about 1/2 teaspoon
  • Self Raising Flour, 410g
  • Milk, 1 cup


Preheat oven to 180 C.

Cream the butter, sugar and vanilla essence together until light and fluffy.
Add the eggs, one at a time, and beat until just combined.
Add the flour and milk alternatively, with the flour as the last addition, and stir until smooth.

Spoon mixture into (optional - patty cases in) muffin trays.

Bake for 15 - 20 minutes. Remove from trays and cool on wire rack.

Makes about 24 moderately large cupcakes.
NOTE: I have stretched it to 30, if you decide to make them a little smaller.


Butter Frosting

  • Butter - softened, 200g
  • Icing sugar - sifted, 6 cups
  • Milk, a little less than 1/2 cup
  • Food colouring - as you like


Beat the butter until pale and fluffy. Add the icing sugar whilst beating.
Add the milk and mix until combined.

You can divide the frosting into smaller bowls and colour as you like.

Decorate the completely cooled cupcakes as you like.

Morning, friends! I have a crazy busy day of cleaning ahead of me. Here in a few minutes I am going to get a Glynis roast started in the crockpot. It's always a winner.

I am making Kevin and Amanda dinner this week. I am making it tomorrow and she's picking it up Wednesday morning. I am making her my grandmother's beef stew, (recipe later) cornbread, vanilla chip cake, and some homemade ice cream. I got a CuisineArt ice cream maker last year and haven't busted it out this year so I was looking for an excuse :)

ETA: We have a couple of cats that stop by first thing in the morning to get fed. I stopped in the middle of typing to give Scott a hand. I turned on the back porch light and opened the door. He started out and I said, "Stop! DO NOT MOVE!" There was a huuuuuuuuuuuuuuuuge spider web right smack in front of the door with the biggest spider in it I have ever seen. He would have walked right into it if I hadn't spotted it. *shudder* He went and got the broom and took care of it. I just about had a heart attack just now. That thing came up overnight. *off to go change my drawers*
 
Good Morning! Quick fly by before I have to blow my nose again! I guess I've got another cold...ugh!

Dinner tonight will be Asian Peanut Noodles with Chicken, salad and the peanut butter pie.

I had a shower yesterday morning and after drying my hair,pottering around my bedroom and making the boys bed I went back in to the bathroom and walked right into a spiders web !!
I know it wasnt there before because it was right at the door, my first thot was " what the heck size aff spider can make a web in that time "....

Actually no, my first thot was " AAAAAAAAAAAAAAHHHHHHHHHHH " :scared1:


The boy made his trainin last night.
He was determind.
His foot was still sore but after the wee scone sitting with his foot in a bucket of frozen peas for hours I never had the heart to stop him.

He loved it,was totally buzzin.
I got the chance to speak to some of the crew and they are just as excited for him to train too.
They are all in there 20's but are really nice young guys and I know they will help him improve and watch out for him.
They seem to all get such a kick out of helpin each other....quite rare these days.

I had a really bad night last night,next to no sleep so Im strugglin today.
Have a good one lassies and hope to be back later.

We're home from Great Wolf. And I am WORN OUT from yesterday. Plus, I wrenched my back out on the water slide yesterday. :lmao: So I didn't even swim this morning.

J loooooved Great Wolf. He's never been to a water park and these were his first water slides. Couldn't get him and my BIL, Bic C, off of the slides. :rotfl2:

We ate some good food yesterday...at a restaurant called Tolbert's in Grapevine. We went out at the hotel last night and stopped by Cotton Patch for lunch on our way home. Uncle Remus says her favorite part was the (from a box) mashed potatoes at the hotel last night. *faint* They looked like glue...she liked 'em because they tasted like a salt lick. :rotfl:

This week is a big week for me, so I'm going to be running around like a mad woman this evening. :goodvibes

WFD: Subway sandwiches...because sometimes you need some Subway. :goodvibes

Princess, That is the prettiest cupcakes!

Spiders... Bob keeps trying to tell me that we haven't had any roaches because we have a serious problem with spiders. I'm not buying it!

I've been having tooth pain all weekend. Was able to get into the dentist first thing this morning. I have to have a root canal on Wednesday!:scared1: I have not had one in years, it was the worst pain I've ever had. I swore I'd have another baby with natural childbirth before I'd have another root canal!! If I still had a uterus, I'd try to make a deal!!


Friends, What photo uploading program are y'all using? I have lots of pics I haven't posted lately because photobucket is just a huge PITA!!
 
I am also a terrible friend lately. I have horrible time management skills and they are worse now than ever!

I do not miss this~ No ther is a cure..............take my advice..WINE WINE WINE. My nephews were about A's age when I completely gave up on shopping for birthdays and Christmas. We came to an agreement. Money for them and no headache for me :woohoo:

Marisa hits all of the sales and generally drags the bunch of us with her. Then she hauls in boxes of supplies to the teacher and has boxes in her storage for use in January. The teachers think she walks on water ;)

We have been eating here. Friday night I thawed out some of the bacon from the pork Buddy bought and it was delicious! He said he has another comin in the Fall:thumbsup2 BLT's for Buddy and a dinner salad for me.

Saturday night we attended a retirement pary for a friend. The food was okay. My fruit salad was the only thhing that was not a heavy choice. Nothing on my diet, it was all summer pot luck picnic food. I prefer a traditional cookout and not so much crockpot stuff but that did not stop me from hopping off of the diet train and trying every bit out there:rotfl2:

Sunday was an awesome day spent with friends. We have a deal.they entertain us in teh Summer in their backyard retreat and we take over come fall and Winter in our cozy warm greatroom. Started out with glazed meatballs and kielbasa bites and cheese and crackers. Grilled ribeyes, mashed potatoes, cole slaw and some kind of stuffing. There was also corn and a huge green salad. I made the blueberry dump cake. Malibu bay Breezes pulled me to the Islands with Becky and Laura ;)

Monday I made a summer veggie Rattatouille kind of side, grilled pork chops and a big salad. Buddy enjoyed fresh corn on the cpb. It was beautiful!

Otto Update: Debbie sends her heartfelt thanks for all of your kind well wishes! Otto had his first round of chemo and seemed to be okay with that. The cancer seems to be confined to his lymph nodes and the vet feels that it is the kind that will respond to the treatments so they are giving it a go. Daniel and Erica went with Gail to bring him home to her this weekend. SHe has not much cell service there and is so far out there is no tlandline so I will talk to dan today to see how it all went.
 
Tuesday evening fly-by.

My dining schedule is not working out this last couple of days. We've been thrown out by DS' birthday and also because there was an event at his school resulting in us having to be there for a concert between 2 - 3.30 pm and again between 6 - 7.30 pm.

In between 3.30 and 6 pm, we had to take him to piano class. So, no baked potato for me tonight. We ended up with sushi for dinner. Looks like we're having the potatoes on Thursday night instead.....


Wonder how they will feel if I decide to make that Smashed Potato instead? :rolleyes1


Sheryl - I'm using photobucket for my pictures. I did also start an account on Flikr because photobucket was so flaky. In the end, I resorted to using photobucket via Firefox instead of Internet Explorer. It seems to be more stable on Firefox.
I've now subscribed to Photobucket...looks like I'm staying with the application for a while.

I haven’t read back yet – swamped at work. But I will - and catch up with you all AGAIN!!

We have done a complete in House Audit for 2010 since the staff change. It has been a LONG long process and it is finally finished. I met with auditors all day yesterday to get my books in order. :upsidedow

As you all know, our oldest daughter, Elizabeth (and Jay) is expecting our second grandbaby in December.

She has been so sick - 24/7 - with morning sickness. This pregnancy has not been easy at all, but she is handling it like a trooper and knows the outcome will be worth all of the discomfort.

Well on Sunday at the family dinner Stephanie (and Marty) announced that they are pregnant also. :banana: :yay: :dance3: We are thrilled!! They are due in March. So she is about 7 weeks along. Feeling ok at this point, so I hope it is an easy one.

As little girls they always said they wanted to be pregnant at the same time and have their children grow up close. Wow, it really is going to happen.

Please if you can, keep both of the girls in your prayers. As a Momma I now have double blessings but also double worries.


We had a wonderful weekend. The Boys golfed all weekend in a Local Tournament and did pretty good. They had fun, so that is all that counts.

It is HOT HOT HOT out there today. I am so over summer and this humidity. I haven't had a good hair day in weeks. The heat index is to top 113 today. With a relative humidity of 73%!!

WFDT ~ Chicken salad stuffed tomatoes, cucumbers, cantalope, culiflower with ranch and cheese crackers with sun tea.

Colin thinks the balance for our October trip is due soon so asked me to call Disney.
He left out some paper work with the ressie number on it.
I called and the the girl said " Oh that bookin has been cancelled,yes,there is a cancelled notice on it !! " :scared1:
I frantically started readin my papers and right there on the bottom ......CANCELLED

I swear the room started to spin I thot I was gonnae throw up then little Miss Sunshine pipes up with " Oh no wait, there is a note and another number here and that seems to be fine, oh yes here you are ha ha not cancelled after all "

HA HA...HA - Bloody HA.... I'll tell ye, that lassie has no idea how lucky she is that she is ower the water. :mad:

When it rains it pours, but in a good way this time. Kyle has been unemployed for over a month and got two job offers over the weekend. He went to orientation for one this morning and has first contact with the other early next week. Whichever one is the most flexible and willing to work around his classes and baseball will be the one.:goodvibes
