The What's For Dinner Thread - March '11 (recipe index in OP)

Hi new to this thread. Vicb pot roast is my favorite with cooked carrots. I usually add potatoes to it and then mash them on my plate with butter and pot roast au jou.

Hey, The Oscars were so much fun.
The bairns ( and teachers) put in so much hard work and it showed.
The Boy had a blast,his film won the best action scene award.
It was done so well,there was 11 short films and 11 awards....and yip,each film won 1.
The boy had written his groups exceptance speech and it was nothin less than you would expect....he had the place in fits,he is such a performer.
I have put some pic's on FB.

Its been a long day with one thing and another so I have not read back.

Ok it is offical I am soo tired of winter I could scream.

I really lucked out too because they are testing this week, so we won't have homework!

Liam and Caili have been testing this week as well. I think they like the no homework bit, but Liam is kind of like the Tasmanian Devil. He has been sitting and quiet for way too long, and he needs to burn some energy. Caili, meanwhile, says she likes how nice and quiet and peaceful school has been this week.

Lemon Rosemary Tea Bread

Sounds delicious! I should have made that this morning. I was in the mood for a baked good so I made lemon scones.

I've missed posting the past couple of days somehow. Things have been busy. Liam had baseball tryouts on Saturday, and he had his first team meeting last night and then a practice tonight. The coach is trying Liam out at shortstop. I think Liam is a little nervous about that, but from what I saw today, Liam was doing a good job.

Last night we had PWs sesame noodles with a vegetable stir fry. Tonight we had quesadillas, much to Liam's delight. Liam's was black beans and cheese, mine was roasted poblano pepper, black beans and cheese, and Caili had eggs. She hates quesadillas.

Glad you joined us.... I'm pretty new here too. It is really nice to have a friendly group to check in with each day. A group that isn't demanding like most things in our day if you get my drift ;)

Your dog is a cutie, love waggy tails.

My dog sat on the patio yesterday while 2 ducks sat in my yard not 10 feet away. She kept waiting for me to let her in because she knew I would feed them bread and she wanted to beg for bread more than chase ducks... sad and weird that's my dog. :upsidedow

Laura - I didn't really get to spend too much time with Kyle. He's been busy taking care of classwork and is in Hammond, LA for a game tonight. He leaves for San Diego in the morning! He fell in love with San Francisco and wants to live there.:rolleyes1

Congrats to Liam on making the team and I'm sure the coach knows he can rock that shortstop position!

Vic Mydogs have been trying to catch an easter bunny. We have rabbits that come in the yard every year to make a nest. So far my dogs have come up zero :cool1:.

MrsHerbie53 Mybabies are an Aussie shepherd mix (Hershey) and Aussie terrier (Minnie) if Hershey's tail stoppes moving then I know he is sick it still wiggles alittle when he sleeps.

Tonight I think we are going to the library so it will be something quick.

I found a new organic veggie delivery, my old delivery subcomed to the rotten ecomony. I hope this one survives.

I changed up my dinner last night I had the beet greens over pasta. That was very tasty.
 
Good Morning! Gonna try and catch up...again! We had nice visits the past couple weekends with my sisters and Tom's sister. I am ready for a quiet weekend though! We did Primantis, taking in the view of the city (which is gorgeous) from the incline, shopping (went to Penzy's!) and the Aviary while they were visiting.

We sold my Mom's house and the closing is tomorrow. I am a bit sad but glad a new family will enjoy it. My Mom built the house 50 years ago.

Gretchen, hope you are having a good time! You deserve it since you are getting over your busy season and all that is going on...glad Paige is doing OK.

Glad Sheryl had a great Nana shower, the NOLA girls met Lauri D and Ann and Maria had a good time.

Kat- I am not sure, we are due for a winter storm here tomorrow. Anna was going to be here for her candle/tasting party but I had to cancel. I am going to have the entire family here for dinner one evening and hopr to Join Lucy for lunch next week. Lucy is here to shop for wedding dresses with Anna and for them to share their wedding plans so I know that she is gooing to be busy over teh weekend. She is here for three weeks so theere is time.

DInner is going to be out of the refridgerator thsi evening. Buddy has appointments this afternoon and a meeting this evening so i am not going to try to work around that.

No idea what's for dinner tonight. The kids are begging for pancakes, so we may do that. It's easy and something I know they'll all eat.
 
Becky- I looked quick and I thought that was roasted garlic, then I rememberd you said it was grapes. My mouth was watering at the thought of that much garlic.

Kathy- I'm glad to here everyone is safe and Kyle stopped driving when the weather got really bad. It's a hard choice to make when you just really want to get home. We haven't had sloppy joe's in so long, I'll need to make them soon.

Lauren- I was a bit sad when my parents sold their house, they were in it for almost 40 year- but it is nice to have a family in it. It has acres and acres of land, and I love the fact that now kids are playing there again. The last few years my parents lived there, they were only there a month or so all year. I'm glad it's not sitting empty.

Nancy- Glad thing's are off to such a great start with Anna's mom! How long until the wedding?

Laura- I can imagine how hard testing is for a boy! It sounds awful. My daughter finished and still had a hour until time was up. I think she would have preferred homework to sitting with nothing to do for an hour.

MissHerbie- Welcome! There is nothing like a dog tail and butt wiggling to put a smile on your face.

Dinner tonight is going to be chicken parm. It's cool and damp so I think that will hit the spot.
 
i came across this recipe and want to try it so I thought I would save it here and at the same time share it too ;)

Beet gnocchi

1/4 cup goat cheese
1/4 cup fat-free or low-fat ricotta
1/2 cup roasted beat puree (approximately 1-2 large beets, roasted, peeled, and pureed in food processor or blender)
1/2 cup whole wheat pastry flour
1/2 cup all-purpose unbleached flour (plus additional for flouring surface)
1/2 teaspoon nutmeg
1 whole egg, slightly beaten
1 teaspoon salt
1/2 teaspoon black pepper


Steps:

In a large bowl, combine the goat cheese and ricotta until smooth. Add the beat puree and mix until evenly combined.
Add the egg, followed by the nutmeg, salt, and pepper.
Combine the two flours and sift together in a small bowl until well combined. Slowly add the flour into the beet mixture, 1/4 cup at a time until it is all incorporated into the dough. If your dough seems a bit too wet, feel free to add an extra 1/4 – 1/2 cup of all-purpose flour.
Turn the dough out onto a heavily floured work surface and knead for a few minutes. The dough will still be fairly wet, but you should be able to handle it by keeping your hands and the surface floured.
Working with about a handful of dough at a time, roll out a long snake about an inch thick. Use a floured knife to cut out the gnocchi every 1 inch. Roll each gnocchi along the tines of a fork (or simply indent by gently pressing the back of the fork into the side of each nugget).
Place the formed gnocchi on a floured baking sheet. These can be frozen for later use or cooked right away.
When ready to cook, bring a large pot of salted water to a rolling boil and add the gnocchi in batches. Let cook until they bob to the surface and then cook for an additional 2 minutes. Use a slotted spoon to pull out of the pot and serve with a drizzle of olive oil or your favorite light sauce.

TIP: For extra crisp, finish in a skillet with a bit of olive oil and torn sage. Let toast on one side (the contrast makes for an interesting texture) then serve with a sprinkle of nutmeg and additional torn fresh sage.

Dinner is :confused3 I'll probably go to the store tomorrow but tonight there isn't much in the house. I'll likely just pick up something and DH can do the same when he's on his way home.

I had jury duty this morning. After two hours, the officer came in and said we could leave because the case had been settled, so it wasn't too bad.
