The What's For Dinner Thread - March '11 (recipe index in OP)

Tonight John and I are heading over to Liam and Caili's school for a children's concert (Liam) and art show (Caili) followed by the school awards ceremony. We know Liam is getting at least one award, not sure what it is for though. Given that we have to head over there straight from work and won't get home until after 8 PM, dinner is going to be something very fast and probably not picture-worthy. :laughing: Maybe a grilled pizza.

No idea what's for dinner tonight. Leslie is down with the same tummy bug that hit Timothy last week. She's been throwing up all morning, which means no school, and no field trip for her. She's pretty bummed about it, but rules are rules. I'm hoping she'll feel good later, so I can leave her and run to the store to pick up some groceries. If I can't make it, then we'll have ham fried rice for dinner, that, or scrambled eggs.

Work on the documentary is frustratingly slow! Alan has been slammed at work, so he hasn't been able to do any "clean up" work on the video, so we're a bit behind schedule. Oh well. He has tomorrow off (our 21st anniversary), so we will hit the grindstone really hard all day, and then go out for a nice dinner in the evening, and then hit it hard again all day Friday. On Friday evening, we will leave to go to Dad's house to show him, and his associates the work that's done so far, and make any changes that they want. Hopefully, there won't be many. Wish us luck, and pray for a slow day for Alan today so he can get some clean up done!

The cooking class last night was really fun and hand's on - we made a tart, cookies, ganache, and dipped figs. A severe storm (same system that hit OKC) came through during the class and since the room opened to a patio, we got a ringside seat at the HUGE hail (tennis ball size) that was raining down on us. So loud and crazy! A tornado was just a few miles away from us but the sirens never went off for where we were so we continued cooking but were told the evacuation plan in case we needed to make a run for it. The whole time I was just thinking about my beautiful car in the parking lot... uncovered...

Sure enough, got home and into the garage and took a look - huge dents all over it.

I know a car with damage isn't a big deal compared to the loss so many are suffering but it still ruined my fun night out with friends. :sad1:

Hola! I am very lost...I am not even going to apologize anymore. ;) Between baseball, the baby, baseball, school projects, gym, gardening, etc. my mind has been all over the place. I know you guys understand.

I have not really been cooking too much but I did make a bbq meatball dish that Andrew and I loved (Tom is out of town this week). I think it was a tasty kitchen or PW recipe that I nanatized with the Neely's BBQ sauce...I dont understand why I cant leave things alone. I know you guys understand that too! :lmao:

Vickie, How are you holding up? I am sorry about your Aunt...hugs.

Glynis, I hope Leslie is feeling better and that Alan has an easy day so you can get your work done. Have a very Happy Anniversary and great trip! I have been making Cobb like salads and my family has enjoyed them. I really love a good salad and rarely make them as dinner too.

Here is the meatball recipe. I added an egg to the meat mixture and some breadcrumbs to stiffen the mix up before shaping it into balls. I also added some of the ingredients of the Neely BBQ sauce to the sauce and simmered it on the stove instead of the oven.

So far so good weather wise. We had some wicked weather this morning with heavy rain. We had over 3 inches come down in less than an hour.:scared1: along with hail lightening and thunder. We are supposed to get more later. This is not a good year so far for the weather.

Good moaning all...it's Turdsday over here. Just woke up and I have no idea what's for dinner yet.....need coffee first; intravenous drip would be a great idea right now.

Aimee- I'm sorry about your car. I remember one time you saying just because other people have bigger problems, you shouldn't discount how you feel. It doesn't change the way you feel for the people who are suffering so much. On a brighter note, your class sounds like fun! I signed up for a community ed class about Excel, it was painfully boring- I think you made a better choice.

Janice- We've just had a few weeks of yucky weather, it's finally sunny here and I'm finding myself wishing it would rain. I left for a few hours and only had one window in my bedroom open, EVERYTHING is covered in pollen.

Glynis- I probably won't get here tomorrow so Happpy Anniversary! Hope you get lots of work done so you can celebrate that too.

I am so sorry I haven't been around. Between work and activities, I've been leaving the house at 7:40 AM and getting back in most nights after nine. It's been crazy. I do have the day off Friday (from work anyway...Liam has baseball that night), so I'm getting my hair done and I'll catch up here.

Liam's award tonight was the Outstanding Effort award. I think he was disappointed he didn't get the math award, like he was expecting, but he was the one boy chosen from the whole sixth grade to receive this award, while a student from each class was chosen for the specific academic awards. Plus, all of the sixth grade teachers had an input into selecting him. I know I am proud of him. He really worked hard this year.

I haven't read through everything, but here is what I caught:

Nancy -- Have a great time this weekend. Congratulations to Debbie!

Lauren -- I shouldn't complain about the crazy busy. You definitely have a bigger challenge having a baby in the mix!

Aimee -- I'm sorry about your car. Does insurance cover something like that? The weather this year has been horrible.

I signed up for a community ed class about Excel, it was painfully boring

Ugh. I can only imagine. Was it short at least? Or do you have to go back?

Glynis -- Happy Anniversary to you and Alan! I know how frustrating it can be waiting for someone else to do work so you can continue yours. I hope Leslie feels better.

Okay, that is all the update I have now. Oh yeah...dinner. Dinner was at my mom's. We had barbecued ribs, mac and cheese, and tomato salad.

Morning. Another rainy day here. It's supposed to clear up this afternoon, though. Good thing! I think I'm sprouting gills!

No recipe yet, but plenty on the internet for tonight's "Cabbage and Potato Bahji with Peas".

Basically Indian flavored potatoes and cabbage, but adding peas.

I've been learning Indian food for about a year. I make REALLY GOOD Chicken Tikka Masala, for less than 1/3 what it costs in a restaurant here, and mines is just as good. Though we do have a place where $9.99 gets you a darn good lunch buffet with about 10 entrees to choose from, and 1 is always CTM.
 
Princess in Oz, you figured it out--we are sisters. :) We travel to Disney together every year and started posting on these boards when we were looking for advice for traveling to Disney with Laura's young kids. This was many years ago. I don't post too much on the planning boards anymore because I feel like I know everything I need to know now, and there are people with much more Disney knowledge than me who love to help Disney newbies!

BCB, I love Indian food! Would you share your tikka masala recipe?

You ladies would have been so impressed with my dinner last night! We got home from the school event close to 9 PM and we were starving so I made...hot dogs! :rotfl: I almost took a picture for y'all but I was too hungry. :laughing:

WFD: I am making a couple of recipes that were in my local Sunday paper--a Thai grilled chicken with sweet chile dipping sauce and a cucumber salad.

Yeah, just a $200 deductible to get it fixed. I went ahead and filed the claim yesterday but I'm tempted to wait until this storm season passes before getting it repaired. We've had hail several times this year, though this was the first time my car was uncovered. It's usually safely in the garage!

DH is golfing after work - it's finally light enough in the evening to get an entire round of golf in after work so he's thrilled! He'll be in late so I will probably pick up something for myself when I'm hungry and he's on his own.

This is my base for Chicken Tikka Massala. I do adjust as I go along. Also we make double the amount of sauce. People will use bread to wipe it up if there is too much sauce. ;)

Also, when cooking rice for the side, I take a TBS of EVOO, and cook 2 TBS of mustard seed in a pan until they start to pop. I take that and pour it in to the pot while / where the rice cooks. I also take one whole onion - no skin - and cut in half and put that in the pot while the rice cooks for added flavor. It is easy to pull it aside that way.

Some days we make it extra spicy, and some days not spicy at all. It all depends on who will be eating it.

I was going to chastize you for no recipe but there it was ;) Your technique reminds me of a cooking show years ago on public TV, the host always toasted his spices before using them. he also used ghee............a lot!

We are enjoying our visit here. We went to Woodstock and enjoyed boutique shopping. Breakfast was a wonderful little place that had the best food! Wild blueberry pancakes with home made corned beef hash for me.

tonight we will have a BBQ at the Academy

Becky, We liked the cajun shrimp...it was a bit on the sweet side so I think next time I will use a little less red pepper or use a green one. I also think I will cook the shimp in the pan instead of boiling it with the linguine.

Nancy, glad you're having a good time. My brother, Jim, that passed away lived and farmed in Woodstock for a while (a water buffalo farm). It is beautiful there.

BCB - Good on you for learning how to make Indian food! It's nice knowing how to mix the various spices and balance it all out. My curries tend to be more of a South East Asian flavour; which means that instead of tomatoes, which add the sour taste, we add coconut milk, which makes it more 'lemak'. I'm not sure if there is a literal translation for the word 'lemak'...but probably 'rich and creamy' comes close.


I don't post too much on the planning boards anymore because I feel like I know everything I need to know now, and there are people with much more Disney knowledge than me who love to help Disney newbies!

Becky - I'm happy residing with the Community Bored and the Gamers myself. There are way too many people on the Bored-Planning that take planning waaaay too seriously. ;)

It's Flyday night here and my weekend has officially started. We had Fish and Chips for dinner tonight, as usual. DH is still not well and has stayed in bed all day again today. DS has an ear infection and the doctor has prescribed antibiotics for him. I'm hoping to avoid the sick germs that seem to be spreading in my home...

Last night's Thai-style grilled chicken was very good. I made the chile dipping sauce that the recipe called for by I really didn't think it needed it.

Not sure WFD. I am going to the farmer's market after work (we are closing at 2 today, whoo-hoo!) so hopefully I will find some nice vegetables. Not sure there will be much to choose from this early in the season.

Hi everyone! I hope it is a great holiday weekend for all of you. We are not planning on doing much thankfully but we aren't even going to get to enjoy the pool. Kenny is having the pavers done now and they have torn that area up along with a large part of the grass that has just begun to grow. But oh well, it will be much easier to keep the pool and my floors clean after the pavers are done.
