Baby is fine!! They said the heartbeat is 160 bpm and it exactly where it should be. All looks great. Either a small blood vessel ruptured or something else - but the main thing is - BABY IS FINE!!! They did an ultrasound and we even have pictures - so to speak. Doug said "it just looks like a bloob". :lmao: And yes it does, but it is our bloob and all is well. :cool1:

First week of meal planning!



Haven't planned any sides yet. Suggestions?
Are we going to have fun! Can you let us know what kinds of food your family likes and if you are looking for cool or warm sides to go with your meals.

I like curried sweet potatoes with pork as well as Greek potatoes. In this weather I would use Becky's Cole slaw that has some grated onion and a bit of horseradish to give it a zip. There is also a wicked good crash hot potato recipe that has been used and I am going to try soon. Let us know and we can dig in!

My wife cooked last night, and she is usually pretty good.... but sadly it was a very disappointing meal.

Thank God! I have to tell you I am a bit emotional so your good news is making me teary! I am so happy but will not let Elizabeth out of my prayers. I confess I called out my Big Guns last night.

I am on my way to Deb's party but I do want to tell you all that I thought that I could not be any more proud of my Deb but each time I think that I get to burst a little more. She was selected to receive the Directors Award yesterday, she really stood out in her own way.:cloud9::goodvibes

It is supposed to warm up this weekend but today is crummy. Cool and dark and threatening to rain. I am not feeling like doing anything but going to a movie and then relaxing. Wait that sounds like my normal weekend.:rolleyes1

I have been dreaming about tackling the stairwell in our home - decor wise. There is a huge ledge, window, and tall ceilings and we've done little to it up until now. I got a bee in my bonnet to do something so we went to HomeGoods today and, while standing in the art aisle, I sprung my idea on DH and he went for it! :woohoo: We are going to hang large canvas paintings, art gallery style, floor to ceiling. Er, as much as we can afford. Do a mix of cheap mass produced paintings and a mix of real paintings from my Uncle.

Anyways, that led to picking out paint at Home Depot (gray) and paintings at the store. And now we have a holiday weekend project :laughing:

Tonight we have plans with friends (dinner and late concert). Tomorrow, hopefully we'll tackle the painting.

Your 4 yr old would probably really like the crashed potatoes. They are just small potatoes boiled still in their jackets then smashed. In fact your child might like to help smash them. Smash the potatoes on a cookie sheet then sprinkle with olive oil and a little salt and pepper or seasoned salt.

Your could also make grilled veggies. If you don't have a veggie pan for the grill just slice your veggies in bigger pieces so not to fall through the grates. Again toss with oil before grilling. That is our favorite way to eat veggies.

And yes Crash Hot Potatoes are good. I like to sometimes put a little sour cream on mine. You could get enough potatoes, small red or white are good, to do those and then roasted later in the week.

A basic salad for your 4yo is good and you can add more to the adult ones, things like Kalamata olives, blue or feta cheese, red onion, roasted peppers or other roasted roasted veggies like squash or even asparagus.

I saw on this page that Elizabeth was having problems but y'all prayers were answered, thank God!!

Had a great time but it was HOT!!!!! Don't think we'll ever go back during the summer. Kyle really enjoyed being back at WDW with us and Mom sure enjoyed seeing the world through his eyes again. Had some great meals and some not so great meals from some of our fave places. Our favorite new place is Kouzzina....AMAZING!!!!!!!!!!!:worship:

I probably won't have time to read back so I hope I didn't miss anything major, if I did will someone please fill me in?:flower3:

Figaromeetsmarie - I will vote for the crashed potatoes. They are easy and my 12 yr old loved them. He also loves mac & cheese. You could do some small pasta sides (they like the shapes). Sides were the hardest for us too. I just got mine to eat salad (aka lettuce with ranch).

Tomatoes = 18 Romas for sauce and salsa, 9 Celebrity for sandwiches and slicing, 12-16 Patio (cherry) and 2 hanging Sweet 100 (cherry)... Peppers = 8 Bell Boy (green), 4 Red Knight, 4 Golden, and 4 Jalepeno. A few onions... and as many potatoes as we can get in as soon as it dries up a bit...

I am so exhausted from all of this manual labor, but I have to do my inside work soon!!!!

WFD = ??? Whatever my husband brings from the store... I don't even care..

Fried Rice


I think I mentioned that I had some cooked white rice leftover from a rice and curry dinner some nights ago. One of the nice things about having a rice and curry meal is that I always cook extra rice so that I can make some Fried Rice for dinner later on in the week; and it covers two meals for the week.

My starting ingredients:

  • Cooked white rice
  • Carrots, 2 – diced
  • Green beans, a nice handful – diced
  • Chinese cabbage, about 4 or 5 leaves, finely sliced and the stem separated from the leafy part
  • Eggs, 2 or 3. I have one salted duck egg and one chicken egg in the picture. I salt my own duck eggs and it is an acquired taste.
  • garlic, 1 clove – finely minced
  • ginger, finely sliced
  • Dark soya sauce, 1 tablespoon
  • Light soya sauce, 1 tablespoon
  • Kecap manis (sweet soya sauce), 1 tablespoon
  • Oil

My DH is vegetarian, so we tend to leave the meats out but you can add leftover roast or chicken or shrimp to the list of ingredients.

In a hot wok, cook the eggs like a thin omelette.

Remove from the wok for later.


Add more oil and when hot, quickly fry the garlic and ginger.

Add the carrots and beans and stir fry quickly for about 1 – 2 minutes. Keep stirring the vegetables so that they do not burn but rather cook evenly all round.

Add the cabbage stems and cook for another 1 – 2 minutes.

Place the rice and the fried egg into the wok.

Pour the sauce over the ingredients….

….and quickly stir fry everything together.

Add the leafy part of the cabbage to the rice.

Mix together and stir fry for another 2 minutes.

Ricotta and Spinach Cannelloni

Last night for dinner, we had Ricotta and Spinach Cannelloni, or I’ve been advised that you might know it as Manicotti. I didn’t make the cannelloni from scratch because I have a couple of fresh pasta places close to me and I usually get fresh canneloni from one of the places.

I normally buy my cannelloni from one shop, which is run by a mid-aged Italian lady. She comes from northern Italy. Her cannelloni is so good that I've given up making the filling and rolling it myself. It's all about the filling - and the north Italian lady has a decent amount of spinach to the ricotta and nice seasoning. She tells me to cook it in the oven with tomato sauce for about 30 - 40 minutes. We really like her cannelloni.

The cannelloni I bought today was from a shop that is run by two Italian nona's. Literally. They must be in their '70s. I've never asked them but from their complexion, I suspect that they are southern Italian. It's the first time I'm trying their cannelloni. I normally buy their gnocchi and pasta. But because it was convenient and DS really wanted cannelloni for dinner, I stopped by this shop because it was on the way home instead of going to the other one.
The ladies there told me to boil the cannelloni for 20 minutes before putting it in the over with tomato sauce for 20 minutes. I asked if I could just put it in the oven without boiling it but she was most insistent that I needed to boil it first.

I’m going to ignore them.
The cannelloni from this shop is a little different. It doesn’t look like it has the balance of spinach to ricotta that I like; plus the nona’s have coated the pasta with what looks like polenta.

My starting ingredients:
(no pictures – sorry!)

  • Cannelloni, spinach and ricotta, 6
  • Tomato pasta sauce – about 500 ml, watered down a little
  • Cheese, 1 cup
  • Butter, 75 g
  • Plain flour, 2 tablespoon
  • Milk, 1 cup


I had some pasta sauce in the freezer that I keep for “just in cases”, so I used it for the meal.


I started with a layer of tomato sauce at the bottom and then placed the cannelloni on top.

Then I completely smothered the cannelloni with more sauce.

I made some bechamel sauce by melting the butter and cooking the flour first; followed by then slowly adding the milk and mixing it until smooth. I allowed the mixture to thicken before turning off the heat. Add the cheese and stir until mixed. Season to taste.

I then poured the whole lot over the dish.

And because DS likes a little pasta with his cheese, I put a little bit more cheese on top.

Cabbage and Bacon on the Side


I decided to serve the cannelloni with cabbage and bacon as a side instead of salad last night. I had some cabbage left in the fridge and thought it was time to finish it off.

DH is vegetarian; so I cooked the cabbage separately with some garlic and ginger.

DS and I are completely omnivorous; so I fried the bacon in a separate pan.

I put enough of the cabbage with the bacon for two serves…

My dinner! Worked just great being baked for a longer time rather than boiled and then baked.

Julie I liked this Pirates better than the last. At World's end was good but this movie brought back the magic of Jack Sparrow. This one is a little more grown up. I am pretty conservative with what my son can see. I have loosen the boundaries since he is 16.

Princess You have again been successful in making me hungry. My cookie and coffee are not cutting it this morning.

WFD is marinated flank steak a citrus salad and grilled veggies. I am praying for a "dry" day.

I woke to find that I have moved to the rain forest it is very foggy and humid. It is not going to be a good hair day for me. :scared1: Long curly hair and humidity :eek:

WFD - My guys want spaghetti & meatballs so that is what I will make along with slow braised broccoli.

We stayed in a 1 bedroom villa and I must say I am now spoiled. Not sure if I can go back to a studio.;) We had an added attraction we weren't expecting. There was a bird nest right on our balcony with three baby blackbirds in it. We got to watch the mom and dad feed them all week and I couldn't believe how big they got in one week!
