Fish Pie


Today was one of those Saturdays where I go to the Vic Market; and the snapper looked fantastic. I decided to get something even though I wasn’t sure what I was going to cook with it. It wasn’t till after breakfast that I decided to make a Fish Pie.

My starting ingredients:

  • Snapper, 400 g
  • Raw Prawns, handful – peeled and deveined
  • Carrot, 1 – diced
  • Leek, 1 – finely sliced
  • Spinach, 100 to 200 g – wilted in hot, boiling water and then chopped
  • Potatoes, 4 – boiled for mash
  • Eggs, 3 – hard boiled and cut into quarters
  • Milk, 450 ml
  • Butter, 50 g
  • Flour, 2 tablespoon
  • Salt and Pepper


I didn't have any herbs; otherwise I would have added some to the dish. Wish I had thought of making the pie earlier so that I could have picked up some dill at the market.




Pre-heat the oven to 180 C.

Gently poach the fish in the milk for about 2 minutes each side, until the fish starts to flake apart.

Remove fish from the milk. Flake the fish with a fork. Reserve the milk for later.

Fry the carrots and leeks for about 4 minutes and reserve for later.

Heat the butter and the flour together to make a roué. I chose to use the frying pan for this.

When bubbling, add the reserved milk and quickly whisk to mix it all in to avoid lumps.

Continue heating on a low flame and stirring until the white sauce thickens. I like to cook my white sauce until I get to this consistency. Remove from heat.

Add the flaked fish, the cooked vegetables, the wilted chopped spinach (with all water squeezed out) and the raw prawns to the white sauce.

Mix together and then add the eggs. Gently combine so that the eggs do not break apart.

Place the fish pie filling into an oven-proof dish. Put the mashed potato over the filling and make a pattern using a fork.

Cook in the oven (180 C) for 30 minutes or until the potato is browned.

Serve with whatever sides you like.

Finally catching up on the news!


Aimee - Even if you're not cooking, I'm sure that we all appreciate you checking in to let us know how you're doing.

Where'sPiglet - Hope you fully recover soon. We had 14 years of drought before the floods this last summer. I think I'll keep the rain exactly where it is right now...:rotfl:. Our winters are pretty good. The nights can get down to the 30's; but that's the exception, not the rule. Most times we're in the 40's at night. During the day, the usual winter temperature is mid 50 - 60's. The rare days are when the daytime temperature is low 50's.

Laura - glad to see that you're enjoying the job; even if you need to get off the chair! I know the feeling! :surfweb:

Lauren - Congrats on you and A making it through the school year. Here's to you surviving the summer break.

OKWMom - 14 girls??? :faint:

Hersey - YAY! That's a nice grade that A finished up with.

BCB - Geocaching? That's the new game taking over, isn't it? Do you find anything exciting and was the new X-men movie good? Getting to page 250 is one thing...finishing LAST is another. Janice – Congrats to A, you must be so proud!!!!!

Laura – I put off getting a smart phone as long as I possibly could. Yesterday if you’d have asked me how I liked it I would have told you that I hated it and was getting ready to ship it right back to Verizon. Today I’ve warmed up to it a bit, I even downloaded a song. I still have a long way to go before I can actually say I like it.:confused:

Bethany – You’d better get to the doc if you still feel bad.:hug:

Marilyn – I was getting excited about the entertainment until you said it wasn’t naughty!:laughing:


WFD - Nan's scallop scampi over angel hair pasta and a spinach salad.
 
Princess, geocaching is more like an activity than a game. Sometimes it is a lot of hard work / exercise. Basically think treasure hunt using a portable GPS.

We didn't get to the movies or geocaching.... now going to to a framer's market. Looking to buy Beef Tongue.... not an easy task where I live.
 

We ended up with spaghetti and Italian sausage, salad for dinner.

For the better part of yesterday is was very humid and in the high 90's then a thunderstorm with the cold front moved through and the temps dropped 20 degrees.

I had plans to work outside yesterday and for the most part I did. I trimmed up the bushes. I wish I could win the lottery and have my front yard redesigned. I have some planting to do today. I hope my arms will let me.

Dinner will be something easy maybe sausage and cheese sandwiches.

Now that the worst is over at work I can pay more attention here and also at home, this place is more of a mess than usual. :sad2:

Last night for dinner, MiL came over. So, we had cauliflower soup. Just onion, cauliflower, stock and a tablespoon of curry powder (don't tell MiL). She prefers lighter foods; so I didn't even add potato to the base at all. I have some pictures, which I'll load up at some stage.

Yes, that is what I had. It took forever to send a message!

I had a pretty busy weekend. Yesterday we had grilled salmon with a cucmber dill sauce, fingerling potatoes and asparagus. Saturday was really busy so we just had grilled pizzas. I have some photos but have not uploaded them yet.

WFD: It depends. I have some chicken marinating but it was frozen yesterday so if it has not thawed out by the time I get home I'll be making mushroom sandwiches.

I turned that flap steak into fajitas.... good taste.

No idea on dinner tonight yet, but lunch is pretty tasty, though I imagine some people wouldn't enjoy it.... a huge bowl of sauerkraut with ketchup!

Kathy I am around just really busy. This is Mr A last couple of days, Finals. Wednesday is his last Final. Tomorrow is another big test Chemistry. He should do well he just stress which make me stress. He told me earlier he is being recommended for Honors lunch. :lmao: Got to love a kid with a sense of humor.

WFD is going to be on the fly lots to do.

Beef Loin Flap Steak

Never heard of it. Fajitas sound like a good solution though. I'll pass on the sauerkraut and ketchup though.

Dinner tonight was sauteed chicken, onions and peppers, wild rice, and black beans. Liam made that into a burrito. Caili had the chicken, rice and vegetables, and I topped my chicken with guacamole. It was pretty good.

I bought a bunch of cheese on clearance that I wanted to use up so I am making mac and cheese tonight. DH came in, balked at the thought of a meat free meal, so I diced some honey ham (leftover from Easter, frozen) and threw it in.

I'm not sure if it'll turn out or not. It's a new recipe, and I know it's a good one, but I used quite a variety of cheeses in it :laughing:

We'll know in about 25 minutes when it's ready.

How was it?

Great musical. The music was written by the woman that wrote The Secret Garden. Australia is the off-off-off Broadway testing ground for this musical and it seems to be a success here. I guess it'll hit Broadway and the West End at some stage.

Long - including intermission, we were in there for 2 hours and 55 minutes.

I've had a long day in the salt mines and came home to DH's special dinner for Tuesday night.....baked spud with the trimmings. It sure was nice to have dinner waiting for me.
 
I is going to be Hot Hot Hot today. The heat index is going to be 100 or above:cool2: Remind me again how cold and snowy it was here :rolleyes1 I am not compaining. The more hot days we have the more work our guys have work to do.

Not sure yet what dinner is. Possibly a stir fry of some sort. I have veggie to use up. I might try to grill tonight in that case I will make grilled veggie over orzo. I need to hit Costco on the way home. I need to stock up on quick items for Mr A last final is tomorrow than He can sleep to noon.:woohoo:

Today is the big Chem test which I am sure he will do well but as I said before he puts so much pressure on himself. Tomorrow is spanish which he will do really well in.
